These years have given us a lot of farming, milling, and baking experience. Even though we are experienced at what we do, we are constantly learning about our business and finding ways to improve our quality and service. Over the last couple of decades, we ve acquired a few historic brands and have started a couple of our own. We have kept our legacy brands alive out of respect for the folks who made them what they are we do not wish these names to get lost in the process. All of us at Central Milling take pride in our farming, milling, and baking heritage. After all, if it wasn t for our predecessors who started these brands, we wouldn t know what we know today. We have our sights on the future at all times. Our team is continuously performing upgrades to our milling equipment and improving our processes to stay ahead of the food safety demands. We currently have state of the art quality control equipment in each of our facilities, a model organic handling program, and a new research and development training center. This allow us to say with confidence that our company is a leading producer of organic and commercial flours and grains. 3

We are the Farmer, the Miller, and the Baker working together with nature to preserve our farmland for tomorrow while educating the bakers today. It s a simple idea that just makes sense. The following words will give you an insight to how we consistently provide premium quality flour and grains. We are always on the hunt for grain with exceptional color, flavor, and performance. These three factors contribute to what we call premium baking qualities. Once we find these characteristics, we work directly with the farmer to grow the grain using sustainable methods that minimize impact to our environment. The first step towards premium flour starts at the farm and requires a trusting relationship with the stewards of the land. Our grain is farmed in very specific parts of the country. We select these farms based on their geographic location. The main factors that attract our attention are altitude, weather patterns, and soil quality. If we approve the land, then we start a long term relationship with the farmer and choose the varieties of wheat that will produce the highest quality grain with the greatest yield. After the wheat is harvested, samples are taken into our lab and are tested for their color, flavor, and performance. This helps us to determine how we will blend the wheat varieties and proteins for a better consistency all year long. If the wheat complies with our standards, it is shipped to our mills in Northern Utah and stored in bins according to variety. Central Milling is located next to the Logan River in Northern Utah, surrounded by the majestic Rocky Mountains. The Logan River provides the water that turns our turbine which we use to power our milling operations. This allows us to embrace the standard of Go Green. We inspect and test the flour numerous times during the milling process to ensure that each lot is consistent from beginning to end. We mill our grain slow and cool to minimize damage to the wheat and then age our flour, which allows it to oxidize naturally. After the aging period which is typically 14 days the flour is sent out to the bakeries or to other distribution hubs. Our job is not complete when the flour or grain leaves our facilities. We follow and support our flour everywhere to goes. If issues arise we are there to provide help and resources. We have a full-time technical support staff to assist bakers during their entire bread baking process. 4

With two generations of farming experience, three generations of milling experience, and four generations of baking experience, we should be able to solve any problem you have. Product development Within our Petaluma, California location: Keith Giusto Bakery Supply, we have a full scale bakery training center. We can help you develop new breads to expand your line of products, help train new bakers, or you can use it to work on your skills. We are also pretty good at research and development. Are you looking for a new mix or blend? We can develop custom types of flour, mixes and formulas to help you stand out in the crowd. Custom blending and packaging Once you have developed a formula, we can mill your flour, blend your ingredients, pack it out and ship it to your distribution points. Grain selection Our seed division carries and protects Identity Preserved seeds. If you are looking for a specific variety of grain, let s talk. It s a long process, but worth it for the ultimate custom flour project. Certified facilities Central Milling is a leader in the organic food industry on a number of levels. Heck, organic certification agencies send their staff to train at our facilities. Our mills have the highest levels of certification: SQF, Silliker Labs, AIB, and plenty of others. Safe flour We have the ability to mill your organic flour with guaranteed low microbiological counts. This service is perfect for those looking for dry mixes where the customer mixes the batter or dough at home. On site lab Our lab runs around clock. We test the quality and consistency of every lot of grain coming in and going out. Our lab helps make us the most consistent producer of organic flour out there. We think green We mill our premium organic flour using water power. We generate hydroelectricity for our mill with a water turbine. We bag our flour and wrap our pallets using recycled and biodegradable materials. Our flour is shipped in Smart Way certified low emission trucks. We strive to minimize the carbon footprint of our entire operation. 7

Keith Giusto Bakery Supply mainly services the San Francisco Bay Area; but, we can ship these items all over the country. Freight is expensive; but, some of these ingredients may help add weight to your order making your landed price per pound a bit less. Within Keith Giusto Bakery Supply, we have a full bakery that is available for our customers to use. We have all the basic amenities that an artisan bakery needs to bake exceptional products.
