Instructions: Step 1 Using candy colors, tint 2 pks. of melted white candy blue, pink, violet, and yellow (reserve some white). Tint 1 pk. of melted white candy green. Using painting method, mold 20 candy packages (10 solid, 10 polka dot). Refrigerate until firm; unmold. Step 2 To make umbrella, pour melted green candy into one half of Sports Ball Pan to make a thin candy shell. Refrigerate until firm; unmold. Use melted candy in cut decorating bag to pipe scallop design around bottom edge of umbrella. Attach gumball and mini jawbreakers to umbrella top with melted candy. Refrigerate until firm. Attach cookie stick umbrella handle with melted candy. Set aside. Step 3 Using firm-textured pound cake batter, bake and cool mini bear and 1-layer oval cake. Ice top of oval cake smooth in white and sides in yellow. Pipe tip 6 bead top and bottom borders. Prepare bear cake, cutting cake board into a 2 1/2 in. circle and cutting hole in center of board for umbrella handle. Trim left arm and ears off cake. With spatula, build up icing on head to resemble duck. Cover duck with tip 16 stars; add tip 16 pull-out star feathers for wings and crest on head. Pipe tip 3 string mouth and dot eyes (smooth with finger dipped in cornstarch). Outline beak with tip 4; build up and overpipe beak with tip 4. Step 4 Position duck on cake top. Pipe tip 8 feet (smooth with finger dipped in cornstarch). Attach candy packages to cake sides with icing. Position blocks. Pipe tip 3 piping gel raindrops. Print tip 3 message. Position umbrella in duck's hand before serving. 3
Step 5 To make candy shells: Fill pan or mold to top edge with melted candy. Tap on counter to remove air bubbles. Let chill in refrigerator for 10-15 minutes or until a 1/4 in. shell has formed. Pour out excess candy, smooth top edges with spatula and chill for 15-20 minutes longer. Carefully unmold shells (if you have difficulty removing shells, place in freezer for 2-3 minutes, then unmold). Excess candy can be reheated and used again. * Painting Details in Candy Molds: Adding color details to candies makes them more realistic and much more fun! For large areas of color, it's best to paint the melted candy right in the mold before the whole candy is molded using a decorator brush. Or, for very small details like vines, mouths and messages, melted candy should be piped onto molded candies using a parchment bag with a small hole cut in the tip. 4
Step 1 Melt desired Candy Melts colors in the microwave, using the Candy Melting Plate. With decorator brush, paint areas of candy molds with melted candy in one color. Step 2 Refrigerate mold a few minutes until candy is firm, repeating for each additional color. For best results, always fill in one section of the mold at a time and let set before adding additional colors. Step 3 To complete candy, using cut parchment bag or disposable decorating bag, fill mold to top with melted candy. Tap mold, refrigerate until firm and unmold. * Shells and Cordial Cups: 5
If you're looking for something easy and elegant for desserts or party trays, here's a delicious idea. Serve candy shells filled with fruit, mousse or liqueur! We've made the candies shown here in the Wilton Cordial Cups Mold, but Wilton has many other products that will work beautifully. The procedure is much like that for making filled candy without sealing the top. Step 1 Fill mold or pan 1/3 to 1/2 full with melted candy. Step 2 Using a decorator brush, paint the candy up the sides of each mold to the top edge. Coat mold so that no light can be seen through the shell. Step 3 Refrigerate until firm, about 5 minutes depending on the size of your mold or pan. Unmold. 6
Step 4 Fill shell with your favorite fillings. Piped swirls of buttercream icing or chocolate mousse add a pretty touch to any party-use a decorating bag fitted with tip 21. To make swirls, hold the tip at a 90 angle to the shell and pipe a spiral of filling, beginning at the outer edge and working inward. Pull tip away. Candies made in the Cordial Cups Mold are also perfect for serving your favorite liqueurs. 7
