Formcook Equipment for fat-free cooking

The Formcook cooker s unique design makes it possible to brown, steam or cook a wide range of formed, whole muscle, marinated, boneless or bone-in products with excellence. Perfect for manufacturers of convenient foods, such as on-the-go sandwiches and salads, the versatility of the Formcook cookers makes it possible to cook a wide range of ingredients, such as chicken, pork, beef, fish and vegetables. Even ready meals, such as puff pastry, croque monsieur, or lasagne can be cooked with ease. It can even be used to bake bread. Healthier cooking, with home cooked appearance One of the biggest advantages of Formcook cookers is that food can be prepared without adding fat, thanks to our in-line and non-stick cooking technology. The food is fully cooked and wonderfully browned by means of combined conduction and convection heat transfer. The result is food that appears to be manually cooked on the stove, with no sign of embarrassing industrial belt marks on the final product. The contact cooking also contributes to a superior taste. When a Formcook cooker replaces a deep-frying process, the fatty image is avoided, sending a healthy signal to the consumer.

More profit today adaptability for the future The flexibility of Formcook cookers allows for several ingredients in one cooker, thus increasing the efficiency and operating hours of the machine. Additionally, the builtin cleaning system means the change between different recipes is made in just a few minutes, increasing profit and reducing the overhead cost of the equipment. Another advantage is that the products can be pre-injected, or richly coated and covered by sticky marinades, since cooking takes place on the solid non-stick product belt. The marinades add several percent of extra weight to the raw product, adding value and yield to the cooked product. They also greatly enhance the flavour and texture, adding distinction to various ingredients. One problem when cooking meat is that the product contracts and expands during the cooking process, with extensive evaporation and significant weight loss. This can be avoided with the Formcook Contact Cooker, where the product is cooked between two solid surfaces, which reduces the product s height. A thinner product will be cooked more rapidly and also cools down quicker, significantly reducing weight loss. This method improves the yield and the profit by several percent. As the profitable life cycle of products continues to shorten, manufacturers of convenience food are compelled to introduce new products more frequently in order to increase overall profit.
