GUEST ALFONSO CADENA Born in Hermosillo, Mexico, and educated in Jalisco between the cosmopolitan city of Guadalajara and the beautiful beaches of Puerto Vallarta. Interested in the arts and graphic representations, Poncho began his professional studies degree in Graphic Design at the Universidad Autonoma de Guadalajara, but the love of cooking was always in him, the kind of love that comes from family so Poncho decided to study a second career becoming a graduate of the Pacific Culinary Arts in Vancouver, Canada. Poncho Cadena, still has a big love for the graphic arts, clearly shown in all his restaurants. Talented and passionate about all that he does, Poncho is also the proud Co-Founder of La Leche restaurant in Monterrey, Mexico, from 2003 to 2008, and La Leche Warehouse Gourmet in Puerto Vallarta, Mexico, from 2008 to date, a job that he does with his father, the famous Chef Nacho Cadena and his talented brothers. Nowadays his personality has put him under the spotlight and cameras of the small screen as TV host at elgourmet channel with several programs focused on the kitchen in different places of Mexico and is also co-owner of Hueso Restaurante in Guadalajara, Mexico since 2014. Hueso means Bone in Spanish, and its decor is wholly dedicated to the concept, with each of the elements embodying the shapes and textures of skeletal forms. As well as exposing the architectural bones of the building (brick work, plaster, and pipes) and painting it white, Cadena covered the walls with 10,000 cast aluminium bones, which are set among anatomical line drawings, painted bowls, and chalky kitchen implements. This is how he places his love for the haute cuisine on perfect equilibrium with art, his music and his life in the kitchen.
GUEST SANDRA CHOLLET It was almost inevitable that Sandra Chollet would end up living in Mexico. I ve always been connected to Mexico through the women in my family, says Sandra, director of Casa Dragones Mexico, the tequila brand launched by Bertha Gonzales Nieves and Bob Pittman, founder of MTV and AOL. Sandra, who was born in Paris, raised by Diplomat Parents and grandparents and graduated with an international business degree, finally made Mexico City her home. Her carrer in luxury goods began at Barneys New York, as VP Merchandise Manager than at Porthault Linens in Paris, Willer Gallery in London, and the summer of 2009, after a project with Bloomingdale s in Dubai was derailed by the recession, she arrived to Mexico to launch Tequila Casa Dragones. Living in the country has proven a revelation. Mexico City is increasingly international and cosmopolitan, with incredibly sophisticated art and culinary scenes. Sandra s work takes her all over the country from Mexico City, where she handles most of Casa Dragones domestic marketing, to the tequila-growing/producing region in northcentral Mexico near Guadalajara, to the company s physical home-base in the colonial town of San Miguel de Allende. Her weekends and holidays are spent exploring the colors and flavors of Mexico s endless colonial towns, beach towns and mining towns. Sandra has become immersed in Mexico s culinary arena, which she proudly explains was the first national cuisine to be recognized by UNESCO s List of the Intangible Cultural Heritage of Humanity. Through strategic partnerships and corporate sponsorships, Sandra has worked with some of the country s best chefs, such as Dulce Patria s Martha Ortiz, Enrique Olvera of Pujol and Laura Esquivel, who wrote the novel Like Water for Chocolate.
GUEST CLEMENT CALLEJA Is a native of Alsace in France where he first developed his passion for wines and gastronomy. He holds a Master s degree in Management from Reims Management School with a major in Wine and Champagne Marketing. These four years spent in the Champagne region helped him develop a strong interest and knowledge for the wines of Champagne and truly understand their history, terroir and specificities. Clement is passionate about the industry and has worked with several Champagne Houses in France and in the US. He joined Billecart-Salmon in 2013. Clement lives in New York City and travels mostly through the East Coast, Midwest and South of the United States.
GUEST MERRY EDWARDS One of California s first woman winemakers, Merry Edwards began her career at Mount Eden Vineyards in the Santa Cruz Mountains in 1974. She went on to become the founding winemaker at Matanzas Creek in 1977 and remained there until 1984. For the next decade, Merry consulted for numerous wineries, large and small, in Oregon and many diverse appellations of California. In 1997, family and friends joined Merry to found Merry Edwards Winery, with a focus on producing Pinot Noirs with a sense of place from Russian River Valley and Sonoma Coast. In 2008, she and her husband, Ken Coopersmith, completed their winery on the site of Coopersmith Vineyard. In this venue, tastings are hosted to educate visitors about Merry s handcrafted wines and site-specific viticulture. In 2013, Merry s 40th year as a winemaker, she was not only inducted into the Culinary Institute of America s Vintners Hall of Fame, she also won the coveted James Beard Award for Best Wine, Beer or Spirits Professional in the United States, just the fourth woman to be so honored.
GUEST RYAN HOOKS Media Personality and Award Winning Mixologist, Ryan Hooks was born and raised in small town Ohio. He has been working in the Hospitality industry since the age of 15 and began bartending the day he turned 21. He immediately fell in love with the idea of making cocktails and helping other have a great time. In 2013 Ryan moved to Los Angeles where he discovered that being a Mixologist was more than just a job to pay rent, that it could be a career and a place to dedicate your passion. Ryan has competed in and won several Mixology competitions including Best Margarita in LA. He has been published and featured in Liquor.com and Tasting Panel Magazine. In addition, Ryan is a member of many elite groups, including USBG, Tahona Society, The Beam Bartenders Lounge and Drink Wire. In 2015 Ryan began working as a media host where he spent a lot of time in front of the camera and working red carpets. That s when he got the idea for Cocktails in Motion, where each week he presents a unique new cocktail themed after a TV show or movie. This way he can share his passion for making drinks by teaching others how to make them. Ryan loves riding his Harley through the Malibu Mountains and spending time with his wife Elena and their 2 year old daughter Elise. He thinks Frank Sinatra said it best when he said, I feel bad for people who don t drink. When they wake up in the morning, that s as good as they re going to feel all day. Cheers!
