Igrediets: 2 Tbsp olive oil, 1 red oio, fiely sliced, 3 garlic cloves, chopped, 2 tsp soft brow sugar, 3 tsp balsamic viegar, slices of Emmetal, 6 figs, halved, 2 Tbsp clear hoey, a whole baguette, toasted both sides Method: Preheat the ove to 200 C. Heat the olive oil i a pa, add the red oio ad fry over a getle heat for five miutes util softeed. Add the garlic ad sugar ad cook for 1-2 miutes. Add the balsamic viegar ad cook for a further three miutes - the aim is a slow caramelisatio of the oio, brigig out the atural sweetess, almost like a chutey. Place the halved figs oto a bakig tray ad drizzle with a little hoey. Ove roast for five miutes. To serve, add a small slice of Emmetal cheese to the toasted bread, spread a dollop of the caramelised oios ad garlic mix o top of the cheese ad fially top with the hoey-roasted figs. You ca serve this hot or cold. LOOK FOR The luxury of a luscious ripe fig is somethig quite extraordiary. The soft ad yieldig fruit is full of seeds, but the seeds are so small they just add to the uique cruchy texture that makes fresh figs so sought after. Most varieties are itesely sweet, so they get used i desserts. That works, of course, but you ca use that hoey-like sweetess to cut sharper savoury flavours. Black Missio ad Brow Turkey figs are most popular, but all figs are quite fragile. Slightly wrikled, plump, ad eve split figs (as log as they are ot weepig or leakig), are what you wat. Igrediets: 1 1 / 2 tsp coarse salt, 1 tsp freshly groud black pepper, 4 sprigs fresh thyme, 1 large or 2 small bay leaves, crumbled, 6 duck legs i.e. 1 leg per servig, rised ad patted dry with paper towels, 2 cups draied caed sour cherries or chuks of caed peaches or apricots. Method: Combie salt, pepper, thyme sprigs ad bay leaf ad rub ito legs, the place i bakig dish i a sigle layer. Cover with clig wrap ad mariade i fridge for 2 hours or up to 24 hours. Pre-heat ove to 165ºC. Remove legs from dish ad rise off mariade. Pat completely dry. Place i a large pa o a medium high heat ad add legs i a sigle layer, ski side dow, turig them over to fiish. Cook util fat begis to reder ad collect i pa, ad ski has browed, about 10 mis. Cover pa with foil ad place i ove. Cook for 2 hours. Remove foil ad retur to ove for 30 mis. Check tederess after first hour. Remove pa from ove, ad remove legs to a large plate. Drai fat out of roastig pa ito a bowl, leavig about 1 Tbsp of fat i pa. Retur legs to roastig pa, ski side up. Retur to ove for a last 30 mis of roastig to crisp ski. If you re addig fruit, 15 mis before duck fiishes cookig, drai fruit ad estle betwee legs. Serve immediately with sliced potatoes that have bee sautéed i some of the duck fat draied from roastig pa. LOOK FOR... There are three types of duck that you re likely to fid at your market. The white peki - teder, mild-flavoured. Muscovy - slightly larger ad more strogly flavoured.
