Chef Jun Kakazu is the Head Chef and Chef Junji Taba is the Sushi Chef at the famus Unkai Restaurant at InterCntinental ANA Manza Beach Resrt. These tw Japanese guest chefs will share the authentic flavurs f Okinawan cuisine at live actin statins at the Harburside lunch and dinner buffets. Sme f their signature Okinawan dishes include: - Rafute: This dish riginates frm Dng P Ru in Chinese cuisine and features prk ribs with unhusked skin, sft biled using Awarmri liqur, sy sauce and sugar, served with mustard. Originally a frm f Okinawan Ryal Cuisine, it is suppsed t aid in lngevity. - Special Okinawa Uchina Tempura: Uchina means lcal Okinawan Tempura using ppular lcal ingredients such as red ptat, which is rich in minerals, gya, which is full f vitamins, and Mzuku seaweed which stimulates a smth bld flw. - Okinawa Sba Ndles: This is ne f the mst famus lcal dishes, best enjyed with a cmbinatins f green nins and pickled ginger. Okinawa Sba rigins in China. It des nt cntain buckwheat like traditinal Japanese sba ndles. - Kubu Irichi Stir-fried Kmbu Seaweed: Kubu means Kmbu seaweed. Irichi means stir-fry in the Okinawan dialect. Seaweed is a ppular ingredient in Okinawa, which has the highest cnsumptin in Japan. Seaweed is knwn t be full f Alginic Acid which helps t reduce chlesterl. - Green Papaya Champuru (Stir-fried Papaya) : There are tw types f papayas vegetable and fruit. In East Asia, papayas are cmmnly served raw in salad, but in Okinawa they are cked with meat and vegetables in the traditinal Champuru style. Abut Okinawan Cuisine Okinawan cuisine incrprates influences frm Chinese cuisine and Sutheast Asian cuisine due t its lng histry f trade. Besides vegetables and fruits, the influences f suthern and sutheastern Asia are evident in Okinawan cuisine in its use f herbs and spices, such as turmeric, which is used in Okinawa mre ften than in mainland Japan. The Harburside Buffet will shwcase the tp quality fd prducts fr which Okinawa is renwned and which frm a key part f Okinawan cuisine, including: Agu Prk, which cntains less chlesterl than regular prk. This prk is frm a rare Okinawan traditinal breed with black hair (similar t a wild bar) which dates back t the 14 th century (Min era) when the riginal breed f pig was brught t Okinawa frm China. It is famus fr its tender sweet and delicius meat. Okinawan Agu Prk will be featured n the buffet in three styles at a Live Grill Statin, cked with Bitter Meln and marinated with Sy Sauce. Farmed Yellw Fin Tuna frm the Sea f Okinawa Okinawa Sba Sup Ndles, anther Okinawan specialty, will be prepared by ur chefs at a live actin statin. Okinawa Sba is a type f ndle sup prduced
in Okinawa, Smetimes simply called sba, it is different frm buckwheat ndles knwn as sba in the rest f Japan. The thick wheat ndles, which resemble udn, are served in a brth flavured with knbu (edible seaweed), katsubushi flakes and prk. Tppings include kamabk (fish cake),sliced scallin and a thick slice f stewed prk belly r ski (bneless prk ribs), garnished with pickled ginger. Okinawa Green Papaya can be cnsumed as a vegetable r as a fruit. The enzymes in this papaya are said t have bth slimming and breast enhancing prperties, and are als gd fr the skin! A great surce f ptassium, green papaya als cntains mre Vitamin A than a carrt. Citrus Depressa, which has anti-inflammatry prperties, is ne f the healthiest fruits n the Ryukyu Islands. Knwn as a flat lemn, hirami lemn, r thin-skinned flat lemn, it is a small, green citrus fruit rich in flavnids and native t Okinawa. Mzuku Seaweed wrks as an antixidant Acclaimed fr its thickness and texture, Mzuku Seaweed is harvested in the beautiful clear cean waters f Okinawa and is knwn as ne f the famus lngevity prducts frm Japan.
