Sausage Mushroom Salad and Made Potatoes (for(for 2) 4) 1 Preheat oven to 400 degrees. Boil a stock pot of water for the potatoes. Finely chop 1/2 Tbs. parsley. Pour 1/2 Tbs. olive oil in a bread loaf size baking dish. Place the chicken breasts in the dish, coating each side the oil in the baking dish. Clean and slice the mushrooms after cutting off discolored portion off of the stems. 2 3 Wash, quarter and then half again the red potatoes, skin on, removing any unsightly or discolored parts of the potatoes and add them to the stock pot of boiling water. Reduce heat to med high to avoid boiling the potatoes over. Cook until fork tender. 4 Next, in a skillet, melt 1 Tbs. butter over medium heat, add all sliced mushrooms. Cook and stir until mushrooms are brown and liquid is evaporated, about 6 minutes. Ensure the chicken is cooked thoroughly, that the juices run clear, an internal temperature of 165 degrees. When chicken is cooked, place on platter and spoon the mushroom sauce over the baked chicken breasts. Salt and pepper chicken to your liking. Squeeze the juice of 1/4 lemon over chicken breasts. Slice the remaining lemon and place a lemon slice on top of each chicken piece. Stir in 3 Tbs. butter, 1/3 cup grated parmesan cheese, 1/2 tsp. garlic salt and 1 tsp dried oregano.
