DAIRY Butter 1 Tbsp. Milk 1 cup +1 cup Cream cheese 8 oz. MEAT Chicken 1-2 cups cooked Turkey legs 1 lb. Sweet Italian sausage ½ - ¾ lb. {Bacon ½ lb.} Chicken pieces 1 ½ lbs.

Lentil Tacos, Chips and Guacamole Time: 15 Minutes Hands On, 30 Minutes Cook Time ½ cup lentils 1 Tbs. oil ½ onion, diced (dice the whole onion and refrigerate/freeze remaining for later) 1 small clove garlic, minced ½ Tbs. chili powder 1 tsp. cumin ½ tsp. oregano 1 ¼ cups chicken broth ½ cup salsa taco shells and toppings Rinse the lentils and drain them. In a large skillet, saute the onion and garlic together. Add the lentils and spices, cook for a minute. Add the broth and bring to a boil. Reduce the heat, cover and simmer for about 30 minutes. Uncover and cook a few more minutes to thicken. Add the salsa. Serve in taco shells with lettuce and tomato, if desired. Lentil Tacos Instant Pot Hit the sauté button and add onion and garlic. Cook until onion is translucent. Add remaining ingredients and set cook time for 15 minutes. Do a quick pressure release. Guacamole 1 ripe avocado 1 clove garlic, pressed or minced lemon or lime juice to taste salt and red pepper to taste Slice the avocado in half and take out the pit. Mash together with the other ingredients. I put everything in the stand mixer to do this. Adjust the seasonings as needed. Serving Suggestion: Chips and Guacamole

15 Minute Chicken Fiesta Skillet over Rice with Zucchini Total Time Needed: 15 Minutes 1 Tbs. vegetable oil ½ onion, chopped (use the leftover from previous recipe) ½ green pepper, chopped (dice the whole pepper and refrigerate/freeze remaining for later) 1 small clove garlic, crushed 1-2 cups cooked chicken, chopped ½ can diced tomatoes, with juice (can freeze remaining ½ can) ½ can corn, drained (can freeze remaining ½ can or mix in with rice side item) ½ can black beans or kidney beans, drained and rinsed (can freeze remaining ½ can or mix in with rice side item) ½ Tbs. cumin ½ tsp. chili powder salt to taste Heat oil in large skillet over medium heat. Add onion, green pepper and garlic to skillet and cook until onion is soft. Add chicken, tomatoes, corn, beans and spices. Heat over medium heat until it's all hot through. Serve in tortillas, over cornbread or with tortilla chips. Serving Suggestion: Rice and Zucchini

Shaker Tomato Soup, Crusty Bread, Caesar Salad Total Time Needed: 15 Minutes ½ small onion, chopped fine (dice the whole onion and refrigerate/freeze remaining for later) ¼ cup celery, chopped fine 1 Tbs. butter ½ can tomato soup (can freeze remaining ½ can) ½ can water ½ Tbs. lemon juice ½ tsp. sugar salt and pepper Saute the onion and celery in the butter until it s tender, but not browned. Add the remaining ingredients and heat through. Shaker Tomato Soup Instant Pot Hit the sauté button and cook the onion and celery in butter until tender. Add the remaining ingredients and set the cook time for 10 minutes. Do a quick pressure release. Serving Suggestion: Crusty Bread and Caesar Salad

Turkey Legs, Italian Sausage and Potatoes, Broccoli Yield: 3 Servings Time: 10 Minutes Hands On, 5-8 Hours Cook Time 1 lb. turkey legs ½ - ¾ lb. sweet Italian turkey sausage 3 small potatoes, cut in chunks ½ onion, sliced (dice the whole onion and refrigerate/freeze remaining for later or use leftover from previous recipe) 1-2 cloves garlic, whole ½ 15 oz diced tomatoes with fennel and red pepper (can freeze remaining ½ can) salt and pepper to taste Place all ingredients in the slow cooker with the meat on bottom. Cook 7-8 hours on low or 5-6 hours on high Serving Suggestion: Steamed Broccoli

Breakfast Dinner Whole Grain Waffles, Fruit, Bacon Total Time Needed: 15 Minutes ½ cup whole wheat flour ½ cup unbleached all-purpose flour 1 cup milk (cow's milk, almond milk, etc.) 1 tablespoon oil* 1 tablespoon baking powder 1 tablespoon honey (could also use maple syrup) 1 teaspoon vanilla extract ½ teaspoon cinnamon (optional) *I like to use a combination of olive oil and canola oil, or coconut oil. Whisk all of the ingredients together. Pour onto a greased waffle iron. Cook until steam is no longer coming from waffle iron. Eat immediately or cool and freeze. This made about 3 six-inch round waffles. To prepare from frozen: These can be microwaved, but for best texture I recommend cutting them in half (or fourths) and placing in the toaster until warm and crisp. Serving Suggestion: Fruit and Bacon

Apricot Soy Ginger Chicken, Snap Peas, Spring Rolls Time: 5 Minutes Hands On, 5-8 Hours Cook Time 6 oz Apricot preserves 1 Tbs. soy sauce 1/8 tsp. ground ginger salt and pepper to taste 1 ½ lbs. chicken pieces Stir together all the ingredients, except chicken, in a small bowl. Place chicken in baking dish or slow cooker. Pour sauce over top of chicken. Bake at 350 degrees for 1 to 1.5 hours. Or slow cook for 5-6 hours on high or 7-8 hours on low. Apricot Soy Ginger Chicken Instant Pot Add 1 can chicken broth. Add all ingredients to the pressure cooker pot. Set cook time for 15 minutes. Do a quick pressure release. Serving Suggestion: Snap Peas and Spring Rolls

No Bake Cappuccino Pie Yield: 1 or 2 pies Time: 10 Minutes Hands On Plus Additional Time in Freezer 8 oz cream cheese, softened ⅔ cup mocha cappuccino spread 1½ cups powdered sugar 1 cup milk 8 oz Cool Whip, thawed 9" graham cracker crust Beat the cream cheese and cappuccino spread together with electric mixer. Add powdered sugar and milk. Blend well. Fold in Cool Whip. Pour into graham cracker crust. Freeze until ready to serve. Note: If you want to use store bought graham cracker crusts, you might be able to get 2 pies from this recipe. Store bought crusts are quite a bit smaller than homemade.
