WHITE RUM White rum also known as silver or light is usually dry and light-bodied, clear in colour and lightly sweet in flavour. It is produced from sugarcane juice and molasses, and normally has a short distillation period. Unlike other various rums which are aged in charred oak casks, white rum is simply aged in plain oak casks or stainless steel tanks, so it remains clear. White rum is often the favoured choice of rum for cocktails and other mixed drinks. Rum fact Rum is the first branded spirit to have ever been made, seeing as how it's been around longer than most modern alcoholic beverages WHITE RUM Appleton White (Jamaica) 40% 90 Bacardi Superior (Puerto Rico) 40% 85 Brugal Silver (Dominican Republic) 40% H 120 Denizen (Trinidad & Jamaica) 40% H 100 Diplomático Blanco (Venuezela) 40% H 120 Don Q Cristal (Puerto Rico) H 120 El Dorado (Trinidad and Tobaggo) H 100 Elements 8 Platinum (St Lucia) 40% H 120 Fiji Rum White 8Yo (Fiji) 37.5% H 100 Green Island Superior White (Mauritius) 110 Legendario (Cuba) 40% 120 Motu Silver (Tonga Island) 40% 95 New Grove Plantation White Rum (Mauritius) 37.5% 100 Pampero Blanco (Venezuela) 37.5% 95 Plantation White 3 Stars 110 (Trinidad, Jamaica, Barbados) 41.2% 4 5
Rum fact The precursors to rum date back to antiquity. Development of fermented drinks produced from sugarcane juice is believed to have first occurred either in ancient India or China, and spread from there. An example of such an early drink is brum. Produced by the Malay people, brum dates back thousands of years. Marco Polo also recorded a 14th-century account of a very good wine of sugar DARK AND AGED RUM Aged rums are usually medium-bodied which gain both a dark colour and richer flavour from the process of ageing done in wooden oak barrels. Since they are slightly more distinct, aromatic and flavourful than clear rums, they often add unique tastes to cocktails compared to that of their clear counterpart or just to enjoy neat. 6 7
DARK AND AGED RUM Rum fact The first distillation of rum took place on the sugarcane plantations of the Caribbean in the 17th century. Plantation slaves first discovered molasses, a byproduct of the sugar refining process, can be fermented into alcohol. Later, distillation of these alcoholic by-products concentrated the alcohol and removed impurities, producing the first true rums. DARK AND AGED RUM Rum fact Rum s association with piracy began with British privateers trading on the valuable commodity. As some of the privateers became pirates and buccaneers. The association of rum with the Royal Navy began in 1655, when the British fleet captured the island of Jamaica. With the availability of domestically produced rum, the British changed the daily ration of liquor given to seamen from French brandy to rum. While the ration was originally given neat, or mixed with lime juice, the practice of watering down the rum began around 1740. To help minimize the effect of the alcohol on his sailors, Admiral Edward Vernon had the rum ration watered producing a mixture that became known as grog. The Royal Navy continued to give its sailors a daily rum ration, known as a tot, until the practice was abolished after July 31, 1970 Ron Zacapa 23 (Guatemala) 40% 140 Ron Zacapa XO 40% 200 Santa Teresa 1976 (Venezuela) 40% 150 St Nicholas Abbey 10Yo (Barbados) 40% 200 St Nicholas Abbey 15Yo Rare Single Cask 40% H 280 Wood s 100 Dark Overproof (Guyana) 57% 120 Rum Fact The more sophisticated rums are designed to be enjoyed without being mixed in a cocktail, although some rum enthusiasts use them as premium ingredients in libations. Many premium rums are served as one might serve a fine single malt scotch or cognac, neat in a fine snifter or on the rocks. The labels often contain a statement of the age. 14 15
Dark rum is aged longer than clear aged rum, usually in heavily charred oak barrels. It also possesses a far greater flavour than white rum or even gold rum, likely with a sweeter taste. It is regularly flavoured with caramel, spices, molasses, vanilla and other subtle flavourings and most dark rums are distinguishable. Overproof Rums are molasses rum but with a higher alcohol content, usally used in the kitchen or to flame cocktails, not to drink as a shot. 16 Rum fact Following his victory at the Battle of Trafalgar, Horatio Nelson's body was preserved in a cask of rum to allow transport back to England. Upon arrival, however, the cask was opened and found to be empty of rum. The pickled body was removed and, upon inspection, it was discovered that the sailors had drilled a hole in the bottom 17

Both rums are distilled from a fermented liquid which contains sugar from raw sugarcane Molasses: when sugar processing plants extract sugar from the sugarcane juice, they boil the juice until crystals start to form, leaving behind a thick liquid knows as molasses. Depending on how much sugar they take out, one is left behind with grade A to D which categorize the quality of the mollase. Rum fact Rum was also at the epicentre of the infamous 'slavery triangle', which operated from the late 16th to the early 19th centuries The first leg involved the shipment of molasses to New England from the Caribbean to produce rum. The second leg was the shipment of rum to West Africa to trade for slaves and the third and final leg of this triangle was the passage of slave ships to the sugar plantations of the Caribbean and South America where these same slaves were put to work in the sugarcane fields CACHAÇA Abelha Silver 39% 95 Abelha Gold 39% 95 Leblon Cachaça 40% H 120 Sagatiba Velha Cachaça 38% 110 PISCO Macchu Pisco (Peru) 40% 95 28 29
