Bourbon Barrel Notes One of the most common questions I get asked is What other bourbons does yours taste like, and how long are you planning to age it? And my most common answer to that is, Give me 5-10 years and then I will let you know! Making whiskey is an incredibly interesting and complex journey, and we are still at the very start of that trip. As you can read below, each barrel we have bottled to date has been different from the others. Sure, there is a consistent pattern emerging as the whiskey going into the barrel is becoming more consistent. But with that we are also beginning to experiment with barrels of varying levels of char and length of time in the barrel. We learn something each time we bottle and apply it to the next barrel we fill. One thing I can tell you is that our goal is to create a very complex and flavorful whiskey, and I think we are on track. You can make the most money in whiskey by filling the barrels at the highest allowable proof (125) and bottling at the lowest possible proof (80). Basically that lets you water it down the most to fill as many bottles as possible. We are doing just the opposite. As we have progressed in this journey, you will see our proof of the whiskey going into the barrel hovering between 110-112 proof. And our target bottle proof is between 85-90 proof. We need only a little bit of dilution to adjust to bottle strength, and as a result, a ton of great flavor is captured. If you like the taste a little softer, simply enjoy it over a little ice or with a splash of water. But if you love discovering the complexity of the flavor, nip on a nice and neat pour and taste away! So enjoy reading the notes below, and we will keep this updated with each barrel we release! Barrel CHAR 3 By far the oldest bourbon we have released. We purposely let this barrel sit for an extra-long period of time and are pleased with its progression. One concern we have had with small barrels is over-oaking the whiskey and for sure that has not happened. We will see what happens with others as they come about! Produced 12 375ML and 53 750ML bottles. Barrel CHAR 3 We ran an experimental ferment using our regular grain ratios however instead of our normal GW yeast we used the MW malt whiskey style yeast. Half went into the new barrel as bourbon and the other half is still in a used bourbon barrel. If tasting side by side there are minor differences in the flavor profile. However in general the bourbon has a very similar taste to what we normally produce. Barrel CHAR 3 Barrel #62 has a cool story. Some good friends of ours wanted a number of little bottles for their son s wedding, so a few weeks prior to dumping this barrel we all sat around here at the distillery sampling whiskey. We had five barrels ranging from the youngest at 15-months to the oldest at 25-months. In a blind taste test it was this, the youngest, barrel selected. The original whiskey was one of our super clean cuts, taking the sweetest whiskey from two successive runs for this barrel. While young, it s excellent! Barrel #35 - Bottled on August 24 th, 2017 Barrel Filled on July 11 th, 2015 and stored in both store rooms. 15.2 Gallons in the barrel at 112.3 Proof. Emptied on August 23 rd, 2017 after 774 days (25 months) in the barrel. 11.9 Gallons at 114.1 Proof. Bottled at 89 Proof. Produced 30 375ML and 62 750ML bottles. Barrel #35 takes the new reign as our oldest bourbon ever to be released. Although we didn t label it as such, it does classify as our first ever straight bourbon and we are excited with how nice it tastes. There is certainly some excellent character in this warm, approachable whiskey, leaving a sugary fragrance in the empty glass. Cheers! This barrel was yet another experiment in that we put the whiskey in the barrel at a much higher proof than we normally do. Frankly there was little if any difference in

the taste of this one versus the others. Thought maybe there would be, so happy to see that it was consistent! Barrel #78 - Bottled on August 10 th, 2017 Barrel Filled on November 22 nd, 2016 and stored in the back store room. 5.3 Gallons in the barrel at 109.64 Proof. Emptied on August 9 th, 2017 after 262 days (8 months) in a FIVE-GALLON barrel. 4.4 Gallons at 109.6 Proof. Bottled at 89 Proof. Produced 12 375ML and 21 750ML bottles. This was the third of our 5-gallon barrel experiments which we are loving! There is a lot of discussion, pro and con, about using these very small barrels, but so far we are three for three with great results! We are planning to order more of these soon for further experimentation! Barrel #47 was a 2 Char meaning that the level of char on the inside of the barrel was a little less than our standard 3 Char. For comparison, we did a 4 Char which we released on May 12 th (Barrel #49). Both produced very good whiskies with slight differences in the overall flavor. Barrel #73 - Bottled on July 1 st, 2017 Barrel Filled on August 27 th, 2016 and stored in the main storeroom. 4.6 Gallons in the barrel at 110.4 Proof. Emptied on June 30 th, 2017 after 307 days in the FIVE GALLON barrel. 3.6 Gallons at 112.0 Proof. BOTTLED AT BARREL STRENGTH. Produced 36 375ML bottles. Very similarly to Barrel #72 (see three batches below), this little barrel produced an awesome and rich flavor in a short amount of time. This one seems a touch lighter in color than Barrel #72, but still has a wonderful bourbon flavor which we didn t want to dilute either. Barrel #38 - Bottled on June 28 th, 2017 Barrel Filled on August 26 th, 2015 and stored in both the front and back room. 15.0 Gallons in the barrel at 112.1 Proof. Emptied on June 27 th, 2017 after 672 days in the barrel. 12.5 Gallons at 114.34 Proof. Blended to 89 Proof for bottling. Produced 65 750ML bottles and 30 375ML bottles. Our longest aged release to date, this whiskey has a rich mouthfeel and offers a complexity that the time provided. Our signature high-corn sweetness remains in the whiskey but a greater depth of flavor is certainly present! Barrel #50 - Bottled on June 16 th, 2017 Barrel Filled on January 13 th, 2016 and stored in the back room. 13.34 Gallons in the barrel at 110.7 Proof. Emptied on June 15 th, 2017 after 519 days in the barrel. 11.3 Gallons at 112.06 Proof. Blended to 89 Proof for bottling. Produced 59 750ML bottles and 24 375ML bottles. Barrel #72 - Bottled on June 12 th, 2017

Barrel Filled on August 27 th, 2016 and stored in the main storeroom. 4.6 Gallons in the barrel at 110.4 Proof. Emptied on May 31 st, 2017 after 278 days in the FIVE GALLON barrel. 3.7 Gallons at 111.6 Proof. BOTTLED AT BARREL STRENGTH. Produced 37 375ML bottles. In the spirit of experimentation, we filled a few small, five-gallon barrels last summer to see what happens. In theory, the smaller the barrel, the faster the maturing process occurs. There is no doubt that after 9-months in this little barrel there is a huge difference. This whiskey is very dark and bears an incredibly deep taste from the barrel. As a result, we chose to bottle this at barrel strength. What a cool taste!!! Barrel #48 - Bottled on June 1 st, 2017 Barrel Filled on December 24 th, 2015 and stored in both the front and the back room. 14.21 Gallons in the barrel at 109.8 Proof. There was a little variance in this barrel as it was a Char 4 barrel meaning that the barrel was charred to a slightly higher degree than our normal Char 3 barrels. When compared side by side with a Char 2 and a Char 3 there was definitely a greater depth of the bourbon character in this one. Like barrel #42 below, which will be similar to many of the upcoming barrels, this whiskey was just as clean yet created a little more depth to the flavor with a little more time in the barrel. One of those pleasant surprises what a great and super clean tasting whiskey! When we distilled this batch, we pulled it off the still at 157.6 PROOF. As a result, this is what we consider a very tight hearts cut resulting in the purest whiskey from the entire run. With only a year of aging, the flavor and feel of the whiskey was fantastic. This particular cut of whiskey is how most of our barrels from this point forward were distilled. Looking forward to seeing how this progresses! Produced 65 750ML bottles and 36 375ML bottles. As you can tell with the mash recipe above, this one differed quite a bit from our standard high-corn mash. As an experiment, we created this batch as a Wheated Bourbon and it turned out great. Slightly different in the flavor as a result, but like our bourbon and our Old 51 Wheat Whiskey, a very sweet and pleasant taste! Compared to other barrels, there was very little loss to the angels share. Any loss is more than we like, but all in all this one wasn t too bad. Using our typical mash bill and aging process, after a 15-month aging it reduced the corn whiskey taste and brought forward a pleasant oak flavor. Just like barrel #33, produced a very clean whiskey with a lovely taste at a young age. Blended to 85.2 Proof for bottling. Produced 71 750ML bottles and 36 375ML bottles. This was an experimental batch of bourbon using a very small cut of two successive batches of whiskey. The cuts were the sweetest part of the distillation, as we were interested to see how this would mature in the barrel. As anticipated, the flavor of this barrel is quite sweet and a little lighter than others. A cut like we did for this will rarely have the depth of other whiskies, however it also yields a very clean taste! Due to equipment issues, the whiskey was distilled an additional time because there was a water leak in the cooling condenser during the regular spirit run. We ended up combining batches 30-32 into this one to be sure it was a quality whiskey going in to the barrel. As a result we notice a bit of a lighter tone to the flavor in this barrel. An interesting note about this barrel is that I left it in our main production room, which, while production is running, gets quite warm. The room cools overnight, so this heating and cooling cycle increases the interaction of the alcohol and wood. This batch had a noticeably darker color and a very rich flavor something we hoped might happen by doing so. Hope you get a bottle while it lasts! I tend to get a little more of the sweet vanilla notes from the oak, and the complexity remains as well. We are pleased that our experiment of aging at a lower proof if coming along nice. We do not have to water down the whiskey as much to reach bottle strength, leaving a lot of flavor with each pour! Barrel #15 was another barrel with a small leak. Unlike other barrels however, this one leaked through the head of the barrel, most likely through a pore in the wood. Most of the time it happens between the staves in the wood, so this was unique for us. Part of the fun of working with natural things! Like Barrels #9 & #10, this was also a feints run that made the product and I am really excited about the flavor of the whiskey. What is great is that we learn something from each barrel we release which we can put to our future production. The experiment continues!!! Made with feints, which are the products from each distillation that we do not keep as the finished product. Feints are added to each batch we run, contributing more flavor and alcohol, but over time we accumulate enough to warrant a stand-alone batch. Barrel #10 was such a batch, which tends to produce a more flavorful whiskey than a standard batch, and although it was not aged as long as our earlier releases, still offers a very sweet flavor. As you will notice with this recipe, this barrel was one of our non-barley experimental batches. I notice a fruitier aroma right away, reminding me of we tested our 100% Wheat Whiskey at nine-months in the barrel. Like Barrel #1, this went into the barrel at a higher proof than Barrels #2 & #3, and as a result requires a little more diluting to reach bottling proof. Oddly enough, I come away with the reminder of a good Canadian Whiskey. Bright, crisp, and clean. Probably because my Brother-in-Law, who is from Welland, Ontario, helped me fill it a year ago! I do not think I am sensitive enough to recognize the 0.2 proof lower, so believe this to be a combination of the lower proof in the barrel as well as it being stored in a different location. Both Barrel #2 & Barrel #3 were originally produced from the same batches with the same recipe, so the difference is in the barrel proof and the aging location. Like Barrel #2, this is a wonderful, sweet bourbon! Having been a bit higher proof in the barrel than the others, I get more of the candy-like taste as it is slightly more diluted to get to the finished bottling proof.
