Weekly Recipe: Buttermilk Cornbread Melt 1 stick unsalted butter. Have some more set aside for greasing your pan. Preheat oven to 350. In a medium bowl, whisk together 1 1/2 cups coarse cornmeal, 1 cup all-purpose flour, 1 1/2 Tbs. kosher salt, and 1 tsp. baking soda. In a separate bowl whisk 3 large eggs. dd 1/2 cups buttermilk. tir egg mixture into cornmeal mixture, then stir in melted butter. Whisk until combined. Butter a 9-by-13-inch baking pan. Pour batter into prepared pan. You will probably have to smooth it out a little and it will make a pretty thin layer. Bake until a toothpick inserted in the center tests clean, about 25 minutes. Let cool on a wire rack before slicing.
