All Casks are first fill, this means this is the first time the Cask will be used to make Rum so the best possible flavour profile will be passed to the Rum. Casks are handmade so each Cask is individual and actual size may vary slightly. During maturation alcohol evaporates from the Cask at an average rate of 2 2.5% per annum. This is known as the Angel s Share and losses in excess of these rates may occur and will be individual to each Cask. For 200L Cask options On maturation, there are a number of options available to the investor. (1) The Cask can be bottled on site at Cask strength or reduced to 40% abv. Each bottle will be individually numbered and named with the owner. You can either bottle all at the same time, or spread the bottling over a number of years. Minimum of five cases a year. Additional charges for bottling and shipping will apply. (2) If you decide, you can keep the Cask in storage the distillery to allow it to mature further before bottling. Additional annual charges for storage and insurance will apply. Ownership is not transferable without prior agreement from Blacks Distillery. For 50L Cask options: Maturation is quicker in the smaller Cask due to the greater wood to liquid contact area. Each Cask will be numbered and named and supplied with the Cask stand and tap to allow direct serve on a bar top. In this case the Rum would be at Cask strength. Alternatively the Cask can be emptied and the Rum bottled. The Cask will still be provided for decorative use etc as you will own it.
Cask Direct Rum With Cask direct you get to keep the Cask and use it to serve directly on the bar. Casks heads are numbered and can be branded with your own name, venue or other details. The other advantage of the Cask direct option is that your Rum maturation times are quicker. This is a function of the smaller Cask. The contact area between Rum and wood is larger so maturation is accelerated. Each Cask comes with a serving set of six limited edition Cask direct glasses. The Rum can be enjoyed neat at gunpowder strength or with a little water for those that prefer. *Delivery at cost, at time of removal from Bond.
Investment Scheme On all options 200 Litre Cask and 50 Litre Cask Blacks will option buy back of the Cask at the end of maturation. The buy back cost will be a higher amount that the initial investment representing between 7-9% interest on investment. Investor options will also get the other benefits of Rum Cask Society but must declare the intention to benefit from the buy back scheme at the time of purchase.
Gunpowder Proof The term proof dates back to 16th century England, when spirits were taxed at different rates depending on their alcohol content. Spirits were tested by soaking a pellet of gunpowder in them. If the gunpowder could still burn, the spirits were rated above proof and taxed at a higher rate. Gunpowder would not burn in Rum that contained less than 57.5% ABV. Therefore, Rum that contained this percentage of alcohol was defined to have 100 degrees proof.
From Cane to Glass Sugar cane is world s largest crop by production quantity. 80% of the world s sugar comes from cane. Production of sugar also yields molasses. Molasses is the thick dark magical liquid that we use to produce Blacks Irish Rum. We use the finest Organic Molasses from the West Indies and then add yeast to ferment the sugar into alcohol. Then we distil the wash in our cutting edge next generation still (whom we call Bridget). The raw Rum must be aged in wooden barrels to temper and mature the spirit. Typical maturation times for a standard barrel would be 3 years but we can speed the process somewhat with smaller barrels that have a greater wood to spirit contact ratio.
