Please call 573-4464 to register for ALL classes. Diabetes Workshops will be hosted by the Extension Office, Harlan County Health Department and KY Homeplace on October 4, 11, 18, & 25 from 12 Noon 3:30 p.m. and November 1 & 7 from 1:00 3:00 p.m. Food demonstrations, diabetes basics presentations and more will be held at each session. Incentives will be given to those attending. Registration is required. Call 573-4464 to register. County Homemakers Council will meet on Thursday, October 6th at 10:00 a.m. Remember the Wilderness Trail Area Extension Homemakers Meeting on Saturday, October 8th. Registration is 9:30 10:30 a.m. with the meeting beginning at 10:30. If you won 1st place in any Cultural Arts category and would like to enter those items in the Area Cultural Arts, please bring your entries to the Extension Office during the week of October 3rd. Chef J.C. Clark and Lisa Gaetke return on Thursday, October 13th, from 5:00-6:30 p.m. See the enclosed flyer. Please call the office to register. The Extension Office will participate in Trick or Treat on Main in downtown Harlan on Monday, October 31st, 3:00-5:00 p.m. We will have tables at the Harlan Center. Holiday Ideas will be held on Wednesday, November 3rd, at 10:00 a.m. Rebecca Miller, Bell County FCS Agent, will be bringing the area craft suitcase. She will also be teaching a holiday craft after her presentation. Homemakers Holiday Bazaar will be held on Saturday, November 5th, from 10:00 a.m. to 4:00 p.m. If you would like to sell items, please contact the Extension Office. The Extension Office will be closed on Tuesday, November 8th for Election Day. Painting with Pam will be held on Wednesday, November 9th at 1:00 p.m. She will be doing a Christmas painting. Cost is $25. Space is limited so please call 573-4464 to register. Wilderness Trail Area Holiday Cooking School is Thursday, November 1 0th in London, KY. Tickets are $20 which includes a cookbook (The Pioneer Woman Cooks a Year of Holidays) and are available from the Extension Office.

The project is a Fresh Water Pearl and Swarovski necklace and earring set that would make an excellent Christmas gift. Williams County Extension Agent for Agriculture / Natural Resources Hearty Beef Soup 1/4 pound beef round roast, thawed & chopped 1 tablespoon vegetable oil 3 cups water 2 cups winter squash, chopped (or 2 cups cabbage, finely chopped 1/2 cup onions, chopped 1 celery stalk, finely chopped 1/2 teaspoon dried oregano 1/4 cup macaroni, dry 15 ounce can low-sodium diced tomatoes 1/2 cup green pepper, finely chopped 1/2 teaspoon salt 1/2 teaspoon black pepper 1. In a large pot, brown beef in oil over medium to high heat for 8 to 10 minutes. Drain fat. 2. Add water, squash, onion, celery, garlic, and oregano. Mix well. 3. Bring pot to a boil. Lower heat and cook for 20 minutes. 4. Add macaroni, tomatoes, green pepper, salt, and pepper. Keep cooking over low heat for 20 minutes. Serve hot. Calories 130; Total Fat 4.3g; Saturated fat 1g; Sodium 214mg; Carbohydrate 10g; Sugars 3g; Protein 8g Microwave Baked Apples 4 large apples 1/2 cup brown sugar 1 teaspoon cinnamon Wax paper Wash apples and remove core. Cut a thin slice off bottom of each apple to form a flat surface. Place apples in a microwave safe baking dish. In a small dish, mix brown sugar and cinnamon. Spoon mixture into center of apples. Cover with wax paper and microwave on high power 6 to 10 minutes or until apples are soft. Page 2
