Rocky Road Tray Bake An ideal tray bake for parties or to give as sweet gifts. Serves: Makes 30 Preparation Time: 15 minutes Cooking Time: 30 minutes 125g butter 125g digestive biscuit crumbs 110g desiccated coconut 175g chopped walnuts 325g chocolate chips 75g miniature marshmallows 397g tin condensed milk 60g plain chocolate, melted Preheat the oven to 180 C / 350 F / Gas mark 4. Line a baking tray with greaseproof paper and set aside. In a 20x30cm baking dish, melt the butter. Bash the biscuits in a sealed bag with a rolling pin or something similar to make crumbs. Sprinkle the biscuit crumbs over the melted butter. Mix together and press onto bottom of the tray. Layer the coconut, nuts, chocolate chips and marshmallows over the biscuit base. Pour the condensed milk evenly over the top. Bake for 25 to 30 minutes or until golden brown. Remove from oven, melt the chocolate in the microwave in short bursts and drizzle with the traybake with the melted chocolate. Cool completely and cut into squares.
Pavlovas Mini desserts well loved by most and ideal for gatherings. Serves: Makes 12 Preparation Time: 10 minutes Cooking Time: 20 minutes 4 egg whites 190g castor sugar 1 punnet strawberries, halved 2 bananas, peeled and sliced 2 kiwifruit, peeled and sliced 2 mandarin, peeled and segmented 300ml cream, whipped Preheat the oven to 150 C / 300 F / Gas mark 2. Line a baking tray with greaseproof paper and set aside. Whip the egg whites until soft peaks appear and then whip the sugar in gradually until it's dissolved and the mixture is peaked. Place large spoonfuls of the mix on the baking tray and bake for 20 minutes. Turn off the oven and leaving the oven door open, leave the meringues to cool completely. Add a dollop of cream on top of the cooled meringues then add a piece of each fruit on top and serve.
Watermelon Jelly Slices These little watermelon slices are so cute. They're ideal for a party! Serves: 40 wedges 10 limes, pulp removed 135g pack of strawberry jelly 400ml boiling water 2 mini muffin tins Cut the limes in half, then squeeze out the juice. Use a knife to then scrape out the pulp, taking care not to cut the flesh. This is quite fiddly and will take time but the cleaner your limes, the better the finished result. Take 2 mini-muffin tins and set the lime halves empty side up into each muffin hole. Add the boiling water to the jelly and stir for 2 minutes until fully dissolved. Pour mixture into lime halves, filling all the way to the top. Chill the jelly limes in the fridge for at least two hours. When set, turn the jelly-limes onto a cutting board and using a sharp knife, cut each lime in half again to make a wedge. Chef's Tip: If desired, you could add chocolate chips to the unset jell or passion fruit seeds to make it look like watermelon seeds.
Sea Foam Jellies Nothing beats jellies for kids and this fun filled sea foam themed version will not disappoint. Serves: 8 Preparation Time: 15 minutes 360g lime jelly 135g blackcurrent jelly 100ml double cream, whipped Blue food colouring Some colourful sprinkles, optional for decoration Place the green jelly cubes into a heatproof jug. Add the instructed amount of boiling water and stir until the jelly has dissolved. Divide the lime jelly into 8 plastic cups or glasses and chill in the fridge for 2-3 hours or until set. Repeat with the blackcurrant jelly and divide the between the glasses and pour over the set lime jelly and allow to set in the fridge for 2-3 hours. Finally whip the cream and add a little blue food colouring to it then top over the set jellies for the sea foam effect and serve.
