Welcome from the President Thank you for entering one of our ydney Royal Competitions and congratulations to those who were successful in winning a prestigious ydney Royal medal. I m delighted to see that the ydney Royal Competitions continue to attract a remarkably high standard of entries, not only from New outh Wales, but right across the country. Agricultural competitions are at the heart of the Royal Agricultural ociety of NW (RA) charter to encourage and reward excellence, and support a viable and prosperous future for our agricultural communities. To be the recipient of a ydney Royal award is a significant achievement representing months, years and sometimes decades of hard work and dedication. To help winning Exhibitors promote their success, the RA provides Champion, Trophy, Gold, ilver and ronze medal winners with ydney Royal artwork to use on product packaging, websites, signage and other marketing materials to promote their success. We review our Competitions every year to ensure they remain relevant to industry standards and up-to-date with changing trends. I hope as an Exhibitor you enjoyed the changes and new improvements we made in your area of Competition. Please do give us your feedback, as we are always looking to strengthen our links with agricultural industries. There are many people involved in making our Competitions the world-class events they are. Firstly I must thank our judges for their time, expertise and energy. Their impeccable ethics ensure only the best of the best are awarded. I also extend my gratitude to our generous Competition sponsors along with our Committees and supporters. On behalf of the RA, thank you for your support of our Competition program. Your participation plays an important role in assisting the RA to educate and increase awareness about the importance of our agricultural industries. I hope you enjoyed your ydney Royal experience and I encourage you to enter again next year. Robert Ryan OAM President, Royal Agricultural ociety of NW

MEDIA INVITATION: weet success at this year s Chocolate how aturday 24 eptember, 2016 Chocolate lovers rejoiced on Friday evening at ydney howground, where winners for the inaugural 2016 Callebaut ydney Royal Chocolate how were announced. Hosted by the Royal Agricultural ociety of NW (RA), this year s how was conducted as a standalone event for the very first time, with a record number of exhibits vying for success. ix expert judges tasted their way through an incredible 128 exhibits, to establish the finest of the decadent offerings, the winners of the how s prestigious awards. racegirdle s House of Fine Chocolate was one of the standout winners announced on the evening, taking out four of eight major awards, including overall Champion Chocolate. This prize included an overseas trip to train at a Callebaut Chocolate Academy in Europe or the UA. racegirdle s was founded in Glenelg, outh Australia in 2005 and is family owned and operated. It has since spread its way from south to north, becoming the chocolate of choice at resorts on Kangaroo Island and at Uluru, as well as several other prestigious locations across Australia. Jodie Van Der Velden, Chair of Judges and founder of Josophan s Fine Chocolates, said that the calibre of some of the exhibits in the how this year was truly outstanding. We were especially impressed with the individual moulded single chocolate category, where a swag of medals was awarded, she said. Many of the chocolates were both innovative in their flavour combinations and exemplary in the technical skills displayed, evident in the finishing of the products. There were some truly beautifully crafted products, and in fact overall champion was awarded to a boxed selection of moulded chocolates. We are continuing to nurture the development of particularly interesting categories, including the new tudent class, and live showpiece building. An incredibly detailed gold medal winning showpiece was constructed this year and when word gets out the prize includes a trip to train at a Callebaut chocolate academy overseas, I m sure we ll see even greater growth in this category! Ms Van Der Velden said. A full list of winners is available on page two.

CALLEAUT YDNEY ROYAL CHOCOLATE HOW 13 Class 15 - Chocolate howpiece. Handmade of chocolate. One Exhibit required. G 131 Roche, Mario Out of Africa (Produced by Mario Roche) 81.50 TUDENT/ APPRENTICE CLAE Class 16 - tudent Chocolate howpiece 133 Chan, Rebecca omerset Dream (Produced by Rebecca Chan) 70.00 Class 17 - tudent Open Class. JUDGE COMMENT: ome excellent finishing, decor and moulding techniques demonstrated in this Class. Further attention needs to be paid to the balance of flavour in ganache, and less reliance on oils that were overpowering in flavour. Good use of technology in spray techniques and some innovative flavours evident. ome Exhibits with multiple flavours complicated the flavour profiles of the overall chocolate, and simpler cleaner flavour choices would have benefited some of these chocolates.
