Grass-fed Beef We are now taking reservations for bulk orders of grass-fed beef for delivery in the fall of 2017. We expect to take cattle to the butcher in batches between late September and early December. If you have a preference on which month you would like to take delivery, please let us know. Preferred Delivery Month: Side of Beef, Custom Cut, $6.50 per pound (hanging weight) The first option for bulk ordering is a whole side of beef, custom cut, for $6.50 per pound hanging weight. (Note: the yield you receive will be 30-40 percent less than the hanging weight, depending on how you fill out your cut sheet, and how much bone and fat is discarded by the butcher.) A 250-lb side of beef would cost $1,625. It would yield about 170 lbs. of usable cuts and require about 9 cubic feet of freezer space. The deposit to reserve a side is $600. Another $600 payment will be due by the end of June, and the balance (calculated from hanging weight) will be due at time of delivery in the fall. Deposit for Side of Beef Qty Amount X $600 = Deposit for sampler package Qty Amount X $150 = *New* Beef Sampler Package, 30-35 lb., $10 per pound The second option is a beef sampler package, containing approximately 16 packages of ground beef, two rib steaks, two NY strip steaks, one package of tenderloin medallions, one sirloin steak, one chuck roast, one round roast, 1 package of stew meat, 2 packages of soup shank, and 2 packages of short ribs. It will require about 2 cubic feet of freezer space. The deposit to reserve a sampler package is $150. The balance will be due at delivery in the fall and will be calculated based on the weight received. Note: All our beef is dry-aged, then cut and flash-frozen. Pasture-raised Chicken We are now taking advance orders for 2017 pasture-raised whole chickens. Quantities are limited, and it is first-ordered-first-served, so please order as early as possible to avoid missing out. We aim for the cleaned & dressed whole chickens to weigh 4 lbs. each, but they generally range from 3 to 5 lbs. Again, this year we are excited to offer the option to have your chicken cut and packaged in pieces for a nominal fee per pound extra. Customers are encouraged to flock together with friends to share in the pick-up duties and to achieve volume discounts. Please note, due to packaging restrictions, birds must be ordered in multiples of 6 per batch for options 2 and 3. If you are ordering in a group, please note the packaging quantities below and indicate group name on your order form. Please see full pricing and ordering details below. Pasture-raised Pork We are now taking reservations for bulk orders of our pastured-raised pork for delivery in late October 2017 or April 2018. Please let us know your preference for which month you would like to take delivery. Delivery dates are filled first come, first served. Preferred Delivery Month: Side of Pork, Custom Cut, $6.50 per pound (hanging weight) Note: the yield you receive will be 30-40 percent less than the hanging weight, depending on how you fill out your cut sheet and how much bone and fat is discarded by the butcher. A typical side of pork costs about $650. It yields about 70 pounds of usable cuts and requires about 3.5 cubic feet of freezer space. To reserve a side please send a deposit of $200. Another $200 payment will be due by the end of June (for Oct deliveries), and the balance (calculated from hanging weight) will be due at the time of delivery. The processing will be done without the use of nitrates and may take up to an additional 4-6 weeks. Organic Vegetable CSA We are now taking reservations for our 2017 organic vegetable CSA. This year, we are offering a 20 week summer session and a 10 week fall session. Subscribers will be entitled to pick up a box with an assortment of seasonal vegetables once a week. Please see our website for a list of some of what we are planting this year. We have two options available: a full share and a half share. The weekly box for a full share will be suitable for four people for one week, and the half share will be suitable for two people. Organic, Soy-Free, Pasture-Raised Egg Subscriptions We are now taking reservations for subscriptions of organic, soy-free, pasture-raised eggs for May through October. A single subscription entitles you to pick up one dozen eggs per week for the 26 weeks of the season. The price is $175.50 ($6.75 per dozen). To reserve your subscription, please send $175.50 for each subscription.
