Time to fire up the pit and cook that barbecue your friends say is the best they ve ever had! The Chisholm Trail Roundup BBQ Committee is proud to announce that this year s cook off is sanctioned by Lonestar Barbecue Society. This year s event will be held at the Lockhart City Park (504 E. City Park Road) on June 2 & 3, 2017. Everyone is encouraged to register early. Please read and follow the Rules & Regulations of the Lonestar Barbecue Society, then complete, sign, and return the registration form along with your entry fee (checks or money orders are made payable to Lockhart Chamber of Commerce) to Lockhart Chamber of Commerce, P. O. Box 840, Lockhart TX, 78644. Your driver license number MUST be listed on personal checks. Meat inspection and cook s meeting will be Friday, June 2, 2017 at 7:30 P.M. in the Main Pavilion (see rules and regulations for setups). Cooking may begin after check-in. ATTENDANCE OF THE COOKS MEETING IS MANDATORY. Spaces are assigned on a first-come, first-served basis with paid entry fee and submitted application. There are no electricity hook ups. CTR Bar-B-Que Capital of Texas BBQ Championship Cook Off RULES & REGULATIONS This event is held by the Lockhart Chamber of Commerce & Chisholm Trail Roundup with all rules for juding as written by that organization and the Lonestar Barbecue Society. SETUP: Contestants entering the Cook Off may set up NO EARLIER than 5 P.M. on the Thursday prior to the cook off ONLY if entry fee has been paid. All contestants must vacate the City Park by Noon on Sunday. Security is provided Friday and Saturday only. TEAMS: A team will consist of a Chief Cook and up to three (3) assistants. Chief Cook will be held responsible for the conduct of the team. Excessive use of alcoholic beverages will be grounds for disqualification, with no refund of entry fee(s). Quite time is from 1 A.M. to 8 A.M. Only moderate amplification during the day. Contestants must be signed in before, or at, Cooks meeting. MEETING OF COOKS: A mandatory Cooks meeting for all categories will be held on Friday, June 2, 2017 at 7:30 P.M. in the Main Pavilion at the City Park. COOKED ON SITE: Any category entered must be cooked on site, as defined in the Lonestar Barbecue Society By-laws without pre-cooking or marinating. Random inspections will be performed to assure that meat is not prepared prior to the official start of the competition. Rules and regulations may change without notice, if alternative site is chosen. No exceptions. PARKING: Please limit one vehicle in your cooking area to allow access for FIRE & EMS vehicles and workers. Additional parking is available. SANITATION: Cooks are to prepare and cook in as sanitary a manner as possible. Cooking conditions are subject to inspection by judging committee. Infractions identified by the judging committee shall be immediately corrected or the cook will be subject to disqualification. During and after the event, each team is required to keep the area clean of all trash. NO OPEN GROUND FIRES ARE PERMITTED! CATEGORIES: Cook off promoters shall advise contestants in advance of applicable meat categories and/or cuts of meats and/or types of cookers.

CTR Bar-B-Que Capital of Texas BBQ Championship Cook Off RULES & REGULATIONS, continued BEEF BRISKET: Turn in approximately 7 full 1/4 to 3/8 slices PORK SPARE RIBS: Turn in approximately 7 individual cut ribs (bone-in). St. Louis style is okay. CHICKEN: Turn in approximately 1/2 of a whole chicken (if there are 50+ teams you must turn in one whole chicken). Chicken cannot be disjointed, to include skin, breast, wing, leg, and thigh. Barbecue and Ribs will be judged on aroma, appearance, color, texture, moisture, taste, and overall impression. Judging will be under the direction of Lonestar Barbecue Society. THE DECISION OF THE JUDGES ARE FINAL. TURN-IN TIMES: Times for each category shall be pre-set. Once the time is set and/or announced, no changes will be made. A turn-in window of ten (10) minutes before and after the set turn-in times will be recognized. Judging trays received after that time will not be accepted for judging. Chicken: 12 Noon on Saturday, June 3, 2017 Pinto Beans: 1:00 P.M. on Saturday, June 3, 2017 (separate application required) Pork Spare Ribs: 1:30 P.M. on Saturday, June 3, 2017 Chili: 2:00 P.M. on Saturday, June 3, 2017 (separate application required) Brisket: 3:00 P.M. on Saturday, June 3, 2017 Best Pit: 1:00 2:00 P.M., Saturday, June 3, 2017 Showmanship (Tolbert) 2:15 3:05 P.M. (must cook chili to Show), Saturday, June 3, 2017 JUDGES: A minimum of five (5) judges per table will be utilized during initial judging. Subsquent levels of judging should utilize a minimum of seven (7) or a maximum of nine (9) judges per table. Head cooks are prohibited to participate as judges. ANNOUNCING WINNERS: Annoucement of the Chili Cook Off winners will be held a the end of judging. The BBQ Cook Off winners will follow. The annoucements of winners will be based on the number of competitors in each category. Example: Cook off with ten or more entries announces the top 10 plus final table (numbers only). It is recommended that more than one person verify ticket numbers.

CTR Bar-B-Que Capital of Texas BBQ Championship Cook Off RULES & REGULATIONS, continued PRIZES: A Grand Champion and Reserve Champion will be named at our cook off. In the event of a tie for Grand Champion, brisket will be the first tie breaker, followed by ribs, then chicken, and then by any other category. The promoter MUST advertise any changes to the tie breaker decision in advance. Grand Champion and Reserve Champion Brisket: 1 st place $700 Pork Spare Ribs: 1 st place $350 2 nd place $350 2 nd place $175 3 rd place $175 3 rd place $100 4 th place $125 4 th place $50 Chicken: 1 st place $350 Best Pit: Trophy 2 nd place $175 3 rd place $100 4 th place $50 Trophies or plaques will be awarded for 1 st, 2 nd and 3 rd place in each category, while 4 th 10 th places will receive ribbons. No animals of any kind are allowed in the judging area. All animals must be on a leash according to Lockhart City ordinance. 14th Annual Chisholm Trail Roundup TOLBERT TERLINGUA CHILI QUALIFIER & PINTO BEAN COOK-OFF Saturday, June 3, 2017 The Chisholm Trail Round-Up Committee would like to extend a personal invitation for you to participate in our TOLBERT TERLINGUA Chili Qualifier, Chili and Pinto Bean Cook-Off to be held on Saturday, June 3, 2017. The 1 st Place winner of Chili qualifies to Cook Behind the Store in Terlingua! The official Tolbert Rules apply to this competition, and you are required to follow them in order to enter the Cook-Off. 14th Annual Chisholm Trail Roundup TOLBERT TERLINGUA CHILI QUALIFIER & PINTO BEAN COOK-OFF Saturday, June 3, 2017 An entry fee of $15.00 per item entered for Chili is required with the application (attached). An entry fee of $10.00 is required for the Pinto Bean Cook-Off. All entries must be in no later than 10:00 A.M. the day of the Cook-Off or with your BBQ application. No more than five (5) Cooks allowed per team, including the Chief Cook. The Chief Cook will be responsible for the conduct of the team. Excessive use of alcoholic beverages will be grounds for disqualification(s). Contestants must cook a minimum of two pounds of meat (Chili Grind Only). No limit to amount of other ingredients; however, beans, rice or other fillers cannot be added. All ingredients must be cooked on contest premises. Contestants are encouraged to make samples available for the crowd. No identifiable ingredients such as large chunks of tomato, peppers, etc. shall be included in the Chili cups turned in for judging. Chili and Pinto Beans will be judged on appearance, aroma, texture and taste. THE DECISIONS OF THE JUDGES ARE FINAL. Prizes will be awarded to 1 st through 10 th places in Chili and 1 st through 10 th places in Pinto Beans. There will be three (3) Showmanship Trophy awards. Contestants must clean their area no later than 6:00 P.M. on Saturday. Contest committee reserves the right to make additional rules and regulations as the situation warrants.
