A medley of robust flavour, this sauce is puréed perfection. Enjoy over a bed of pasta and top with grated cheese Spaghetti with roasted vegetable sauce 30 mins Serves 6 Experienced 900g Roma tomatoes, quartered 2 garlic cloves, peeled 1 carrot, halved 150g (1½ cups) button mushrooms Wedge of red onion 2 tbsp olive oil 1 tsp salt ¼ tsp ground black pepper 115g parmesan cheese 500g wholemeal spaghetti 10g (¼ cup) fresh basil leaves, chopped 25g (¼ cup) fresh oregano leaves 1. Preheat oven to 230 C. 2. Place tomatoes, garlic, carrot, mushrooms and onion on a baking tray lined with baking paper. Drizzle with olive oil and sprinkle with salt and pepper. Roast 20 minutes or until tomatoes are very tender, stirring mushrooms and garlic once. 3. Meanwhile, place cheese into the Vitamix container (or regular blender) and secure lid. 4. Select Variable 1 on your Vitamix or the lowest speed on your blender. 5. Turn machine on and slowly increase to Variable 7/medium-high speed. 6. Blend for 20 to 30 seconds or until finely grated. Transfer to a bowl. 7. Cook pasta as directed on package while vegetables are roasting. Drain well, reserving 125ml (½ cup) of cooking water. Keep warm. 8. Place all roasted vegetables and their liquid into the Vitamix container or blender and secure lid. 9. Select Variable 1 on your Vitamix or the lowest speed on your blender. 10. Turn machine on and slowly increase to the highest speed. 11. Blend for 5 minutes 45 seconds. Stop machine and remove lid. 12. Add herbs to the Vitamix container or blender and secure lid. 13. Select Variable 1 on your Vitamix or the lowest speed on your blender. 14. Turn machine on and slowly increase to Variable 5/medium speed. 15. Blend for 5 seconds. 16. If a thinner sauce is desired, add pasta water 1 tablespoon at a time. 17. Serve sauce over pasta and sprinkle with cheese.
This sweet and slightly spicy pumpkin soup makes a satisfying cool-weather meal or a delicious starter Thai pumpkin soup 10 mins Makes 1L Advanced ½ onion, peeled, diced 1 tbsp olive oil 1½ tsp tomato paste 300g (1¼ cup) pumpkin 1 tbsp freshly grated ginger 1 garlic clove, peeled 375ml (1½ cup) chicken stock 125ml (½ cup) coconut cream 125ml (½ cup) coconut milk 1½ tsp finely chopped green chilli 1½ tsp lemon juice ½ tsp salt 1/ 8 tsp ground black pepper 1. Sauté onion in olive oil until soft. Add tomato paste, pumpkin, ginger, garlic, stock, coconut cream and coconut milk. Combine until thoroughly heated through. 2. Place mixture into the Vitamix container (or a regular blender) along with the green chilli and lemon juice and secure lid. 3. Select Variable 1 on your Vitamix or the lowest speed on your blender. 4. Turn machine on and slowly increase speed to Variable 10, then to High (or the highest speed on your blender). 5. Blend for 2½ minutes or until smooth. 6. Season to taste with salt and pepper. Notes If you like, you can serve this garnished with fresh ginger, sliced chilli, coriander leaves and a sprinkling of chilli powder.
These fluffy, wholemeal pancakes are the perfect way to start your morning Buttermilk pancakes 25 mins Makes 12 Easy 500ml (2 cups) low-fat buttermilk 2 large eggs 60ml (¼ cup) olive oil ½ tsp salt 55g (¼ cup) caster sugar 150g (1 cup) plain flour 150g (1 cup) wholemeal flour ½ tsp bicarbonate of soda 2¼ tsp baking powder Butter or cooking oil spray, to grease 1. Place buttermilk, eggs, oil, salt, and sugar into the Vitamix container (or regular blender) and secure lid. 2. Select Variable 1 on your Vitamix or the lowest speed on your blender. 3. Turn machine on and slowly increase to Variable 5 or 6/medium speed. 4. Blend for 5 seconds and remove lid plug. 5. Add flours, bicarbonate of soda, and baking powder through the lid plug opening. 6. Replace lid plug and blend for an additional 20 to 25 seconds, using the tamper until mixture is combined. 7. Heat a frypan over medium heat. Grease with a little butter or spray with oil. Pour 2-3 tbsp of batter into pan. Cook for 2 minutes or until bubbles form on surface. Turn and cook a further 1 to 2 minutes or until cooked through. Set aside and keep warm. Wipe the pan clean with paper towel, then repeat process with remaining mixture. Variation You can use 190g of wheat berries instead of the flour. Grind the berries in the Vitamix Dry Grains Container for 1 minute on High prior to using in recipe.
Cream cheese and thickened cream blend with frozen strawberries to create this decadent dessert. Top with whipped cream and fresh blueberries for a burst of colour Strawberry cheesecake ice cream 11 mins Makes 2 cups Easy 125ml (½ cup) thickened cream 85g cream cheese 1 tbsp lemon juice ¼ tsp vanilla extract 75g ( 1 / 3 cup) caster sugar 225g (1½ cup) frozen strawberries 70g (½ cup) ice cubes Whipped cream, for topping Blueberries, for garnish 1. Place thickened cream, cream cheese, lemon juice, vanilla extract, sugar, strawberries, and ice cubes into the Vitamix container (or regular blender) in the order listed and secure lid. 2. Select Variable 1 on your Vitamix or the lowest speed on your blender. 3. Turn machine on and slowly increase to the highest speed. 4. Use the tamper to press ingredients into the blades. 5. In about 30-60 seconds, the sound of the Vitamix motor will change and four mounds should form. 6. Stop machine. Do not over mix or melting will occur. 7. Fill bottom half of serving glass with strawberry cheesecake ice cream. Layer with whipped cream, then fresh blueberries. Serve immediately.
Our version of this Middle Eastern dip contains chickpeas, garlic and sesame seeds. It s traditionally served with flatbread, but water crackers and tortilla crisps are great, too Hummus 11 mins Makes 3¾ cups Easy 2 x 400g cans chickpeas, drained 35g (¼ cup) sesame seeds 1 tbsp olive oil 60ml (¼ cup) lemon juice 1 garlic clove, peeled 1 tsp ground cumin 1/ 8 tsp salt 1. Place chickpeas, sesame seeds, olive oil, lemon juice, garlic, and cumin into the Vitamix container (or a regular blender) in the order listed and secure lid. 2. Select Variable 1 on your Vitamix or the lowest speed on your blender. 3. Turn machine on and slowly increase speed to Variable 10, then to High (or the highest speed on your blender). 4. Blend 1 minute, using the tamper to push the ingredients into the blades. 5. Season to taste with salt.
Prepare your own honey butter for dinner rolls or toast Honey butter 10 mins Makes 2½ cups Easy 350g unsalted butter, softened 250ml (1 cup) light olive oil 125ml (½ cup) honey 1.
