Camp I-Can-Cook classes will teach young chefs basic cooking skills, plus explore nutritional facts, food and kitchen safety and food cultures of other countries. Every spring we wait for the news that Alaska officials have opened fishing season on the Copper and that our fi rst Copper River chinook, coho and sockeye will soon arrive. These fish are specially prized for their rich flavor, firm pink flesh and concentration of healthful omega-3 fatty acids. And this year we want to share a recipe that highlights a part of the fish that s often simply thrown away, but that is especially high in omega-3 s the incredibly tasty salmon skin. Grilled Copper River Salmon with Dijon Lemon Sauce & Salmon Chips Four 6-ounce salmon fillets, skin on & pin bones removed Salt & freshly cracked black pepper, to taste 1 lemon, zest & juice 1 tablespoons finely chopped tarragon leaves 2 teaspoons Dijon mustard 6 tablespoons unsalted butter, softened 2 tablespoons whole tarragon leaves 1. Place the salmon skin side down on a cutting board and use a very sharp knife to make three or four 1/2-inch deep incisions across each fillet. Sprinkle with salt and pepper. Scatter half the lemon zest and the chopped tarragon leaves over fillets and push these fl avorings deep into the incisions. 2. Flip fi llets over, skin side up, and rub 3 tablespoons of butter all over the skins of the fi llets. Transfer cutting board to refrigerator for at least 15 minutes to fi rm the butter. 3. Brush the bars of the barbecue clean to prevent the salmon from sticking. Then, whether using a charcoal or gas barbecue, crank it up to high heat. 4. When barbecue is hot, lay the fi llets on the grill, skin side down. Cook for about 5 minutes, until the skin is golden brown. Carefully fl ip the salmon over and cook for another 2 to 3 minutes. While it cooks, gently lift skin away from fi sh and place it along side the fi llets to further crisp. 5. Remove fi llets and skin from barbecue and set aside to cool a bit. 6. In a small saucepan over moderate heat, whisk together the remaining butter and lemon zest, the Dijon mustard, 2 tablespoons of lemon juice and the whole tarragon leaves. 7. Divide the sauce between four plates and place a salmon fillet on each pool of sauce. Break the salmon skin into bite-sized chips, sprinkle them over the fi llets and serve.
