Liquid ingredients: In another bowl put 1 egg, 1/3 cup milk, and 2 Tbsps. vegetable oil. Beat with a fork. Set aside. Mixing the batter: Add the liquid mixture into the dry ingredients. Stir until the dry ingredients are wet. Batter should be lumpy. Do Not stir too much!!!! Batter into muffin pan: Using an ice cream scoop, scoop the batter into the muffin cups.
