The basic concept of fish preparation in Japan is suggested by the following proverb: "Eat it raw first of all, then grill it, and boil it as the last resort." The Yangtze delta in China is considered to be the original source for the practice of rice cultivation in Japan. In the coastal seas of Japan, warm and cold currents mix to provide bountiful fishing grounds. This favorable natural environment and the traditional exclusion of fish from the meat taboo meant an extensive exploitation of marine resources. The Japanese developed a special liking for fish, and most people enjoyed a variety, although consumption was still largely forbidden for Buddhist monks. Fish dishes, with a higher status as well as a more attractive taste than vegetable dishes, were formerly considered indispensable at feasts. However, before the introduction of modern delivery systems, the difficulty of preserving and transporting fresh marine fish minimized consumption in inland areas where freshwater fish were commonly eaten instead. To amplify, it is felt that the taste and texture of fish is best appreciated when it is very fresh and eaten raw.
