2 ECGC-12SL Melanger The ECGC-12SL melanger is a granite stone on granite stone grinder to grind cocoa bean nibs to chocolate liquor. A melanger is an ideal tool for chocolatiers who want to make chocolate from bean to bar or cocoa nibs to cocoa liquor. The melanger has enhanced ventilation system and helps to grind cocoa nibs for 24 hours or more. The ECGC-12SL is ideal for small chocolate businesses or for R&D to develop recipes for big businesses. In addition to grinding cocoa nibs, the ECGC-12SL can also be used to grind nut butters, tahini, and more. It can grind between 6lbs 8lbs of cocoa nibs per batch. The ECGC-12SL has two granite stone rollers that rotate at 135-140 rpm on a granite slab. This creates tremendous shear and reduces the particles of sugar and cocoa to the smoothness expected in modern chocolate. The roller stones and wiper are attached to the stainless steel shaft, and the whole roller stone assembly, is removable as one piece. They are easy to clean, handle and store. The roller stone assembly is locked into the lid for reproducible tension. The conical roller stones serve a dual function of conching in addition to grinding. We offer the ECGC-12SL in both 110V and 220V. The 220V melanger comes with a Plug D type and 110V melangers come with the plug suitable for USA outlets. The customer has to use a plug adaptor to suit their local electric outlet.

Once the grinding is done, remove the roller stones with chocolate, place the chococleaner on top of the drum. Then place the roller stone assembly on top of the chococleaner. Rotate the roller stones and all the chocolate liquor drips into the stainless steel vessel. Cost - $15 + S&H. Choco Kneader Chocokneader mixes the cocoa liquor and other ingredients that need not be ground. For example if you would like to add nut pieces to your chocolate without grinding them in this accessory is the best option for you. It can also be used to knead the dough for pizza, cake etc. Cost - $75 + S&H. Stainless steel wipers Stainless steel wipers (SS wipers) are used by the customers who want minimum delrin parts in the food contact area. Since stainless steel is more durable than delrin it is useful when using with ingredients that are more viscous and can stress the delrin wiper. Cost - $75 + S&H. 4 Cylinderical roller stone assembly: Some of our customers are using the melanger for other than grinding cocoa nibs. So we have introduced cylindrical roller stone assembly for ECGC-12SL and ECGC-12SLTA units. This cylindrical roller stone assembly includes 2 cylindrical roller stones, delrin wiper assembly, and stainless steel roller holder assembly. Perfect for grinding nut butters. Cost -$125 + S&H. Mini drum and roller stone set This mini drum and roller stone set is ideal for customers who want to make less than 2 lbs of cocoa liquor. It is ideal for test kitchens, at home use, or small experimental batches. This drum and roller stone set can grind 1lb 2lbs of cocoa nibs per batch. Cost - $150 + S&H. 5 ECGC-12SLTA - Melanger The ECGC-12SLTA is the latest version of the melanger CocoaTown sells. We have added a tension adjustor to this unit for more accurate tension control. ECGC-12SLTA is a granite stone on granite stone grinder to grind cocoa bean nibs to chocolate liquor. The ECGC-12SLTA has a specially designed ventilation system and helps to grind cocoa nibs for 24 hours or more. The conical stones rotate on granite bottom stone of the vessel, crushing the nibs and reducing the particles of sugar and cocoa about 15 micron range fine cocoa liquor. The roller stones and wiper are attached to the stainless steel center shaft, and the whole roller stone assembly, is removable as one piece. They are easy to clean, handle and store. The roller stone assembly is locked into the lid for reproducible tension. The conical roller stones serve dual function conching in addition to grinding. The Tension Adjustor accessory on the lock arm helps to conch the chocolate liquor in later part of the processing using the same unit. The ECGC-12SLTA is ideal for small chocolate businesses or for R&D to develop recipes for big businesses. In addition to grinding cocoa nibs, it can also be used to grind tahini from sesame seeds, nut butters from almonds, macadamia, pistachios and more. 8 CocoaT Junior Roasters CocoaT Junior Roaster CS CocoaT Junior Roaster SS CocoaT Junior Roasters are ideal for roasting cocoa beans, the starting place of top quality products. Roasting the cocoa beans at the correct temperature for the right duration is critical to get better quality nibs and in turn better tasting chocolate. All CocoaT roasters are equipped with removable stainless steel roasting drums. Our CocoaT Roasters are equipped with timer control. During roasting, cocoa beans constantly tumble inside the slowly rotating stainless steel drum. The beans are heated by convection heat (heating element) and conduction heat (from the roaster basket) resulting in evenly roasted beans. Our CocoaT Junior roasters can roast 4-6 lbs of cocoa beans. 9 Accessories: Cooling Tray: Cooling tray is ideal to stop the roasting process once the beans are removed from the roaster. Use the cooling tray to collect the beans from the roaster. Place it on the cooler base and the beans are cooled in less than 5 minutes. This helps in arresting the roasting precisely and prevents the beans getting cooked after removing from the oven. 10 CocoaT Mini PREGRINDER 110V CocoaT mini Pregrinder is more than a blender. This is a multipurpose unit which grinds, cracks, juices and pulverizes. Pregrinding: This is an ideal tool to pregrind cocoa nibs or nuts before grinding in the ECGC-12SL or ECGC-12SLTA melanger. By pregrinding one can shorten the process time in the melanger up to 50%. Since cocoa nibs and nuts are ground to powder instead of paste, there is less waste of material. Cracking cocoa beans: The CocoaT Mini Pregrinder can also crack cocoa beans in less than 10 seconds. Simply install the cracker blade after removing the grinding blade. Add 1 cup of beans, close the lid, place the jar on the unit, pulse it couple of times and you have cracked beans. 11 CocoaT Manual Cracker CocoaT Crackers are available in two versions Manual Cracker and Power Cracker. All the models are very compact and have a foot print of less than 1.5 sq. foot. The special feature of the crackers is that the cocoa beans are cracked into bigger pieces. This will result in easier winnowing, yielding better quality, cleaner nibs, higher yield of nibs (fewer nibs in the husk and less husk with the nibs) and higher profit than cracking the cocoa beans in the regular crackers available in the market. All the models come with metal gears, stainless steel rollers and stainless steel hopper. The CocoaT Manual Cracker is easy to assemble and simple to use. Just install the handle and one is ready to crack cocoa beans into nibs. All the parts that come in contact with food are made of high quality Stainless steel.
