Trilogy at Power Ranch Community Association Kitchen Usage Policy Purpose: The Kitchen in Judy s Café as with all other facilities at Trilogy at Power Ranch Community Association (herein the CA ) is an amenity owned by the members. Use of the Kitchen by member Clubs, Groups and outside Caterers requires strict regulation to adhere to the licensing, safety, and sanitary requirements of the Maricopa County Health Department as well as operating in a safe harbor to avoid liability. The CA has hired an operations staff for the kitchen through the Executive Director to execute the Café Mission Statement. A. Judy s Café Mission Statement Judy s Café at Trilogy at Power Ranch is an amenity providing food for sale and a pleasant atmosphere during gatherings, activities, and events for the enjoyment of Trilogy members, clubs and groups. The kitchen is available to support individuals, Club and Group events. B. Usage Policy Use of the kitchen by the CA, Clubs, Groups, and Caterers requires certain qualifications. These qualifications are designed to protect the CA, its assets, and users from potential health hazard and unsanitary conditions as regulated by the Maricopa County Health Department. Caution; any food coming out of the kitchen is subject to the rules of Maricopa County Health Dept., regardless of where it was prepared or cooked. C. User Requirements for Clubs and Groups 1. All Kitchen workers must have been trained in kitchen operations by the Kitchen Staff. 2. All Kitchen workers must possess and produce a valid Food Handlers Certificate from the Maricopa County Health Department. 3. Complete the Kitchen Usage request forms, the Kitchen usage checklist (attached) and obtain approval from the CA. D. Usage Requirements by Outside Caterers Outside caterers are licensed contracted food businesses that usually deliver, handle and serve foods to the customer. Caterers delivering already prepared food and NOT REQUIRING any use of the kitchen (the kitchen will be locked) will not generate the Kitchen Usage Fee. The list of approved caterers is in the attached Appendix. This list is a record of all caterers used over the past year by the clubs and residents. Usage by outside caterers includes items C above and additionally: 1. Are listed on the approved caterers list. To become a member of this approved list the caterer must apply to the CA staff and meet all requirements listed here-in on an annual basis. 2. Be hired in accordance with the Policies, Procedures, and Rules of the Association. Adopted: 2/7/2018 Page 2
3. Have received familiarity instructions by the Kitchen Staff prior to start of work. 4. The hiring member, Club, or Group must complete the Kitchen Usage request forms and obtain approval from the CA. 5. The Club, or Group must contractually agree to a pre-defined fee for oversight of the Kitchen operations including start-up, use and clean-up. E. Kitchen Usage Fee Structure 1. There is NO FEE for kitchen usage by Clubs or Groups. 2. The CA staff will manage, oversee, start-up / close down equipment and assist during usage of the kitchen. 3. Outside Caterer Fee is for a qualified overseer to insure safe handling, proper usage and clean-up of the equipment and the kitchen. Kitchen trash removal is included. This fee shall be $150.00. (1) Judy s Café is available as a caterer and the $150 usage fee is waived. F. Things That Get Used in the Kitchen: 1. 3 compartment sinks 2. Prep sink 3. Three prep tables 4. Gas stove 5. Warmer 6. Microwave 7. Ice machine 8. Chemicals (dish soap, sanitizer, dish machine chemicals) 9. Dish washer 10. Speed rack (Bakers Rack) 11. Full and Half sheet pans 12. Cutting boards 13. Hand washing sinks (paper towels, and hand soap) 14. Grill If these items are used, they must be cleaned. All cleaning chemicals will be provided, however Clubs will need to provide their own rags. G. Time of Usage Monday through Friday 3pm to 9:30pm (If needed earlier please contact Café Manager). Saturday and Sunday 6am to 9:30pm. Everything pending schedule approval by Activities Director. Kitchen cleaning list will be a provided. Clubs will be responsible for their own trash. All Kitchen workers must have been trained in the kitchen operation by the Kitchen Staff. Trilogy at Power Ranch Club Kitchen User Agreement This agreement is to detail the use of the Kitchen by Clubs, for events during a year. Club Name: Date of event:. Any charges incurred through the use of the Kitchen, including but not limited to failure to clean the Kitchen or use of unauthorized equipment, must be paid by the Club. The duties and cleanup required for Kitchen use and the charges for improper use by the Club are listed below. Equipment Use The equipment listed below may not be used by the Club at any time, unless agreed to by Community Manager: The Freezers and Refrigerators inside the Kitchen (May not be used due to Health Department restrictions must be used by Trilogy authorized representative with a Food Service card) Fryer The equipment listed below may be used by the Club but must be left in a condition equal to its state prior to use by the Club (This means cleanup will include wiping of the stove tops; cleaning of spills in the microwaves and on the stove tops; and setting oven to self-clean after event is over.): Charges for Cleaning Improper cleanup will result in the following charges being incurred by the Club General cleanup not performed will result in the following charges being incurred by the Club: Kitchen garbage bags not tied down and taken out to Trilogy dumpster, located in the northern section of the Trilogy Parking Lot, by Club - $10 per bag left Floors in the Kitchen not swept by Club - $50.00 each Counter Tops in the Kitchen not wiped clean by Club - $10.00 each Sinks not cleaned by Club - $10.00 each Any unauthorized use of Kitchen equipment by Club will result in additional charges of $100.00 per.
