Veggie Pie (2 pies) Hands On Time: 30 Minutes Bake Time: 40 Minutes 2 ½ cups whole wheat flour 4 tsp. baking powder 1 tsp. salt 1 cup butter, softened 1 cup plain yogurt 4 cups broccoli, finely chopped 1 cup onion, diced 2 cups shredded cheese (cheddar, swiss, etc) 4 medium tomatoes, sliced 2/3 cup mayonnaise 2 tsp. dried basil or several Tbs. fresh basil In a large bowl, combine whole wheat flour, baking powder and salt for the crust. Cut the butter in and then stir in the yogurt. Pat into a buttered pie plates. Layer the broccoli, onion, and tomatoes in the crusts. Sprinkle with the basil. Spread the mayo over the top of the veggies. Add the cheese to the top of the pies. Bake at 450 degrees for 10 minutes. Reduce the heat to 350 degrees and bake for 30 minutes. Serving Suggestion: Whole Wheat Rolls, Side Salad

Italian Sausage and Spinach Stuffed Shells Hands On Time: 30 Minutes Bake Time: 45 Minutes-1 Hour 1 lb. Italian sausage 1 onion, chopped 1 clove garlic, minced or crushed 1 bag fresh spinach 2 lbs. ricotta cheese 1 cup Italian style blend cheese, shredded 1 box jumbo whole wheat pasta shells, cooked according to package directions 2 cans of spaghetti sauce Brown the sausage with the onion and garlic. Drain and rinse under hot water. Cook the spinach in 1 cup of water until soft and wilted. Drain and squeeze out the water, then coarsely chop the spinach. Mix the sausage, spinach, ricotta and Italian cheese together. Fill each cooked shell with the mixture. Spread a bit of sauce on the bottom of two 9 13 pans. Put the stuffed shells in the pans as you fill them. Cover with the rest of the sauce. To bake, cover the pan with foil and bake at 350 degrees for 45 minute to 1 hour. To freeze, cover tightly with foil and label with directions, Thaw in fridge. Bake at 350 degrees for 1 hour Serving Suggestion: Side Salad* *Note: Use extra peppers in the side salad from the Migas meal!

Rustic Irish Potato and Cabbage Soup Stove Top Time: 45 Minutes Slow Cooker Time: 5-8 Hours Instant Pot Time: 15 Minutes 1 medium onion, chopped 2 garlic cloves, crushed 6 medium potatoes, scrubbed and chopped 4 carrots, chopped ½ head of cabbage, chopped 1 smoked sausage, sliced 2 32oz boxes chicken broth 2 bay leaves 1 tsp. thyme Salt and pepper to taste ⅛ tsp. sugar 1 Tbs. cider vinegar, optional Cook the onion and garlic in a bit of oil until the onion is soft. Add remaining ingredients, except cider vinegar, to the pot. Bring to a boil and cook until potatoes are tender, about 30 minutes. Stir in cider vinegar, if desired. To make soup in slow cooker, place all ingredients in crock and cook on high 5-6 hours or low 7-8 hours. No need to cook onion and garlic before adding to slow cooker. Instant Pot Instructions: Hit the sauté button and cook onion and garlic in a little bit of oil until soft. Add remaining ingredients, except cider vinegar, to the pot and set cook time for 15 minutes. Do a quick pressure release. Stir in cider vinegar. Serving Suggestion: Whole Wheat Biscuits Whole Wheat Biscuits Yield: Approx. 1 dozen Hands On Time: 30 Minutes Bake Time: 10 Minutes 2 cups whole wheat flour 1/2 tsp. salt 1 heaping Tbs. baking powder about 5 Tbs. butter, softened nearly 1 cup of milk Heat the oven to 450 degrees. I use a baking stone to bake the biscuits and I put the stone in the oven to warm while I mix the dough. If you use a cookie sheet, you won t need to do that. In a large bowl, stir together the flour, salt and baking powder. Cut in the butter with a pastry blender or fork. Stir in the milk. Turn the dough out onto a floured surface. Fold it over several times and then pat it out with your hands, about 1/2 inch thick. Use a biscuit cutter or small glass dipped in flour to cut the biscuits. Place on a cookie sheet or baking stone and bake for 10 minutes.

Migas Time: 15 minutes. 1 Tbs. olive oil 1 Tbs. butter ½ onion, chopped ½ red pepper, chopped* ½ green pepper, chopped* 1 jalapeño, diced with seeds removed 1 tomato, chopped 6 eggs, beaten 3 corn tortillas, cut in bite size pieces ¾ cup pepper jack cheese, shredded handful of cilantro, chopped Heat butter and olive oil in a large skillet over medium heat. Add onion, green and red peppers. Cook until soft. Add jalapeño and tomato. Stir in eggs and corn tortillas. Stir slowly as scrambled eggs form curds. Once the eggs are just set, remove from heat and fold in cheese. Top with cilantro. *Note: Use extra peppers in the side salad for the Italian Sausage and Spinach Stuffed Shells meal! Serving Suggestion: Avocado Slices, Fruit

Pork Chops and Apples Sheet Pan Dinner Hands On Time: 20 Minutes Bake Time: 25-30 Minutes 1-2 Tbs. olive oil 1.5-2 lbs. boneless pork chops, thin cut salt and pepper to taste 4-6 apples, peeled and sliced 1 Tbs. honey ½ tsp. cinnamon dash nutmeg Brush sheet pan with olive oil. Place pork chops on pan and sprinkle with salt and pepper. Stir apples together with honey, cinnamon and nutmeg. Pour apples onto sheet pan with pork chops. Bake at 425 degrees for 25-30 minutes, until pork chops are cooked through and apples are tender. Serving Suggestion: Green Beans

Crockpot Honey Mustard Chicken Hands On Time: 10 Minutes Slow Cooker Time: 6-8 Hours whole chicken, cut up (or the equivalent in chicken pieces) ½ cup honey ¼ cup dijon mustard salt and pepper to taste Mix the honey, mustard, salt and pepper together in a small bowl. Put the chicken in the crockpot and pour the mixture over the top. Cook on high for 6-8 hours. Serving Suggestion: Mashed Sweet Potatoes, Peas Mashed Sweet Potatoes Hands On Time: 15 Minutes Slow Cooker Time: 5-8 Hours Oven Time: 1 ½ Hours 1/2-1 sweet potato per person 2-3 Tbs. brown sugar 1/4-1/2 stick butter salt and pepper to taste Scrub the sweet potatoes. Place in foil lined baking pan and stick potatoes with a fork several times each. Cover with more foil. Bake 350 for 1 1/2 hours or until very tender. Or line crockpot with foil and place potatoes. Cook on high 5-6 hours or low 7-8 hours. Remove from oven or crockpot. Slice potatoes in half and scoop out the middles. Place in a bowl with brown sugar and butter. Smash and stir with a spoon until well combined.

Skillet Apple Crisp Total Time Needed: 45 Minutes 1 Tbs. butter 6-7 small apples, peeled, cored and sliced ½ cup brown sugar ½ cup quick oats ¼ cup flour 1 tsp. cinnamon 3 Tbs. butter, softened ½ cup water Melt 1 Tbs. butter in a large oven-proof skillet. Add apples and cook several minutes over medium heat, stirring often. Cook until apples soften. While the apples cook, stir remaining ingredients (except water) together with a fork to make crumbs. Add water to apples. Stir half of crumbs into apples. Top with remaining crumbs. Broil in oven to brown top of crisp. Serving Suggestion: Vanilla Ice Cream
