ADC: All religious meals will be verified by our facility Chaplin s. Juvenile: Verification from family and/or designated Rabbi. ASD: Submit request through ADC Clergy. How many Halal meals are served each meal? ADC: Halal has a verity of menus in which to accommodate; this facility considers Vegetarian Cuisine only as our preferred choice for Halal request which is 6 today. Juvenile: 0 ASD: 0 What is the criteria to place an inmate on this meal? ADC: All religious meals will be verified by our facility Chaplin s. Juvenile: Verification from family and/or designated Imam. ASD: Submit request through ADC Clergy How many medical diets are served each meal? ADC: Currently, the ADC as 13 Diabetic meals, with 30 Medical Restricted Diets. (Dietetic/Med Pass Snacks will be Peanut Butter Packets and crackers) (Pregnant inmates will receive an approved box lunch for a snack) Juvenile: On average, approximately 5% ASD: Typically, 5 or fewer depending on inmate medical needs. How much product is used monthly in the employee break room? ADC: This will vary depending on shift staffing; currently, the ADC per shift meals are Day Shift 40, Swing Shift 40, Grave Shift 30; Total 110 per day. Juvenile: Juvenile does not require food service stock the employee break room. Do you require a performance bond? The County reserves the right to require a performance bond but, at this time, we are not requiring a performance bond. How many Court sacks per day? M-F, or weekends as well? ADC: We do court box lunches on Mondays only; this varies also. Currently, the ADC is doing 30 meals. 2
Juvenile: N/A How many Work Crew sacks per day? M-F, or weekends as well? ADC: This number varies, currently, the ADC is doing 25. Juvenile: N/A Do the inmates going to court have a cup and ability to mix their own beverage, or does it need to be premixed and single service? ADC: Water Jugs / igloos / Cambros with Stypo cups provided, also they use the water coolers upon request. Juvenile: N/A Will the work crews require cups, and are there water jugs / igloos / Cambros available for water transport to the work sites? ADC: Each crew take water jugs / igloos / Cambros with Stypo cups. Juvenile: N/A Please clarify. Are the service times posted in the RFP when the kitchen should have all trays ready to serve, or the time that the line is to begin? ADC: That time will vary depending on facility operational needs; the kitchen manager with confer with each facility administrators to ensure continuity. Juvenile: Time the line is to begin ASD: Both tray service and the line begin at the same time. Inmates go through the line to have trays filled. The times listed are the times the line is to begin. On page 14 N., it states that commodities will be used. Can you tell us when the last time commodities were used, and the type / dollar value of the commodities? Answer Would need to be answered by current provider. Is the calorie count for both adult and juvenile based on a daily count, or a weekly average? ADC: The ADC has an established eight-week menu, ADC will use the successful offerors Certified Dietitians daily menu calorie count. Juvenile: Daily count and per Public Education Department Dietary requirements. ASD: Defer to ADC response. 3
What is the process for contractors to complete San Juan County s background clearance investigation? ADC: Fill out appropriate facility background form on each employee that will be working within that facility. (See ADC Attached Form) Juvenile: Requires Triple I, Fingerprints, and CYFD/FACTS Background Clearance before eligible to work onsite. ASD: Same as ADC. Due to the uniqueness of Farmington due to the gas, oil and mining industry, can we request a wage range of the current kitchen staff members so we can ensure competitive wages? ADC: Would need to be answered by current provider. Juvenile: No Is internet available in the kitchen office, and is it provided by the County, or at the cost of the Contractor? ADC: We currently provide the Internet; however, the Fire Wall, computers or any other necessary hardware is the responsibility of the successful offeror. Juvenile: Yes, provided by the County at no cost to the Contractor. Is inmate labor allowed to assist in unloading kitchen deliveries? ADC: The ADC does allow inmate labor to assist when it doesn t interfere with operational continuity. Juvenile: N/A ASD: Yes Will the San Juan County facilities replace any reusable service trays, small wares and reusable service wares? ADC: Answer to reusable service trays - Currently, the ADC has enough reusable Service Trays to accommodate our population. It is expected the successful offeror provides all necessary small ware, sporks, Styrofoam Plates, Cups etc. when necessary to ensure complete operational food service continuity. Small wares will be provided by ADC. Juvenile: No, this is the responsibility of the Contractor. ASD: No, this is the responsibility of the Contractor. Are there sufficient trays, sporks and small wares to service the current populations?
