Appetizer: Holiday Cheese Balls Servings: 12 8 ounces cream cheese, softened 1/4 cup Catalina or Russian salad dressing 1 teaspoon onion powder 1/3 cup finely ground walnuts apple slices low sodium crackers Recipes 1. Combine cream cheese, salad dressing and onion powder in a medium bowl. 2. Place in refrigerator for 30 minutes to chill. 3. Form cheese mixture into a ball. 4. Place ground walnuts on a plate and roll cheese ball to cover. 5. Wrap in plastic wrap and chill until ready to serve. 6. Serve cheese ball with low sodium crackers and apple slices. Breakfast: Apple Cinammon French Toast Strata Yield: 12 portions 1 one-pound loaf cinnamon raisin bread, cubed 1 eight-ounce package cream cheese, diced in small cubes 1 cup apples, peeled and diced 1 teaspoon ground cinnamon 8 eggs 2-1/2 cups nondairy creamer 6 tablespoons unsalted butter, melted 1/4 cup pancake syrup (or sugar-free syrup) nonstick cooking spray 1. Coat a 9" x 13" baking dish with nonstick cooking spray. Arrange 1/2 of the cubed bread in the bottom of the dish. Sprinkle the cream cheese cubes evenly over the bread and top with the apples. Sprinkle cinnamon over the apples and top with remaining bread. 2. In a large bowl, beat the eggs with the nondairy creamer, butter and pancake syrup. Pour over the bread mixture. Cover with plastic wrap and press down so that all the pieces are soaked. Refrigerate at least 2 hours or overnight 3. Preheat oven to 325 F. 4. Bake 50 minutes and let stand 10 minutes before serving. Cut evenly into squares for 12 servings. 5. Top with pancake syrup, sugar-free syrup, jam or cinnamon/raspberry applesauce, if desired.

Entrée: Tenderloin with Mustard Sauce Portions: 12 1 tablespoon coarsely ground black pepper 2 teaspoons paprika 1/2 cup plain bread crumbs 1/4 cup fresh parsley, chopped 2 tablespoons olive oil 1/2 cup Gulden s spicy brown mustard (divided use) 2 pounds beef or pork tenderloin 1 teaspoon prepared horseradish 1 tablespoon brown sugar 1/2 cup sour cream 1. Preheat oven to 425 F. 2. Combine pepper, paprika, breadcrumbs, parsley and canola oil in a small bowl. Spread mixture on a piece of waxed paper longer than tenderloin. 3. Trim the fat and skin from the tenderloin and tie with kitchen string. 4. Brush the tenderloin with 1/4 cup mustard, then roll in spice mixture to coat. 5. Insert meat thermometer into middle of the tenderloin and place on a roasting rack. Cook 30 to 45 minutes, until thermometer registers 145 F for beef or 160 F for pork. 6. Let meat rest 10 to 15 minutes then slice into 12 portions. 7. To make sauce, heat remaining 1/4 cup mustard, horseradish and brown sugar in a small pan over medium heat. 8. Cook and stir for 3 minutes. 9. Reduce heat to low and stir in sour cream. Remove from heat and serve over tenderloin. Vegetable: Savory Green Beans Portions: 6 1 pound frozen green beans, French style 1 tablespoon oil 1/2 cup onion, chopped 1/2 teaspoon minced garlic 2 teaspoons dried dill weed 1 tablespoon lemon juice 1 teaspoon Worcestershire sauce 1/3 cup breadcrumbs, plain 2 tablespoons unsalted butter, melted 1. Cook green beans in microwave according to package directions. 2. In a medium skillet, heat oil and sauté onion with garlic, until onion is translucent. 3. Add dill weed, lemon juice and Worcestershire sauce and stir to mix. 4. Add green beans and toss. Place in a casserole dish. 5. Melt butter and mix with bread crumbs. Sprinkle over green bean mixture and bake for 5 to 10 minutes at 400 F to brown.

Dessert: Low Phosphorus Fudge * Not recommended for diabetics Portions: 18 2/3 cup liquid nondairy creamer 1-2/3 cups sugar 2 cups mini marshmallows 1-1/2 cups semi-sweet chocolate chips 1 teaspoon vanilla 1. Combine nondairy creamer and sugar in a large heavy saucepan. Bring to a boil; reduce heat to medium. Stir constantly and continue a rolling boil for 5 minutes. 2. Remove pan from heat and add marshmallows, chocolate chips and vanilla. Stir until marshmallows are melted. 3. Quickly pour into a greased 9" square pan. Cool; cut into 3" x 1-1/2" pieces making 18 pieces. Beverage: Spiced Egg Nog Portions: 6 Serving size: 1/2 cup 2 cups liquid nondairy creamer 3/4 cup low cholesterol egg product 1/4 cup sugar 2 teaspoons rum extract 1/2 teaspoon pumpkin pie spice 1/4 teaspoon nutmeg 6 tablespoons whipped cream 1. Combine nondairy creamer, egg product, sugar, rum extract and pumpkin pie spice in a chilled blender and blend for 1 to 2 minutes. 2. Serve with whipped topping and a sprinkle of nutmeg.
