For more info on Sunset Ramblers and earlier newsletters, go to www.goodsamsflorida.org. The May campout was held at Lake Oklawaha RV Resort in Fort McCoy, Fl. May 12-14 with early bird on the 11th. Jean Bogardus, Ken and Kath Cody, Bruce and Janet Duval, Bob and Sarah Edmondson, Rich and Pam Frederick, Rich Gavin, Tom and Kathy Kothheimer, and George and Lorretta Redderoth camped. Rich Gavin arrived on Monday. Jean, Ken and Kath, Bob and Sarah, Rich and Pam, and George and Lorretta joined him on Thursday. Bruce and Janet and Tom and Kathy arrived on Friday. Thursday afternoon everyone gravitated to Rich F. s trailer to chat. Pam worked-poor girl is over worked! Jean provided a great South of the Border drink for everyone to enjoy. Thanks, Jean! There was a lot of rousing conversation on a hot afternoon. Sarah made quesadillas out on the picnic table with all the trimmings for an impromptu dinner. Jean contributed a great dip, chips, and strawberries. Pam and Rich provided a five bean salad. Yum! Yum! George cooked a special dinner for Lorretta. Lucky girl! The game of the night was sevens and George was the winner. Bruce and Janet and Tom and Kathy arrived on Friday and joined the gathering at Rich F. s place. Pam took part of Friday off to enjoy the conversations under the shade trees. A storm blew in just before dinner and changed the day s perfect weather and dinner plans. It wasn t possible to have the cookout so people ate in their rigs. The weather cleared up in time for people to meet at 7 for cards. Kathy was new to progressive rummy but caught on quickly and won. Unfortunately, not everyone faired the storm well. Rich G. had an issue with his awning and was thankful for all the help from other campers. The awning will probably have to be replaced. Also his air conditioner was hit on Monday and may have to be replaced. Poor guy! Saturday brought more chit chat at Rich F. s rig under the awning and shade tree. Bob helped fix Rich and Pam s bathroom leak by installing a new faucet. Bob then helped Bruce with his slide issue. Thanks, Bob! Early in the afternoon, Tom and Jean went off exploring the bunker, then went down a trail, and ended up at the dock on Lake Oklawaha. Later in the afternoon, Jean, Sarah, Kathy, and Lorretta went to the club house and played rummikub. Lorretta was the winner. The weather was perfect for eating outside, so people brought

Page 2 chairs, utensils, meat, and a side dish. Rich G. fired up his charcoal grill/ smoker at 5 pm and by 5:30-5:45, the grilling began. George, Sarah, Bruce, and Rich F. were the chefs. What a great aroma! The conversation was interesting and the food delicious! Everyone then cleared away the food, moved their chairs back to their rigs, and went to the club house for another night of cards. There were twelve people playing, there were two tables of six each and two groups playing sevens. The first group played one round as they had many new people learning and Bruce won. The second group played two rounds with Lorretta wining the first round and Kath winning the second. Sadly the weekend came to an end too quickly on Sunday morning. Fond farewells were bid and safe travels were wished to all. Hear ye! Hear ye! Cecelia Marie Dean Williams was born May 14 at 9:09 am. She weighed 7 pounds 12 ounces and was 22 1/2 inches long. Chocolate Surprise Cupcakes By Kathy Kotheimer Ingredients: 13 c. all purpose flour 2 c. white sugar 1/2 c unsweetened cocoa powder 1 tsp. salt 2 tsp. baking powder 2/3 c. vegetable oil 2 c. water 2 tbs. vinegar 2 tsp. vanilla extract Filling: 1 (8oz.) pkg. cream cheese, softened 1 egg 1/4 tsp. salt 1/2 c. white sugar 1 c. semisweet chocolate chips Directions: Preheat oven to 350 degrees. Line 24 muffin cups with paper liners. In a large bowl, mix together flour, 2 c. sugar, cocoa, 1 tsp. salt and baking soda. Stir in oil, water, vinegar, and vanilla until blended. Pour mixture into muffin cups, filling each 2/3 full. To make the filling: In a medium bowl, beat together the cream cheese, egg, 1/2 c. sugar, and 1/4 tsp. salt until light and fluffy. Stir in chocolate chips. Drop a heaping tsp. full of the mixture into each cupcake. Cups will be 3/4 full. Bake until a pick inserted in chocolate part of the cupcakes comes out clean. Bake 22-25 min. Let cool. See next page for note on how to freeze these cupcakes.

Editor s note: I d like to thank Pam Frederick for taking notes, taking pictures, and giving me most of the words for this newsletter. She allowed me to enjoy one of the most precious moments of my life. I was standing in the hall as Cecelia let out her first cry. (That s a story for the Fun Rally.) I walked in the room as she was placed on Amy s tummy. God works wonders and uses the medical staff to do it. (In this case, Tampa General.) What s Cooking? Note: To freeze cupcakes without squishing their middles, return them to the pan you baked them in, wrap the pan in plastic and foil, and tuck the pan in the freezer for up to three months. You can frost them when you thaw them out. Rice Pudding By Sarah Edmondson Ingredients: 1 bag of boil in the bag rice, cooked and cooled 3 small boxes instant vanilla pudding 1 8 oz pkg. cream cheese, softened 4 c. cold milk 1 can sweetened condensed milk 1 8 oz. Cool Whip 3 c. vanilla wafers, crushed red cherries for topping, cut in half Directions: Boil rice in bag at least 20 minutes. Drain and cool before starting the rest of the recipe. Beat softened cream cheese until whipped. Next add 3 boxes vanilla pudding and 4 c. cold milk. Beat until smooth. Add 1 can condensed milk. Then stir in carton of Cool Whip and mix well. Add cooled rice and stir well. Starting with pudding mixture, layer pudding with crushed cookies. Have about 2 layers and top with pudding. Sprinkle the top with rest of cookies, and top with red cherries. Refrigerate at least 4 hours before serving.
