The elaboration and presentation of the food services is guided by attention to detail and guest satisfaction. And my inspiration comes from cooking throughout Argentina, Brazil and Spain. Chile de Nogada pork and beef- GF - Slow cooked pork and beef, tomatoes, almonds, raisins, onions, garlic, banana puree, chestnuts, cinnamon, cloves, peach, pear, apple, Castilla nut, goat cheese, milk, pomegranate and parsley, served with arroz tipico. Rabbit Stew- GF Slow cooked rabbit in Spanish red wine garlic, tomatoes, carrots, and potatoes - Baby Lamb Cotelletes -GF - Cava marinated baby lamb cotelletes, lightly flambé in Jerez, topped with parsley, roasted pine nuts and fried sage leaves, served with chipotle polenta. Barbacoa beef -GF- Slow cooked beef, chiles, guajillos, ancho, mulato, oregano, bay leaves, tomatoes, onions, garlic, thyme, apple vinegar and Spanish olive oil topped with cilantro sauce served with arroz tipico. Seared Beef Tenderloin -GF- 6 oz serving $22.50 per person With blue cheese sauce, mash potatoes and spicy Brussels sprouts. Beef Stroganoff Grass fed beef cooked in a special creamy sauce served with potato puree or pasta. FOWL Pato a la Naranja Duck in orange glaze with green couscous.
