Mackenzie Creamery Mackenzie Creamery is here today because founder and President Jean Mackenzie decided to follow her passion. While heading up a real estate division of an Ohio-based land conservancy, she learned both how to make cheese and that it was her true calling. After leaving the land conservancy, she remained in Ohio and started Mackenzie Creamery. One aspect from her previous career that she never forgot or lost sight of was protecting and respecting the land. Jean brings her love for the land into the operations, ensuring green, eco-friendly cheese production at MacKenzie in multiple ways. In 2010, her son Rob came on board to support the business. While Jean focuses on making amazing cheese on a daily basis, Rob maintains day-today operations and sources ingredients, ensuring that everything remains in line with the ecologically friendly outlook. Mackenzie was awarded the Clean Ohio Agricultural Easement (AEPP) Purchase Program. The 30-acre farm in Hiram, Ohio where they do all their production is permanently presered in perpetuity with an agricultural easement. The lower level of their farm is now the production facility for all Mackenzie cheeses, and the building itself had to be just as sustainable as the land. The farm is insulated with recycled newspapers and blue jeans, and it is temperaturecontrolled by a geothermal unit. Other farmers can rent land on the 30 acres to grow hay. When it comes to the cheesemaking, all of their milk is inspired by the land. purchased from local goat dairies, which herds consist of La Mancha, Nubian, Saanen and Apine goats. This combination of goat milks provides a flavorful, proteinrich mixture that gets gently transported in a 300 gallon stainless steel tank. The drivers do their best not to churn or shake the milk unnecessarily. All of the Mackenzie Creamery cheeses are made with pasteurized milk, which is then left with culture and rennet overnight. Left for just one night, the curds are then drained and the whey is sent to a pig farmer, who uses it to feed his pigs. They avoid as much waste as possible and try to give as much back to the land as they can. Finally, they are lightly salted and transformed into the variety of Mackenzie Creamery cheeses that are now available, namely Chevre Logs and Cups. You can see it in the process used to make the cheeses, but also in the auxiliary parts of production. Mackenzie gives back to the community, providing farmers with much-needed food for their animals. Renting out their farm land to others and ensuring its conservation, Mackenzie Creamery puts thought and care into their products. When you buy their Chevre, you are doing more than getting an amazing product, but supporting a family business with a purpose and a passion. Mackenzie Creamery Hiram, Ohio Above: Goat Cheese Guacamole. For some of the creamiest, most satisfying guacamole you could make, add Mackenzie Goat Chevre! Instead of adding jalapenos for a kick, this Wasabi Chevre will be just the thing to add some spicy tang. For even spicier guacamole you can add more wasabi to taste. Left: Goat Cheese Deviled Eggs. The same principle from above applies to these deviled eggs. Add Wasabi Goat Chevre to the egg yolks and mayonnaise for an interesting alternative. Use white pepper and a little bit of lemon juice to enhance the goaty flavor. The 300 pound tank, which carries all of their goat milk before production. After seperating curds, the whey is sent to feed chickens and goats. It's all about sustainability for Mackenzie Creamery. OCTOBER 2016 3
