The content of the concession stand guidebook is an overall guide to what our parent volunteers need to know when working their required shifts as part of their traveling hockey players requirements. It is because of the great parent volunteers that the Albert Lea Hockey Association is able to keep costs lower and allow our young athletes a chance to keep active, be part of a team and play a great sport like hockey! Wipe down: All counters Hotdog Machine Microwave Restock: Pop Slushy Popcorn Machine Pretzel warmer Pizza warmer Candy Water Close and lock the front windows Turn off the lights and make sure the door gets locked (arena staff have keys)
Closing Put ketchup, mustard, barbecue sauce and anything else that needs to go in the refrigerator away. All volunteers are asked to assume responsibility to conduct tasks in a safe and efficient manner that complies with all local, state and federal safety and health regulations. Do dishes: Wash trays from fryer, hot dog machine, hot chocolate and cappuccino machine, slushy machine, coffee pots, utensils etc. NO FREE FOOD!!!!!! Please take some time to read through and let concession stand chair persons know if you have any questions. Count down cash register; Follow countdown directions above the register. Thank you!!
Starting and Ending Cash The first shift of each day should count the money in the register and fill out the daily log. (see next page) There should be approximately $100.00 in cash in the register. (You do not need to count the change) (Add rolls of quarters) At the end of your shift make a deposit. Never leave less than $75.00 in the register. (Write your name, date and dollar amount on the outside of the envelope and put the envelope in the safe on the floor next to the door.) Last shift of each day must do a final deposit and fill out the daily log. Leave approximately $100.00 in the cash register. Opening First Shift of the day: Count the register and start the concession stand daily report Turn on the Digital Menu Board (Remote is by cash register) Turn on fryer takes awhile to warm up Turn on pretzel warmer takes awhile for frozen pretzels to warm (microwave a few) Turn on hot dog machine and place a few hotdogs/corndogs on (unless only open for a few hours) Turn on popcorn maker and make popcorn Make coffee. Water is automatic Check nacho cheese. Should be two (2) bags of cheese in the machine.
Cleaning and Stocking If you re not busy please help keep our concession stand cleaned and stocked. Restock the refrigerator with hot dogs, buns etc.. (cont ) Keep pop and water coolers full. Move pop from the back cooler the front cooler and put warm pop in the back cooler. Restock candy, soup and chips. Restock paper serving/nacho trays, plates, cheese cups. Restock foam cups, lids. Check hot chocolate, cider and cappuccino mix. Wash machines inside, outside and under. Wipe down counters, coolers, refrigerator and freezer. Empty garbage. Scrub sink. Sweep and mop floor as needed. Ask arena staff when you extra supplies are needed for entrance in the Blue Line Conference Room. Check slushy machine and add mix if necessary Check hot chocolate, cider and cappuccino mix Restock pop, water, candy, and chips if necessary Take ketchup, mustard, barbecue sauce out of the refrigerator and place on counter of center window. Refill napkin dispenser Open front window Let arena staff know that you have garbage. Do not leave it outside the door without their knowledge.
