Tin Roof BBQ Presents The Tin Roof BBQ 2nd Annual Charity Cook-off Saturday, June 11, 2016 and Sunday, June 12, 2016 at Tin Roof BBQ, 18918 Town Center Blvd, Atascocita, TX 77346 This is a three turn-in competition. Categories are Chicken, Pork Ribs and Brisket Prizes will be awarded for Top 5 places in each category: $300 for 1st, $200 for 2nd, $150 for 3rd, $100 for 4th, and $50 for 5th Overall Grand Prize of $500, and a Reserve Grand Prize of $300 New this year is an optional Open Appetizer Category turn-in at 8:00 pm on Saturday night, for an additional $25 Entry Fee. Prize is 50/50 pot split (50% to winner, 50% to the charity) Raffle tickets will also be available for a BBQ Pit from BBQ Pits by JJ Turn-in times on Sunday: 11:00 am Chicken, 1:00 pm Ribs, and 3:00 pm Brisket This will be a IBCA Sanctioned event, and IBCA rules will apply. Registration is $175. Teams will also have the opportunity to buy in to a Cookers Pool at the event. Setup time will be available beginning at 11:00 pm on Friday, June 10. All proceeds from the registrations will benefit the charitable organization for Veterans and their families, Banded Brigade Outdoors. TinRoof BBQ 2 nd Annual Charity Cook-Off Rules And Regulations TinRoof BBQ welcomes you to the 2 nd Annual Charity Cook-Off. Entry to this cookoff requires submission of an entry form and minimum fee of $175. This entitles the cooking team to approx. 3 car spaces equal to 30x20. Additional Large spaces Approx. 50x20 will be available for teams with RV space needs (limited availability). Checks need to be made to: Banded Brigade Outdoors & Mailed to TinRoof BBQ 18918 Town Center Blvd. Humble, TX 77346 Cash will be accepted for entry but we cannot guarantee your cash through the mail. Entries can be presented in person any time Tuesday Saturday at TinRoof BBQ prior to cut off date Spaces are a first come first serve basis and no space will be held without application and entry fee. ALL PITS MUST BE DIAPERED OR DRIP-PAN IN PLACE. NO SPILLAGE OF GREASE OR ASH ON PAVEMENT. Any infraction will be grounds for disqualified. TinRoof BBQ Charity Cook-Off will follow IBCA Rules. 1. Cook-Off Entry Deadline- is May 31 st Due to limited Cook Team space available registration may be closed at anytime due to full registration. 2. Team Composition Each Team must have a Head Cook. Each cooking team is required to have the head cook attend the cooks meeting which will on Sunday June 12 th 8:00Am. The Head Cook is responsible for the operation of the team space and all actions within or outside of the designated space by members or guest of their cooking team. 3. COOKING MEATS - All meats will be cooked on-site, without pre-cooking or marinating. Random inspections may be performed to assure that meat is not prepared prior to the official start of competition as defined by the Promoter. NO Meat will be allowed to leave the cook-off site after it has been inspected. 4. SANITATION - Cooks are to prepare and cook in as sanitary manner as possible. Cooking conditions are subject to inspection by judging committee. Infractions identified by the judging committee shall be immediately corrected or the cook will be subject to disqualification.
4. ENTRIES PER PIT - IBCA recognizes only one (1) entry (one (1) chief cook) will cook on a given pit. Multiple entries in the same category by the same cook, and multiple entries from the same piece of meat will not be allowed. Contestants must be 18 years of age to participate for cash prizes. 7. BBQ PITS Pit - Any commercial or homemade, trailered or un-trailered, pit or smoker normally used for competitive barbeque. Fires shall be of wood, wood pellets or charcoal. A BBQ Pit may include gas or electricity for starting the combustion of wood or wood products but NOT to complete the cooking. Back Yard Cooker - Any cooking device by design or nature that is inherently portable and by design is intended for recreational cooking. Open Fires Will Be Prohibited NO Open Fire pits/ Open fires will be permitted Accessories - TGCBCA permits the use of electric spits, augers or forced draft fans. 8. CATEGORIES TinRoof BBQ Charity Cook-Off 2016 Categories: Beef Brisket, Pork Spare Ribs and Brisket Jackpot Open Appetizer - Meats other than those listed above. This category may include, but not limited to goat, mutton, fish, Crustacean, wild game, or wild fowl. Open Appetizer must be cooked on site on BBQ pit, Grill, Stove, Oven Or Griddle Etc. Must be cooked onsite. This Category is not limited to meats. This category does not count toward Grand and is a (50/50) Split Jackpot 50% to Charity, 50% to 1 st place. Quantity s for turn-ins will be determined at head cooks meeting. 9. DOUBLE NUMBER SYSTEM - IBCA requires that the secret, double number system be used. This system assures a fair competition and is a fundamental tenet of the IBCA. The system requires that two tickets bearing the same number be utilized, one firmly attached to the top of judging tray in a manner which hides the number and the other ticket easily removed by the cook for retention. Each removable ticket must have Chief Cook s Name at the time you are provided the containers. Failure to have the Chief Cook s name on the ticket will result in your tickets being disqualified at time of awards and any awards you would have received will be forfeited. Winning numbers will not be revealed until time to announce each place in each category. At that time the secret numbers attached to the tray/cup will be removed and announced. 10. JUDGING TRAYS IBCA Judging Official will Provide Styrofoam tray with hinged lid. All judging containers shall be clean and free of any markings. Marked containers may be disqualified at the JO s discretion. Cooks are responsible for insuring that the containers they receive remain clean and undamaged.
11. JUDGING TRAY CONTENTS - IBCA requires that the JO will advise all cooks of the exact quantities and cuts of meats that will be placed in the judging trays. This will normally be accomplished at the cook's meeting. The JO or designated representative will inspect all trays at the time of turn-in in order to assure compliance with the turn-in criteria. All garnishes and condiments are prohibited, as they do not reflect true quality of the cooked meats. Meats may be cooked with sauces and/or other liquids, but once the cooking is complete, sauces, seasonings and/or liquids may not be added once put into the tray. There must be NO PUDDLING OR POOLING in the bottom of the tray. Additionally, CONTAINERS THAT CANNOT BE CLOSED WILL NOT BE ACCEPTED AT TURN-IN. Amount of each meat to turn in are as follows: Brisket - Nine (9) slices suggested 1/4 to 3/8 thick Pork Spare Ribs - Nine (9) individual cut ribs (bone-in) placed Meat side up in tray Chicken - Two half (1/2) chickens fully jointed (to include the complete wing- including wing tip, breast, leg, thigh) Jackpot Appetizer Open minimum twenty bites/pieces will need to be provided for judging any change to this turn-in will be provided prior start of cook off on Saturday 12. TURN IN TIME A turn-in window of ten (10) minutes before and after the set turn-in times will be recognized. Judging trays received after that time will not be accepted for judging. Saturday June 11th Jackpot Open Saturday Night 8:00PM Sunday June 12th Chicken Sunday 11:00Pm Pork Spare Ribs Sunday 1:00Pm Brisket Sunday 3:00Pm 14. PRIZES - Grand Champion $500. Reserve Grand $300. In the event of a tie for Grand Champion, brisket will be the first tiebreaker, followed by ribs, then chicken, and then by any other category. 1 st Place $300(Brisket, Ribs, Chicken), 2 nd place $200(Brisket, Ribs, Chicken), 3 rd Place $150(Brisket, Ribs, Chicken), 4 th Place $100 (Brisket, Ribs, Chicken), 5 th Place $50 (Brisket, Ribs, Chicken). Jackpot Open Appetizer is A 50/50 Split monies will be determined after all entries have been accepted. 15. Cookers Pool 100% pay out between three top categories (Brisket, Ribs, Chicken) 33.33% split. Of the split monies then will be divided between 1 st Place 50%, 2 nd Place 30%, and 3rd Place 20%. (Example 30 team enter pool $1200 Collected, Split between Brisket, Ribs, and Chicken $400 per category, then 1 st Place $200, 2 nd Place $120, 3 rd Place $80) 16. Alcohol and Adult beverages- Due to TABC licenses NO Alcohol will be allowed into TinRoof BBQ (restaurant). No Alcohol to be given to minors this will be ground for immediate disqualification. We recognize cook-off atmospheres usually include these beverages we ask for
your help in keeping this a family event. Head Cooks are sole responsible for the actions of their team and guest. The cook-off is spread between three different parking lots and businesses; there is need to respect the property of these businesses (TinRoof BBQ, Community Resource Credit Union and Wal-Mart Atascocita).
