Introduction The NUTTAB 2006 Australian Food Composition Tables is a food composition publication containing data for 29 key nutrients for approximately 1750 foods available in Australia. It is intended to replace NUTTAB 95 and its 1997 Supplement, Nutritional Values of Australian Foods (1992), and Food for Health (1991). This publication incorporates a wider range of foods and nutrients than in previous publications as well as updated nutrient values that more closely reflect the composition of foods currently available in Australia. Nutrients selected for presentation in the NUTTAB 2006 Food Composition Tables are those of strong public interest and relevance, where significant amounts of data exist for these nutrients. It includes those nutrients required to be reported in nutrition information panels on food labels. However, it may not include a value for every nutrient in every food, if no data are available. Due to limited nutrient data existing for alcohol, caffeine and iodine, separate tables for foods containing these components are placed at the back of the main food composition tables. It should also be noted that the energy equation used within the NUTTAB 2006 publication does not align with that specified in the Food Standards Code due to slight differences between the energy factors used. NUTTAB 2006 is also available as two other, separate, versions: 1. The NUTTAB 2006 Online Version, which contains data for approximately 2600 foods and up to 169 nutrients. This version is accessible from the FSANZ website and includes a search function for easy food finding. 2. The NUTTAB 2006 Electronic Release, which contains detailed ancillary information for approximately 2600 foods and up to 169 nutrients, with its primary purpose being for researchers, regulators and the food industry. These data will be available for upload directly into specialised databases and will be available upon request directly to FSANZ via email. The foods contained in this publication have been grouped into chapters and subchapters according to food type or food category. In some cases there may appear to be more than one suitable food group location for each food product. For this reason, an index has been placed in the appendix for easy finding. Each food record also has a Food ID code that corresponds only to that particular food. This Food ID code will not be a direct match with previous NUTTAB publications. A tabular cross reference file linking NUTTAB 95 Food ID codes with NUTTAB 2006 codes is available with the Online Version which is accessible from the FSANZ website. i

Background Information In preparing for the release of NUTTAB 2006, FSANZ recently completed compiling, reviewing and updating existing and new nutrient data within our reference databank of analytical values for foods and their nutrients. This process involved cross-checking food names, food descriptions and nutrient composition, to ensure the data being published are accurate and of high quality. As part of this process FSANZ has undertaken cross-checks against industry data for major foods to identify inconsistencies with nutrient levels in currently available foods. Data contained in NUTTAB 2006 are primarily analytical data generated through analytical programs from the 1980s onwards. It includes a considerable amount of updated data for processed foods from recent analyses. Samples analysed have generally been composite samples of a range of brands available at the time of analysis, and therefore nutrient values will not reflect a specific branded item, unless otherwise stated in the name of the food. Nutrient levels in foods can vary substantially over time and between brands and varieties due to factors such as season, origin, formulation changes and natural variation. In July 2005, FSANZ piloted the release of the NUTTAB Food Composition Tables and the NUTTAB Electronic Version and stakeholders were invited to provide comments on the format and contents of this pilot release. In preparation for this publication, the comments received from stakeholders have been considered, and where possible a number of changes have been made. Data Origin Nutrient data presented in these tables have been obtained from a range of sources. Although most of the data have been derived by direct analysis of foods by FSANZ and others from the 1980 s onwards, some have been borrowed from overseas tables, supplied by the food industry, taken from food labels, imputed from like foods or calculated using a recipe approach. A column representing the derivation of the majority of nutrients in each food has been included in the tables. For some foods, particularly major foods such as breads, a number of analytical programs may have been conducted over time. The results presented in this publication usually reflect the average results of these programs. However, where it is considered that the formulation of a product has changed, or processing or growing conditions have changed, or where an improved analytical method is now available, only newer data are reported. Detailed information on the derivation of individual nutrient values will be provided within the NUTTAB Online Version as well as the NUTTAB Electronic Release. While FSANZ has made considerable effort to ensure the quality of the data in NUTTAB 2006, it is not possible to guarantee that the data are free from error. ii

Derivation Codes Analysed (A) Where nutrient values for a food are predominantly determined by analysis. Borrowed (B) A small amount of data has been borrowed from food composition tables published by overseas countries. These records are indicated with the abbreviations US, UK or NZ respectively. In general, data are only borrowed from overseas tables where the food is imported into Australia or where it was considered there was a need for the data but suitable Australian data could not be identified. Calculated (C) A small amount of data has been calculated by FSANZ staff where it was considered there was a need for the data but suitable analytical data could not be identified. Industry (IND) For some foods, Australian food companies have supplied data to FSANZ for their products. These data may have been generated by analysis or by other means. Imputed (IMP) Imputation is the process of assuming that a nutrient value in one food can represent that in another, similar food. For example, in the case of an unsalted vegetable juice, nutrient values other than sodium and chloride may be imputed from those for salted vegetable juice. Label (LAB) A small number of records are indicated as being derived from label information. Values presented are, wherever possible, averaged over a number of brands and taken from the nutrition information panels for these products. National Nutrition Survey (NNS) Data generated by FSANZ for the 1995 National Nutrition Survey and presented in the publication AUSNUT 1999. Recipe Calculation (R) A recipe origin indicates that nutrient data have been generated from the individual ingredients and their proportions in the food, adjusted for moisture change and nutrient loss. Recipes used reflect those in common Australian recipe books. Examples of recipe foods include toasted bread, prepared cordials and some home-prepared traditional foods such as Anzac biscuits. iii
