Cinnamon Oatmeal Pancake Mix 4 cups quick-cooking oatmeal 2 cups flour 2 cups whole wheat flour 1 cup non-fat dry milk 2 tablespoons cinnamon 1 tsp. salt 3 Tbsp. baking powder ½ tsp. cream of tartar Combine all ingredients and stir to mix well. Mixing Directions: in a medium bowl, beat 2 eggs. Beat in 3 T. oil gradually. Alternately stir in 2 cups pancake mix and 1 cup of water. Drop by spoonful s onto a lightly greased skillet over medium-high heat. When the batter shows broken bubbles, turn the pancakes over. Cook about 2 to 3 minutes more. Tropical Treat Fruit Salad ¼ cup orange juice 1 apple 1 orange 1 banana (add other fruit in season, if desired) Directions: place orange juice in a bowl. Wash apple and dry. Slice into wedges. Remove the seeds and dice. Stir to coat apple surfaces with orange juice to prevent browning. Peel orange and break into sections. Cut sections into small pieces. Maple, Walnut, and Flaxseed Pancakes 1 cup all-purpose flour ¼ cup flaxseed meal* ¼ cup finely chopped walnuts 1 ½ tsp. baking powder ½ tsp. baking soda ½ tsp. salt 1 ¼ cups reduced-fat (2%) buttermilk ¼ cup pure maple syrup 1 large egg 1 Tbsp. (or more) vegetable oil Directions: Whisk flour, flaxseed meal, walnuts, baking powder, baking soda, and salt in medium bowl to blend. Whisk buttermilk, ¼ cup maple syrup, and egg in another medium bowl. Add buttermilk mixture to dry ingredients and whisk just until incorporated. Brush large nonstick skillet lightly with vegetable oil and heat over medium heat. Working in batches, add batter and skillet by scant ¼ cup. Cook until bubbles appear on surface of pancakes and undersides are golden brown, about 2 minutes. Turn pancakes over oil as need before adding each batch. Transfer pancakes to plates. Serve with additional maple syrup. *Sold at natural food stores and some supermarkets. If flaxseed meal isn t available, but flaxseeds and use a spice grinder or coffee mill to grind them into a fine powder. Serving: 2 pancakes. Yield: 12 pancakes. Calories: 112 Kcals. 2. Barbecue Sandwich Filling This filling is so easy to make! It freezes well for a future meal or tucks away in a lunch box to warm up in the office microwave. Sloppy Joes 1 onion, chopped 1 T. canola oil 1 lb. ground beef 1 cup ketchup 15 oz. can of Manwich 2 T. brown sugar. Directions: Sauté onion in oil until slightly cooked. Add ground beef. Cook onion and ground beef until beef is no longer pink and onion is transparent. Add ketchup, Manwich, and brown sugar. Let simmer for about 10 minutes to blend flavors. Serve on buns or a loaf of French bread. 3. Pepper Steak Sandwiches A fast and easy favorite at our house! Chop the veggies the night before to make this recipe even faster! 4. Bean Dip! During the days of Karl Malone and John Stockton, our family never missed a Jazz game on TV! Miraculously, the Jazz seldom lost when we had bean dip for supper! Serve this with a green salad and/or fresh fruit for a meatless meal. Jazz Bean Dip 15 oz. refried beans 1 cup mild salsa ½ lb. grated mild cheese Fresh tomatoes, diced Tortilla Chips Directions: Spray an 8x8 glass pan with non-stick spray. Spread 1 can of refried beans in the bottom of the pan. Cover with plastic wrap. Microwave on high for 2 minutes. Remove the baking dish. Cover the beans with a layer of salsa. Microwave 2 more minutes. Cover the beans and salsa with cheese. Microwave 2 more minutes or until cheese is melted. Serve with tortilla chips, sour cream, and more salsa. You can also add sliced green onions, sliced black olives, or other family favorites. Pepper Steak Onions, chopped Canola or olive oil Fresh mushrooms, sliced Green peppers, sliced Beef steak cut into small cubes Monterey Jack cheese, grated Directions: Fry chopped onion in oil until slightly cooked. Add steak cubes. Fry until steak is almost done and onion is transparent. Add mushrooms and green peppers. Continue frying until steak is completely done. Turn off the heat. Sprinkle cheese over the top of the steak mixture. Let the mixture sit until the cheese is melted. Serve over French bread or buns. 2
5. Homemade Bread Make a batch of bread dough and turn it into pizza, cinnamon rolls, dinner rolls, or hamburger buns. With homemade bread, you can serve almost anything in the cupboard with it. Canned or bottled fruit, tuna, canned soup, hard boiled eggs, or even peanut butter and jelly! remaining corn chips, hamburger and onion mix, chili, enchilada sauce and tomato sauce. Pour into prepared casserole. Bake about 30 minutes, until heated through. Remove from oven. Spread sour cream on top. Sprinkle with grated cheese and reserved corn chips. Bake 5 more minutes until cheese is melted. Bread-Maker Dough 2/3 cup scalded milk 2 eggs 2 T. margarine, cut into chunks 2 T. sugar 1 tsp. salt 3 cups flour 2 tsp. yeast Directions: Layer ingredients in your bread maker in the above order listed. Mix on dough setting. 6. Easy or canned casserole This fast and easy casserole is easy to prepare and yummy too! Just brown ground beef and open some cans. Enchilada Casserole 1 lb. ground beef ½ cup onion, chopped ½ tsp. seasoning salt 1 ½ cups corn chips (Frito-type) 2 (15 oz.) cans chili with beans 1 (10 0z.) can enchilada sauce 2 (8 oz.) cans tomato sauce 1 cup sour cream 1 cup grated cheese Directions: Preheat oven to 350 degrees. Cook ground beef, onion, and seasoning salt until meat and onion are cooked. Drain. Crush ½ cup of the corn chips and reserve the top. In a medium bowl, combine 7. Easy Skillet Meals This recipe cooks up very fast for a last minute meal. Keep the ingredients on hand on your shelf or in the freezer Saturday Stroganoff 1 ½ lb. ground beef ½ cup onion, diced 1 t. seasoning salt 1 can cream of celery soup 1 can cream of mushroom soup 1 cup milk 1 pint sour cream Cooked noodles Directions: In a large saucepan, combine hamburger, onion, and seasoning salt. Cook until onion is tender and beef is cooked. Drain. Combine hamburger, onion, cans of soup, and milk in a large saucepan. Stir until well-blended. Simmer about 10 minutes. Just before serving, add sour cream. Simmer 2 minutes. Serve over cooked noodles 3
8. Slow Cooker Meals Dust off that crock pot and make some meals that you can forget until its suppertime! Tangy pork chops 4 pork chops, ½ inch thick or 2-3 lbs. country-style pork ribs ½ t. Salt 1/8 t. pepper 2 onions, chopped 3 celery ribs, chopped 1 large green pepper, sliced (add last half hour of cooking time) 1 can (14 oz) stewed tomatoes ½ cup catsup 2 T. cider vinegar 2 T. brown sugar 2 T. Worcestershire sauce 1 T. lemon juice 1 beef bouillion cube 2 T. Cornstarch 2 T. Water Directions: place chops in slow cooker and sprinkle with salt and pepper. Add onion and tomatoes. Combine next six ingredients and pour over vegetables. Cover and cook on low for 4-6 hours. Mix cornstarch and water till smooth. Add to cooker and cook on High for 30 minutes or until thickened. Serve over rice. 9. Baked Chicken from the Local Grocery Store We call these rubber chickens at our house, but with a little doctoring up and pulling the meat off the bones, you can make a fast and easy meal. Homemade Chicken Noodle Soup Add canned chicken broth, old-fashioned noodles, carrots, and celery to the deboned chicken. Season to taste. Chicken Casserole Combine deboned chicken with 1 can cream of chicken soup, ½ cup milk, 1 pkg. cooked frozen broccoli, and ½ cup mayonnaise. Spread in the bottom of a casserole dish. Mix a package of chicken dressing mix according to directions. Spread over the top of the chicken mixture. Bake at 350 degrees for 30 minutes or until hot. 10. Kabobs on the grill! Stack pieces of meat (chicken, beef, salmon, lamb, pork), assorted veggies, and fresh pineapple squares on a wooden skewer. Meat can be marinated in your favorite marinade blend overnight, if desired. Grill on your outdoor grill about 15 minutes, turning about 3 times. Serve with rice and/ or green salad and dressing. 11. Oriental Fried Rice Add some veggies and you have an entire meal. I like to make the rice the night before and let it chill overnight. This prevents the rice from clumping. 2 Tbsp. oil 3 eggs, beaten Dash of salt 4 cups cooked rice, cooled 2 Tbsp. oil 1 cup wheat berries 2 Tbsp. soy sauce 1 tsp. seasoning salt 1 cup ham, diced 1 cup green onion, diced 1 small pkg. peas and carrots or other vegetables. 4

Crockpot Brown Sugar Roast 1 medium rump roast 1 cup brown sugar (or as much as you want to add) 2-3 cans Coca-Cola Salt and pepper to taste 1 red onion 5-6 red russet potatoes 6-8 carrots Directions: peel and cut the carrots. Cut potatoes into chunks. Chop onion. (I like to keep my onions in large pieces.) Place the rump roast, and vegetables in the Crockpot. Add salt and pepper to taste. Put the brown sugar on top. Pour in the Coca Cola (the Crockpot should be about half full of liquid). Put the Crockpot on low and cook for 8 hours. Just Tell Me What to Cook! 5
