White Wine A superbly fresh, fruity wine which preserves all the primary aromas of the Viura and Malvasía grapes, hinting at citric fruits mixed with apple and pear. Varieties: 90% Viura and 10% Malvasia. Alcoholic Fermentation: 20 days in stainless steel at temperatures no higher than 15ºC. Colour: Green, brilliant and clean. Nose: Without swirling the glass, one appreciates tropical notes of melon and pineapple mixed with a hint of banana. Swirling the glass, the freshness springs forth with citric notes. Palate: The initial sensation is marked by the wine s freshness, followed by the medium weight with a good balance between alcohol and acidity. Barrel Fermented White Made of grapes from a unique vineyard with limited production and over 50 years old. Only 1,000 bottles of this unique white wine are created each year. After fermentation, it is aged in new oak barrels for 5 months. Varieties: 90% Viura and 10% Malvasia. Alcoholic Fermentation: 15 days in a new French oak barrel at temperatures no higher than 20ºC. Barrel aged in the same barrels for 5 month. Colour: Light yellow with some green reflections, brilliant and very clean. Nose: Floral notes, honey, citric and sweet fruits with light toasted touches typical of good crianza. Palate: The wine presents itself on the palate of medium body and well balanced. This is followed by fine citric tones on the mid-palate, along with a light taste of new wood. The aftertaste is long-lasting and persistent. Ideal drinking temperature: Between 7-10 º C. Carbonic Maceration This wine is made through the process of Carbonic Maceration. The whole bunches of grapes are fermented without prior destemming in stainless steel tanks.. After fermentation, the grapes are pressed and the press wine is seperated from the free flow wine. Varieties: 92% Tempranillo and 8% Viura. Production Method: Carbonic maceration. Alcoholic Fermentation: 10 days at temperatures no higher than 26º C. Malolactic Fermentation: In stainless steel tank. Colour: Brilliant red with violet tones on the outer edges. Medium-high depth. Nose: Without swirling the glass, one appreciates fruity aromas of red berries such as strawberries, redcurrants and raspberries. Moving the glass highlights floral notes mixed with aromas of rose, acidic raspberry and fruits of the forest. Palate: On the palate the wine is silky, smooth and fruity. Graciano This is a single variety wine made with the graciano grape; a rare, unique grape with which we seek an exceptional wine; a demanding grape that requires meticulous work in the vineyard for an excellent balance. Vintage: Manual Variety: Graciano Method: Destemming Alcoholic Fermentation: In French oak barrels of 500 l with 5 days of cold maceration. oxo line method. After the alcoholic fermentation the wine is drained and returned to the barrel for malolactic fermentation. Ageing: 8 months in French oak barrels. Colour: Intense cherry red, with great depth of colour and a young and lively edge. Nose: Before swirling the glass, one appreciates nuances of dark berries, blackberries, currants, red and black cherries. Moving the glass brings out intermingled arid nuances of pink grapefruit, savoury liquorice and a light background of fresh herbs. Palate: The initial sensation is fresh and lively, marked by the aromas of the dark berries, with a subtle touch of blackcurrant. The mid-palate is smooth, marked by the characteristic nuances of graciano of citric acidity and a light background of herbs, with mild, elegant tannins, with an after-taste of freshness and a subtle toasted touch that is reminiscent of bitter chocolate. Consumption: 17ºC, open an hour before serving in a large glass. Parcelas White Made from grapes from a unique vineyard with very limited production and going back more than 50 years. Only 800 bottles of this unique white wine are produced each year. Grape Harvest: Manual. Varieties: 100% Viura Alcoholic Fermentation: 20 days in a cement tank at temperatures no higher than 20ºC. Aged in the same cement tank for 6 months. s Colour: Light yellow with some green hues, bright and very clean. Nose: Floral, citric nuances with mineral hints reminiscent of their Terroir inherent in vinos de pago (single-estate wines). Palate: Full-bodied at the start, with a glycerine taste. Citric nuances come to the fore mid-palate, accompanied by a mild creamy texture. The aftertaste is long and persistent. Ideal Drinking Temperature: Between 7º and 10º C. Pairing: Aperitifs, fish, light seafood and white meat, pasta, pizza and rice dishes.
