Habla causa! AJÍ AMARILLO Chilies are from Peru, South America. This beautiful chili is quite hot with slightly fruity flavor. It is the mother of all Peruvian flavors. Without aji Amarillo, there s no Peruvian cuisine AJÍ PANCA Peruvian chili pepper. The spice and color of Peru flows within these chilies CHOCLO Peruvian corn. Not your regular sized corn grain CRIOLLO Fusion of races and flavors. ROCOTO The name comes from Peruvian Quechua, Rukutu. Used as a spicy seasoning in Latin American cuisine. The redder it is, the spicier it gets. CILANTRO Coriander AJI MOLIDO Ground crushed chili peppers. OCOPA SAUCE: Composed of Huancaina sauce with roasted peanuts and smoothened with evaporated milk. Named after the small ration bags during the Incan empire YUCCA Casava or more commonly known in the Philippines as camoteng kahoy. CLICLAYANA Green rice with coriander and chicha de Jora.
