Henderson County Fair is July 17 23, 2017 Open Division (Canning, Baked Goods, Photography) Exhibits can be brought to the Fairgrounds on Monday, July 17 between 5:00 p.m. and 6:00 p.m. Entries will CLOSE at 6:30 p.m. Should you not be able to bring them during that timeframe for the Open Division, you can bring them by the Extension Service prior to that time. Be with Family: Spit Watermelon Seeds! June 22-25 is National Watermelon Spitting Week! What may seem like a silly observance could actually be an activity or tradition that pulls families together and makes communities stronger. Family traditions are just one example of how families can create a sense of connection, closeness, emotional safety, security and stability. Strong families play an important role in the community and contribute to a healthy society overall. For example, positive development of a young child depends on a parent s ability to nurture, teach and provide. Despite daily stressors and various emotional barriers, positive family interactions especially those that include a sense of belonging, love, connection, trust, sensitivity and responsibility, can contribute to overall health, happiness, and well-being. Therefore, gather your family and start spitting watermelon seeds! Springtime Strawberries Once we start to see strawberries at the grocery store and farmers market, we know the warm months of the year are right around the corner. Many people enjoy picking strawberries at local farms and orchards. This is a great way to teach children about how strawberries are grown and when they are in season. Strawberries have many nutrients that are good for our overall health. Their bright red color indicates high levels of antioxidants and they are loaded with other minerals and vitamins including vitamin C. Another great thing about strawberries is their natural sweetness that can be used in any dish at any time of day. Try strawberries in your cereal or yogurt for breakfast, in a fruit salad at lunch or in a strawberry pie for a special occasion. For a great strawberry recipe, try the Spring Harvest Salad from Plate it Up! Kentucky Proud. Source: Heather Norman-Burgdolf, Extension Specialist for Food and Nutrition, University of Kentucky; College of Agriculture, Food and Environment Spring Harvest Salad Ingredients 5 cups torn spring leaf lettuce 2½ cups spinach leaves 1½ cups sliced strawberries 1 cup fresh blueberries ½ cup thinly sliced green onions Dressing 4 teaspoons lemon juice 2½ tablespoons olive oil 1 tablespoon balsamic vinegar 1½ teaspoons Dijon mustard 2 teaspoons Kentucky honey ½ teaspoon salt ¼ cup feta cheese crumbles ½ cup unsalted sliced almonds Directions 1. Combine leaf lettuce and spinach leaves with sliced strawberries, blueberries and green onion in a large salad bowl. 2. Prepare dressing by whisking together the lemon juice, olive oil, balsamic vinegar, Dijon mustard, honey and salt; pour over lettuce mixture and toss to coat. 3. Sprinkle salad with feta cheese and sliced almonds. 4. Serve immediately. Yield: 8, 1 cup servings Nutritional Analysis:130 calories, 9 g fat, 1.5 g sat fat, 240 mg sodium, 12 g carbohydrates, 3 g fiber, 7 g sugar, 3 g protein
