I am thrilled to bring you my sixth ALDI Meal Plan! Not only is this meal plan another freezer cooking edition, but there are gluten-free modifications included as well. We have included a few worksheets for you in this meal plan to help make it easier than ever! Here is what is included in this printable pack: 1. Printable Shopping Lists This shopping list has the specifics of what you will need to purchase at ALDI. It lists the section of the store you can find the items, and a box to check off each item. This should make your shopping trip as quick and easy as possible (even with kids along). The first shopping list is the regular one, and the second list includes the gluten-free modifications. 2. Pantry List ALDI does not sell everything, but they do sell most things. We took a look through our pantry and made a list of all of things most people have in their pantry that way they don t have to buy it again. ALDI sells inexpensive spices, so if you don t have all of the spices and other items listed, you can usually find them at ALDI for an additional cost. 3. Detailed Preparation Instructions Freezer cooking works best when you can devote one afternoon or evening to prepare almost a month s worth of meals. We ve gone through and figured out the best way to get it all done ahead of time so just follow our instructions and you will be all set! I would set aside 3 hours of prep time for this plan. 4. Blank Calendar In the past, we ve included a suggested arrangement of the meals based on which produce might go bad first but this time, you can do whatever you want! Freezer cooking leaves the scheduling completely up to you. 5. Recipe cards for all recipes All of the recipes cards are organized and numbered, that way you don t have to flip back and forth between recipes. PANTRY ITEMS There are ingredients in the recipes not included in the shopping list because they are probably in your kitchen s pantry but you might not have all of them. If you are missing any of these items, your cost at the store will be slightly higher. So before you head out to the grocery store, take a look at your pantry to make sure that you have the following: Spices: Salt Black Pepper Chili Powder Ground Ginger Dried Oregano Dried Parsley Cumin Allspice Ground cloves Garlic powder Onion Powder Cayenne Pepper Paprika Other ingredients: Olive oil (or vegetable oil) All-purpose Flour (or gluten-free cup-for-cup flour) Brown Sugar Chicken Bouillon (for GF, we use Herbox brand) Beef Bullion (for GF, we use Herbox brand) 1 lime or some lime juice Worcestershire Sauce Honey Cocoa Powder Sesame oil Rice Wine Vinegar Red Wine Vinegar Jalapeno pepper (optional) Make sure to also buy: Freezer bags (you will need 18) Disposable casserole dishes (you will need 2) Aluminum foil 6 IAMTHATLADY.COM

TASKS & INSTRUCTIONS The Day Before* Thaw Meat Thaw and rinse 4 bags chicken breast. 4, 5, 6, 7 *or a few hours beforehand GET THIS STARTED FIRST STEP 1 STEP 2 STEP 3 Label bags Label 18 gallon-sized freezer bags as follows: Label 2 bags 1. Cincinnati Chili Label 2 bags 2. Korean Pork Tacos Label 2 bags 3. Chicken Fajitas Label 2 bags 4. Mushroom and Pepper Chicken Label 2 bags 5. Beef Stew Label 2 bags 6. Pot Roast Label 2 bags 7. Cuban Pork Rice Bowl Label 2 bags 8. Cheesy Chicken with Broccoli Label 2 bags 9. Asian Chicken Casserole Shred Chicken Place contents of (1) 3 lb. bag of frozen chicken in a large pot of boiling water. Boil for about 45 minutes. Shred with a fork or in a standing mixer. Brown Meat In a large pan: begin to brown one 2.25 lb. package of ground beef. Finely chop 2 onions and add them to the meat. Once the meat has browned, mince or press 3 garlic cloves and add to the meat for another 2-3 minutes. Drain and set aside. n/a 10 1 STEP 4 Onions Finely chop one onion. Divide in half and place each half in bags 7 (Cuban Pork) Finely chop an additional half of an onion, divide in half and place each half in bags 2 (Korean Pork Tacos) 2, 7 PREPARE VEGETABLES STEP 5 STEP 6 STEP 7 STEP 8 STEP 9 STEP 10 STEP 11 STEP 12 Thinly slice 4 onions. Place one onion each in bags 3 (Chicken Fajitas) and bags 5 (Beef Stew). Thinly slice 1 more onion, divide in half and place each half in bags 4 (Mushroom Pepper Chicken) Carrots Peel 8 carrots. Chop 6 carrots, divide in half and place each half in bags 6 (Pot Roast) Chop remaining 2 carrots, divide in half and place each half in bags 5 (Beef Stew) Celery Chop 4 stalks of celery into 1 inch pieces. Divide in half and place each half in bags 5 (Beef Stew) Garlic Peel 22 cloves of garlic and set aside in a small bowl. 2, 5, 7 Peppers Thinly slice multi-colored peppers (one red, orange, yellow). Divide in half and place each half in bags 3 (Chicken Fajitas) Thinly slice one green pepper, divide in half and place each half in bags 4 (Mushroom and Pepper Chicken) Lime Juice Juice one lime and set aside in a small bowl (optional - lime juice from your pantry will also work). Jalapeno (optional) Using rubber gloves, remove seeds and diced 2 jalapeno peppers. Divide in half and place each half in bags 2 (Korean Pork Tacos) Mushrooms Slice 8 oz. of mushrooms. Divide in half and place each half in bags 4 (Mushroom Pepper Chicken) 3, 4, 5 5, 6 5 3, 4 3, 7 2 4 7 IAMTHATLADY.COM

GLLUTEN-FREE STEPS* STEP 1 Cream of Mushroom Soup Chop 1 cup of mushrooms STEP 2 In a small sauce pan, melt butter over medium heat STEP 3 Add mushrooms, sauté for 5 minutes STEP 4 Add flour and whisk until well blended and bubbly STEP 5 Add milk, water and seasoned salt. STEP 6 STEP 7 Cream of Chicken Soup Gently whisk until it starts to bubble and thicken (about 5-7 minutes); remove from heat. In a medium sauce pan, whisk milk with the flour over medium heat. STEP 8 Add the butter, bullion and salt. STEP 9 STEP 10 Remove from heat. STEP 11 When it starts to bubble, reduce heat and stir for a couple minutes. Divide into 2 portions: 4 cups (for recipe 8, Cheesy Chicken and Broccoli) and 2 cups (for recipe 10, Chicken Enchiladas). 1 cup chopped mushrooms 4 Tbsp butter 4 Tbsp gluten-free flour 1 cup milk (2% or whole) 1 cup water 2 tsp seasoned salt 6 cups of milk 6 Tbsp butter 18 Tbsp gluten-free flour 6 gluten-free chicken bullion cubes 3 tsp salt *only do these if making gluten-free modifications STEP 12 Pork Loin Cut each pork loin in half. Place each half in bags 2 (Korean Pork Tacos) and bags 7 (Cuban Pork) 2, 3 PREPARE MEAT STEP 13 STEP 14 Chicken Breast, left whole Chicken Breast, sliced into strips Trim 2 bags of thawed chicken breast. Divide chicken into 4 equal amounts. Place 2 fourths into bags 8 (Cheesy Chicken with Broccoli) and place the other 2 fourths into bags 9 (Asian Chicken) Trim remaining 2 bags of thawed chicken breast and slice into strips. Divide chicken into 4 equal amounts. Place 2 fourths into bags 4 (Mushroom and Pepper Chicken) and place the other 2 fourths into bags 3 (Chicken Fajitas) STEP 15 Chuck Roast Remove each chuck roast from packaging. Place each in bags 6 (Pot Roast) 6 STEP 16 Stew Beef Remove each package of stew beef from packaging. Place each in bags 5 (Beef Stew 4, 5, 6, 7 5, 6 5 Prepare Cheese Grate Cheese Completely grate (3) 8 oz. bricks of cheddar cheese and set aside in a large bowl (should be about 6 cups). Before assembling the meals, place 4 cups of the cheese in a bag in the refrigerator (to be used when you cook meal 8 (Cheesy Chicken and Broccoli). Tip - a food processor works great for this. 8, 10 Put it all Together! Prepare Meals Prepare recipes in the order that they are numbered. It might be helpful to gather all pantry ingredients at this point. Freeze Freeze bags laying flat once completed in freezer. By laying them flat, they will be able to fit in almost any standard-sized freezer. 8 IAMTHATLADY.COM

RECIPE 1 CINCINNATI CHILI (ALREADY DOUBLED) ALDI INGREDIENTS 2.25 lbs. ground hamburger, browned and drained. 2 Medium onions, minced and cooked with the ground beef 3 cloves of garlic, minced or pressed 1 can crushed tomatoes (28 oz.) 1 can water (28 oz.) PANTRY INGREDIENTS 1 Tbsp salt 3 Tbsp chili powder 1 tsp black pepper 1 tsp cumin 1 tsp cinnamon 1/2 tsp ground Allspice 1/2 tsp ground cloves 1 1/2 Tbsp red wine vinegar 1 tsp Worcestershire sauce 2 Tbsp cocoa powder INSTRUCTIONS: 1. In a large mixing bowl, combine meat (with the onions and garlic) and all other ingredients. 2. Mix well. 3. Divide evenly and place in 2 freezer bags. 4. Freeze. TO COOK: 1. Take out of freezer the morning you plan to cook to thaw. 2. After it thaws, bring to a boil in a pan over medium heat. 3. Cover and simmer for 45 minutes. Serve over pasta with shredded cheese, sour cream, and crackers. 10 IAMTHATLADY.COM

RECIPE 2 KOREAN PORK TACOS (SINGLE RECIPE, DO THIS TWICE) ALDI INGREDIENTS 2 lbs pork loin (half of the 4 lb loin) 5 cloves of garlic 1/4 of an onion, diced Flour tortillas* *Gluten Free Modification below PANTRY INGREDIENTS 1/3 cup brown sugar 1/4 cup soy sauce* 1 Tbsp seasoned rice wine vinegar (white wine vinegar will work too) 1 tsp sesame oil 1 tsp ground ginger 1 jalapeno, seeded and diced INSTRUCTIONS: 1. Combine all ingredients in a freezer bag (x2) 2. Freeze. TO COOK: 3. Take out of freezer the day before you plan to cook to thaw. 4. Cook in slow cooker on low for 8-10 hours. 5. Shred pork. Serve toped with veggies of your choice in wraps. We use a cole slaw mix or chopped iceberg lettuce. 11 IAMTHATLADY.COM

RECIPE 3 CHICKEN FAJITAS (SINGLE RECIPE, DO THIS TWICE) ALDI INGREDIENTS 1 1/2 lb. boneless skinless chicken breast, sliced into strips. 1 medium onion, sliced 1 1/2 bell peppers sliced into strips (red, yellow, orange or green) PANTRY INGREDIENTS 1 1/2 tsp cumin 1 tsp chili powder 1/2 tsp garlic powder 1 tsp black pepper 1 tsp salt 2 Tbsp olive oil 1 tsp lime juice 1/2 cup water INSTRUCTIONS: 1. Combine all ingredients in a freezer bag. 2. Freeze. TO COOK: 3. Take out of freezer the morning you plan to cook to thaw. 4. After it thaws, place in slow cooker and cook for 4-5 hours on medium or high. Serve in flour tortillas (or gluten free wraps) and top with shredded cheddar cheese, sour cream and salsa. RECIPE 4 MUSHROOM AND PEPPER CHICKEN (ALREADY DOUBLED) ALDI INGREDIENTS 3 lb. boneless skinless chicken breast, sliced 1 Medium Onion, sliced 8 oz. sliced mushrooms 14.5 oz. can diced tomatoes 1 green bell pepper, sliced 28 oz. can crushed tomatoes 8 oz. can tomato sauce PANTRY INGREDIENTS 1 Tbsp Oregano 1/2 tsp salt INSTRUCTIONS: 1. Combine cream of chicken soup, water, and seasoned salt in a freezer bag and mix well. 2. Add chicken breasts. 3. Freeze. TO COOK: Additional Ingredients when cooking: 2 Tbsp flour (or gluten-free flour) 2 Tbsp butter 1 cup milk (2% or whole) 2 cups of shredded cheddar cheese 1 bag of Frozen Broccoli 1. RECIPE 9 ASIAN CHICKEN CASSEROLE (SINGLE RECIPE, DO THIS TWICE) ALDI INGREDIENTS 1 1/2 lb. boneless skinless chicken breast 3/4 cup uncooked white rice (must use WHITE rice) 2 Tbsp soy sauce 1 can cream of mushroom soup (or 1 cup of gluten-free cream of mushroom soup) PANTRY INGREDIENTS 2 Tbsp honey 3/4 cup water 1/2 tsp garlic powder 1/4 tsp ground ginger 1/4 tsp paprika INSTRUCTIONS: 1. Combine soup mix, water, soy sauce, honey and spices into a freezer bag with chicken. Secure freezer bag and mix together until blended. 2. Add rice and mix well. 3. Freeze. TO COOK: 4. Take out of freezer the morning you plan to cook to thaw. 5. After it thaws, place contents in a baking dish and arrange chicken neatly on top. Make sure that all the rice is in the liquid and not on top of the chicken. 6. Cover and bake for 40 minutes at 400, then take cover off and bake for another 5 minutes. RECIPE 10 CHICKEN ENCHILADAS (ALREADY DOUBLED) ALDI INGREDIENTS 3 lb. boneless skinless chicken breast, cooked and shredded 2 cups of salsa 2 cups shredded cheddar cheese (2) 10.5 oz. cans cream of chicken soup (or 2 cups of gluten free cream of chicken soup mixture) 1 cup sour cream Flour tortillas or gluten-free wraps PANTRY INGREDIENTS 4 tsp chili powder 1 tsp cumin INSTRUCTIONS: 1. In a large mixing bowl, combine soup, salsa, sour cream and spices. 2. In another bowl, mix 2 cups of the mixture with the chicken and 1 cup of cheese. 3. Equally fill and roll each tortilla (or gluten-free wrap) with the chicken mixture. 4. Place rolled tortillas in a 13x9 baking dish (x2). 5. Top with remaining soup mixture, and then the remaining cheese (x2). 6. Cover with foil and write Bake at 350 for 30-40 minutes and place in freezer. TO COOK: 7.
