About Make and Bake for 18th September and make a difference to local children! Sign up your school, college, university, business or place of work then get your mixing bowls out and get baking! From cupcakes to gâteaux, shortbread to snickerdoodles we want you to show off your skills and organise bake sales in your workplaces, community centres and school halls. You get to do something fun for charity, the people get cake (in moderation, of course...) and we get funds to distribute to great local causes, it s a win - win situation! This is your chance to step up for Cash for Kids and make a real difference to local disabled and disadvantaged children. Let us know how you re going to be involved and get fundraising today! Register at tfmradio.co.uk/bake. Your activity can take place any time in September leading up to the Big Bake Day. We might even be able to come and see you! Don t forget that every penny raised locally stays locally, so you can be sure that your support will directly benefit a local child with a minimum of 80p from every pound donated going to the children.

Bake Day Recipes Method Prep: 30 minutes Cook: 30 minutes Ingredients Serves 12 1. Preheat the oven to 180 C / Gas 4. Grease two 23cm round cake tins. 250g self-raising flour 2 teaspoons ground cinnamon 400g caster sugar 350ml vegetable oil 4 eggs 350g grated carrots 120g chopped walnuts 2. In a medium bowl, stir together the flour, cinnamon and sugar. Add the oil and eggs, mix until blended, then stir in the carrots and nuts. Divide the cake mixture evenly between the two prepared tins. Carrot Cake Cream cheese icing 225g cream cheese 110g margarine, softened 450g icing sugar 120g chopped walnuts 1 teaspoon vanilla extract 3. Bake for 25-30 minutes in the preheated oven. A skewer inserted into the cake should come out clean. Cool cakes on wire racks before removing from the tins. 4. To make the icing cream together the butter and cream cheese in a medium bowl, add the sugar and cream well. Stir in the nuts and vanilla. Use to fill and ice the cooled cake layers. Method Prep: 30 minutes Cook: 20 minutes 3. Sift the flour into the mixture. Using a large metal spoon, gently fold in the flour until well combined. Stir in the vanilla and 1. Sift in the icing sugar and whisk until well combined. Add the vanilla. If the mixture is too stiff, add a little milk. Ingredients Makes 9 110g salted butter 110g caster sugar 2 eggs 110g self raising flour 1 teaspoon vanilla extract 1 tablespoon milk Buttercream icing 150g unsalted butter 250g icing sugar 2 teaspoons vanilla extract 4 tablespoons strawberry jam Extra icing sugar, for dusting 6. Cut the top off each cake and then cut the slices in half. Cover each cake with the butter icing. Put a little strawberry jam on top of each cake and push the 2 halfslices into the buttercream at an angle to make a pair of wings. 7. Dust with icing sugar and serve.

Method Prep: 15 minutes Cook: 40 minutes 1. Preheat the oven to 200 C / Gas 6. Chicken & Mushroom Pie Ingredients Serves 4 1 teaspoon olive oil 1 onion, finely chopped 2 large chicken breast fillets, cut into small chunks 50g chestnut mushrooms, sliced 2 tins condensed mushroom soup 1 pinch salt and pepper 1 packet puff pastry Milk 2. Heat the oil in a frying pan and sauté the finely chopped onion for 2 minutes. Add the chicken breasts and gently fry for 2 minutes. Add sliced mushrooms and fry for 3 minutes. Next, add the two tins of soup and bring just to the boil. Season with salt and pepper. 3. Place pie filling into an ovenproof dish. Put your puff pastry over the top, making sure to have a hole in the middle for steam to escape while cooking. Milk wash the top of your pie. 4. Bake in the preheated oven for 40 minutes or until hot and golden brown. Serve with mashed potatoes and your favourite vegetables Send us your photos!
