INTRODUCTION VENUE From the start we were inspired by the context of the site and wanted a space that is fresh, relaxed and contemporary; reflecting the characteristics of the Galeries and maximizing the view across to the QVB. We wanted to push the boundaries of what an Asian restaurant interior typifies and create a space and dining atmosphere that was transparent and unassuming, allowing a light filled interior during the day and glamourous vibe by night with an iconic landmark as the backdrop (the QVB). The look was initiated by a blue and white Calligraphy brush (now hanging at the entry) and a sample of terrazzo tile (now featured in majority of the floor). Taking cues from the brush and tile; the concept developed around a raw textural palette with cool concrete greys, warm oak timbers, raw brass and deep blues taking centre stage. It was about injecting texture, interest and warmth whilst maintaining a clean, contemporary feel. The use of the space itself played a large part in the concept, as we were determined that an intimacy was maintained for all group sizes, rather than feeling as though you are sitting in a food court. This has also allowed us a lot of scope to play with the divide and create zones within the large footprint of the restaurant using materials, furniture and lighting. CUISINE It was a stint as a kitchen hand at the famous Bill s in Surry Hills; 19 years ago that connected Shanghai born Chris Yan with two things that would change the path of this life; a connection with Head Chef Kylie Kwong, and the realization that restaurants are his natural habitat. Both of these seeds blossomed when Kylie opened Billy Kwong (Surry Hills) the following year, taking Chris with her and encouraging him to develop his skills as a chef. Chris career with Kylie would span 18 years, during which time she pushed him to expand his experience via exposure to new kitchens, techniques, cuisines and ideas. This was followed by a year at The Light Brigade Hotel in Woollahra in 2004. Chris then spent the next four years as Sous Chef at China Doll in Woolloomooloo, further honing his skills in Modern Asian fare. Brimming with ideas, he returned to Billy Kwong in 2009 before spearheading the kitchen at Lotus The Galeries Chris fervor for food is inspired by his grandmother s home cooking, adapting her authentic Chinese recipes and using inspiration from other cuisines to create his unique Australian-Chinese cuisine.
BOOKING PROCESS A booking form is to be completed within 5 business days in order to secure your reservation. Please note: -Credit card details are only required to secure the reservation and no deposit will be taken from this card unless a deposit is requested for your type of booking. -Deposits can also be paid via bank transfer, please contact us for further information. TERMS & CONDITIONS AV equipment Some of our dining facilities may be compatible with AV equipment. Lotus the Galeries does not provide any AV equipment. You may bring/hire your own equipment. Should you need assistance, please let us know. Time Restrictions All lunch reservations must depart the restaurant no later than 5:00pm. All dinner reservations must depart the restaurant no later than12:00am. Beverage Selection For groups of 12 or more pre-selection of your beverages is necessary to ensure stock availability for event Parking 259 Pitt Street (next door to the Hilton Sydney). Special occasions We look forward to celebrating your special occasion at Lotus the Galeries. We do allow table decorations but strongly advise against the use of glitter, confetti or other small decorations that could contaminate your food or interfere with service. Children Lotus the Galeries welcomes children. When making your reservation, please clarify any additional space that you may need for a pram or a request of a highchair. Children are more than welcome to order from our main menu as Lotus the Galeries does not have a kids menu. Cancellations Should a guest cancel within 24 hours of the reservation; a cancellation fee of $50 per person will be applied to the credit card on file. Confirmations We will contact you no later than 48 hours before your reservation to confirm final numbers. Once numbers have been confirmed, any amendments will be at the discretion of the events and venue managers. Cakes We are delighted that you have chosen to celebrate your event with us at Lotus. To make your day even more special, please talk to us about ordering one of our Lotus cakes. Please note we do not allow external cakes to be brought into our venues.
