DEPARTMENT 22: SECTION 3 SPECIAL BAKING AND COOKING CONTESTS ANGEL FOOD CAKE CONTEST Saturday, July 29, 2017 1. Open to any individual who is a Pennsylvania resident. 2. Entrants may NOT have won 1st place in this Angel Food Cake contest at any other fair in 2017. 3. Entry must be am Angel Food Cake made from scratch. 4. Pennsylvania produced & packed eggs are requested to be used if at all possible. Please look for the PEQAP or PA Preferred logo or PA packaging dates on the carton. 5. Refrigeration is NOT available at the Fair or PA Farm Show. Entries that require refrigeration otherwise distributed for consumption after the judging for food safety reasons. 6. The entire Cake entry must be submitted for judging on cardboard. (All pans, plates and dishes are considered to be disposable and will not be returned). 7. Recipe(s) listing ingredients and preparation instructions must be submitted with the entry (printed on one side of 8 ½ x 11 size paper). Entrant s name, address and phone number must be printed on the back of all pages. (All recipes and cakes will become property of the Fair or PA Farm Show and will not be returned). 8. 30 th ANNUAL BLUE RIBBON APPLE PIE CONTEST Saturday, July 29, 2017 1. Open to any individual who is a Pennsylvania resident; only one entry per person. 2. Entrants may NOT have won 1st place in this Blue Ribbon Apple Pie contest at any other fair in 2017. 3. Entry to be a pie that must include 60% apples in the filling. It does not need to be a "traditional" two crusted apple pie and it can have a variety of fillings. 4. The entire pie must be submitted for judging in a disposable pie pan. (All pans, plates and dishes are considered to be disposable and will not be returned). 5. The recipe for the pie and pie crust must be submitted with the entry. It should be submitted on one side of 8 ½ x 11 paper. The recipe must list all ingredients, quantities and the preparation instructions. Entrant s name, address and phone number must be printed on the back side of all pages. (All recipes and pies will become the property of the Fair to the PA Farm Show and will not be returned). 6. Refrigeration is NOT available at the Fair or PA Farm Show. Entries that require refrigeration otherwise distributed for consumption after the judging for food safety reasons. 7. 2017 Homemade CHOCOLATE CAKE BAKING CONTEST Sponsored By: PA State Association of County Fairs 1. Participant must be an individual amateur baker who is a Pennsylvania resident. One entry per person. 2.Entrants may NOT have won 1st place in this Homemade Chocolate Cake Contest at any other fair in 2017. 3. Entry must be a layered cake made from scratch. Pre-made mixes are not acceptable ingredients. 4. Entry must be frosted and frosting must be made from "scratch". 5. Cake recipes must feature chocolate or cocoa as a main ingredient. 6. The entire cake entry must be submitted for judging on cardboard or other food safer disposable setting.(all pans, plates and dishes are considered to be disposable and will not be returned). 7. Recipe(s) must be submitted with the entry, printed on one side of 8 ½ x 11 paper. Recipe must list all ingredients, quantities, and preparation instructions. Entrant s name, address and phone number must be printed on the back side of all the pages. (All recipes and cakes will become property of the Fair or PA Farm Show and will not be returned). 8. Refrigeration is NOT available at the Fair or PA Farm Show. Entries that require refrigeration after baking must indicate so in the recipe. Those entries will not be sold, auctioned or distributed for consumption after the judging for food safety reasons. 9. Judging will be based on the following criteria: Sunday, July 30, 2017 Judging at 1:00 PM Flavor (aroma, taste, good balance of flavorings) Texture (moist and tender crumb; not soggy or dry) Inside Characteristics (even grain, evenly baked; free from air pockets) Outside Characteristics (consistent shape/size/surface; overall appeal) Frosting (taste, texture, even color) Prizes: 1st = $25.00 & trophy 2nd = $20.00 3rd = $15.00 Premiums for the 2018 PA FARM SHOW competition: 1 st - $500; 2 nd - $250; 3 rd - $100

Judging at 1:00 PM 1. Entrant must be an individual (age 8 through and including 18 years) and a Pennsylvania resident. One entry per person. 2. Entrants may NOT have won 1st place in the PA Preferred Junior Baking Contest at any other fair in 2017. 3. Entry must be a plate of 6 individual sixed portions of the baked item. 4. Entries must be made from scratch. Pre-made mixes are not acceptable. 5. PA Preferred ingredients must be used in the recipe. A comprehensive list of acceptable products will be available on the PA Preferred website. Recipes are to include three (3) out of the five (5) items listed here a. Grains such as flour or oats d. Dairy such as milk, cream or butter b. Fruit such as peaches, apples or berries e. Eggs c. Vegetables such as zucchini or carrots 6. Entry must be submitted for judging on food safe disposable setting. (All pans, plates and dishes are considered to be disposable and will not be returned.) 7. Recipe(s) must be submitted with the entry, printed on one side of 8 ½ x 11 paper. Recipe must list all ingredients, quantities, and the preparation instructions. PA Preferred ingredients are to be identified in writing as PA Preferred along with the brand name in the recipe (ex. PA Preferred Eggs - Weis brand; PA Preferred Milk-Gilliker's brand; PA Preferred Berries-Strite's Orchard) Entrant's name, age, address and phone number must be printed on the back side of all pages. PA Preferred product labels should be attached to the recipe. (All recipes and cookies-brownies-bars will become property of the Fair or PA Farm show and will not be returned.) 8. Refrigeration is NOT available at the Fair or PA Farm Show. Entries that require refrigeration distributed for consumption after the judging for food safety reasons. 9. 28 th ANNUAL CHILI CONTEST Saturday, August 5, 2017 Cook-Off Begins at 11:00 AM Judging at 2:00 PM Judges: TBD 1. Only four (4) people per team. 2. Open to all individuals or restaurants in the area. 3. There is limit of fifteen (15) teams. Entries will be refused based on latest postmark. 4. Contestants will be allowed entrance to the contest site at 10:00 AM August 5, 2017 5. Teams must be prepared to cook four quarts of chili. 6. All teams must cook from scratch at the Fairgrounds. 7. Meat may be cut, ground or sliced, but not treated, seasoned or cooked in advance. 8. Recipe copy must be provided for judges. 9. No stove may be lit until 11:00 AM except for pre-testing. Stoves must be turned off at 2:00 PM when samples will be taken. 10. Fair will provide one (1) ten-foot booth space for each team. 11. Teams must provide their own stoves, all ingredients, utensils, chairs, booth decoration sign, etc. Water will be available. 12. Teams must provide bowls and spoons for tasting. 13. Booth competition will also be held. Booths will be judged on appearance, theme and originality. 14. Please fill out Entry Form below and submit to the Fair Office. There is NO entry fee.
