Aromatic Buttery Convenience Rustique is an extremely convenient and versatile mix, specifically it supports the production of traditional sourdough bread in a direct (short) process (about 3 hours). The addition of yeast is not necessary! Whole grain Fruity Vacuum packed The product is delivered in a small (1 kg) pack under protective atmosphere to guarantee freshness. Add the remaining water gradually at the end of the mixing time. Dough temperature 25 C. First proofing 90 minutes. Scaling weight 450 gram. Mould gently. Second proofing 30 minutes. Mould into desired shape and put them between a dough towel (French method). Final proofing 50 minutes. Put the dough pieces on racking units or baking trays. Cut before baking. Bake with steam. Baking temperature 250 C. Baking time 30 minutes. Direct process
