The tradition of Gruyère AOP is deeply ingrained into the Swiss culture, and once you ve had a taste, it s easy to see why! In production since 1115, this raw milk mammoth of a cheese is an integral part of the Swiss identity. Many cheesemakers learned the trade from their parents, who learned it from their parents; in this way, the tradition is passed down through the generations. Much of the production is done in village dairies, where milk is delivered twice a day, but the production of Alpage Gruyère is truly special. In 1955 two shepherds, Alessandro and Remo, began making cheese in Acciaiolo, very close to where the current Formaggi Busti plant is now located. Today, Stefano Busti, heir to this family tradition manages the dairy with his son and daughter. Located in the heart of Tuscany, the Busti family is bound by tradition and respect for the art of cheese making and we re very excited here at Peterson to bring a well-rounded selection of Busti s fine cheeses to the US market. Pecorino Stagionato da Fosse Venturi # 27992 3 / 1 kg Case This is one of Busti s most prized cheeses, matured in tufaceous caves in Sogliano al Rubicone, in Romagna, by Fosse Venturi. The bricks of cheese are first aged and ripened in the family cellars very close to the dairy for three months, before they are packed in canvas sacks and buried in the caves at the beginning of August. The cheeses remain there until Santa Catarina s Day in November. The caves were originally used to store grains because of their naturally high humidity and consistent temperature. These conditions allow for a second fermentation, yielding the intense and unique flavor profile and high moisture content of this cheese. Whether eaten on its own or used as an ingredient, this cherished cheese is truly incredible. Il Cacino Rosso # 27993 4 / 0.5 kg Case This small format pecorino is only aged 15-30 days and maintains the brighter notes of the sheep s milk. The wheels are then rubbed with extra virgin olive oil and tomato paste, giving the rind a distinctive red color. The flavor is mild with a nice hint of acidity, and the stark contrast of the rind to the paste make it an eye-catching addition to the cheese plate. Pecorino Toscano DOP Riserva # 27994 2 / 2.2 kg Case A classic aged Pecorino Toscano made within the DOP requirements, these particular wheels spend a little more time maturing in the family caves to develop a more robust flavor profile. The Busti logo is then fire branded on these special wheels to mark their significance. The flavors are strong yet balanced making for an excellent expression of DOP Pecorino Toscano. Pecorino di Remo # 27995 2 / 2.2 kg Case This special cheese was created to pay homage to Remo Busti, the founder of Formaggi Busti, as well as to traditional methods of his ancestors. Made exclusively with raw milk, and naturally rinded, the complexity and nuances of the milk truly shine through as the integrity of the microbial flora is preserved. The paste is pearly white with deep, balanced flavors. Fauglia # 27996 1 / 8 kg Case A rather long ripening characterizes this unique pecorino, as well as the addition of specific cultures used in the making of Parmigiano Reggiano. Thanks to the addition of these cultures, Fauglia matures and develops its signature dense crumbly paste. The flavors are intense, yet the texture is very light on the palate. To finish it off, the rind is rubbed with olive oil grounds for a stunning appearance. Marzolino Chianti delle Colline Pisane # 27997 3 / 1 kg Case A young pecorino rubbed with extra virgin olive oil and tomato paste. It is aged anywhere from 10 to 30 days, and has a mild flavor with a slight acidity. It is hand-molded into its distinct trapezoidal (or river stone) shape for a unique looking piece of cheese.
