Our Story For over 35 years, M&J Chickens has been committed to providing its customers in the wholesale and retail markets with the highest quality range of chicken products available. Since its early years, M&J has been a family business in the real sense. When husband and wife team Mina and Jenny (that s where the M&J comes from!) emigrated from Greece in the 1970's, they were searching for ways to support themselves and their family. Since Mina believed that the business of feeding people was always good business, they opened a delicatessen. With hard work and determination, the deli was a success, and Mina soon seized the opportunity to diversify by offering chicken products like kebabs and schnitzels. Sales went better than expected. M&J Chickens was born. It wasn t too long before the business outgrew its single shop premises and moved to a larger site, prompting Mina and Jenny to focus solely on chicken. True to its humble beginnings as a single shop in Wiley Park, Sydney, M&J is still proudly familyowned, with Mina and Jenny s children Michael, Harry and Maria all working in the business having played a big part in what M&J is today. M&J Chickens has grown into Australia s largest privately-owned second-tier poultry processor, operating a nationwide business that employs over 300 staff around Australia.

Why Australian Chicken? Australia is renowned for maintaining the highest standards in poultry production the world over. Our Australian chickens are: NOT kept in cages NOT administered hormones Hormone supplementation is a practice that has been banned internationally for forty years, a stance supported by the Australian Chicken Meat Federation and M&J Chickens. For several years, M&J has been exporting Australian chicken to the world most notably in the Pacific, South-east Asia and the Middle East. From international five-star-rated hotels and restaurants to resorts and government sites in the UAE, Hong Kong and Singapore, M&J exports high-quality chicken products to discerning clients who demand the best. In recent years, the Asia-Pacific region has experienced a shift from traditional to Westernstyle convenience foods. This has been driven by the rapidly growing tourist population and emerging affluence that is pushing the demand for high-quality poultry products. Despite the local presence of multinational food processing companies, there remains a significant gap in food processing and packaging capabilities that M&J has been able to address. M&J is well positioned to provide Australian poultry products to this growing market and continuously seeks new opportunities to expand its presence on the world stage.

M&J s Cooked Range M&J s Cooked Range has been designed with the dynamic nature of the food industry in mind. M&J s clients have noted staffing and product consistency as key concerns in day to day trade. Headed by our Executive Chef Eddie Cofie, and the investment in state of the art equipment, the M&J team set out to help by developing safe, tasty, versatile, ready to serve products that are consistent and easy to prepare. Our cooked range includes: Char-grill Chef s Creations (wet dishes) Easy Serve (shredded chicken) Specialty Cooked From stadiums serving thousands of customers on game day, to fast paced city cafés, M&J s clients appreciate the time, money and labor savings available to them through our cooked range. M&J maintains the highest level of food safety standards and quality control with a dedicated in house QA team.

Chef Eddie Eddie Cofie, Group Chef and Development Manager of M&J Chickens, has a great passion for food. He has held various roles during his long and illustrious career in the catering industry. Eddie s skills and experience have been pivotal in the establishment and continued development of M&J s cooked product range. Plying his trade in a variety of settings has equipped Eddie with the necessary insight required to continue to develop products with the venue operator and chef in mind. Experience Executive Chef at Sydney s Olympic Park for over eight years, managing site restaurants and catering facilities for the Sydney 2000 Olympic Games. Spent two seasons on Australia Channel 10 s Recipe to Riches playing the role of Kitchen Commander. Eddie spent four years at Ansett Australia s in-flight Catering division starting up Ansett International, and over three years as Executive Chef for Australian Airlines. Prior to working in Australia, Eddie spent time in some of London s finest hotels, namely: The Grosvenor House Hotel, London s Savoy Hotel and the Le Meridian Hotelin Piccadilly. After arriving in Australia in 1989, he was employed as Sous Chef at The Regent Hotel, Sydney (now The Four Seasons Hotel) and spent two years as a chef on board P&O s luxury cruise liner, The Canberra.

PACK SIZE CODE Full Breast / Half Breast SHELF LIFE 180-220g / 15 PIECES CCGB120 / CCGB120C 42 DAYS CHILLED CHAR-GRILLED CHICKEN BREAST TORTILLAS INGREDIENTS 400g M&J Chickens Char-Grilled Chicken Breast Olive oil Sea salt Freshly ground black pepper 2 medium red onions 12 cherry tomatoes cut in half 1 red and 1 yellow capsicum 1/2 bunch of fresh coriander 8 corn tortilla wraps GUACAMOLE 1 fresh red chilli 2 ripe avocados 1-2 limes Salt & Pepper a few sprigs of coriander DIRECTIONS 1. Cut the char-grilled chicken strips, place in a bowl then leave to one side. 2. Peel and finely slice the onions, deseed and finely slice the capsicums and pick the coriander leaves, discarding the stalks. 3. Place a large frying pan on a high heat, add a splash of olive oil, cook the capsicum for around 5 minutes, or until slightly softened. 4. Meanwhile, make the guacamole: Deseed and finely chop the chilli, then finely chop a handful of the coriander leaves. Halve and destone the avocados, then squeeze the flesh into a bowl, discarding the skins and stones. Squeeze over the juice of 1 to 2 limes (depending how juicy they are), then chop and mash everything together. Season to taste, adding a squeeze more of lime juice if required. 5. Warm the wraps according to packet instructions, then arrange on platters the chicken, sliced onions, the guacamole and bowls of fresh chunky cherry tomato salsa so everyone can build their own.

PACK SIZE CODE SHELF LIFE 2kg BAG CORBSH 42 DAYS CHILLED VIETNAMESE SALAD INGREDIENTS 600g M&J Chickens Oven Roasted Shredded Chicken 1/2 large wombok (Chinese cabbage), finely shredded 2 carrots, peeled, cut into matchsticks 1 cup fresh mint leaves 1 cup fresh coriander leaves 1 quantity Vietnamese dressing 1/2 cup roasted salted peanuts, chopped ½ Red Capsicum, sliced ½ Green Capsicum sliced 150g Red Onion, sliced VIETNAMESE DRESSING 1/3 cup lime juice 1/3 cup fish sauce 4 small red chillies, deseeded, finely chopped 2 tablespoons brown sugar DIRECTIONS 1. Make dressing: Whisk lime juice, fish sauce, chilli and sugar together in a jug until sugar has dissolved. 2. Remove shredded chicken from pack and separate into a large bowl. 3. Add cabbage, carrot, mint, coriander, capsicum and onion into the bowl. Drizzle with dressing. Toss to combine. Sprinkle with peanuts.
