MICHAEL HARDEN Gourmet traveller If ever a dish made a chef, it was Paul Wilson s truffled soft polenta with Reggiano, poached egg and fresh truffle. It s a greater than the sum of its parts thing: flavours, textures and aromas that simply make love to each other in a bowl. It s all about big flavours with surprising finesse. I d forgotten how good Wilson s food is. This restaurant is a stark reminder. He is clearly enjoying his cooking very much. And yes, I predict W&M will do for the truffled polenta egg what Wayne s World did in 1992 for Queen s Bohemian Rhapsody. A hit all over again. In truffle season, anyway.
