The beautiful hills surrounding the 12th century city of Conegliano, pearl of Veneto, are the strategic passage between the majestic Dolomites and the plains, where the sacred river Piave flows down to the Adriatic sea. Still today, there is a proud and profound peasant culture, perceptible in the hard-working people who have a strong bond with their unique land, a main ingredient of Prosecco Conegliano- Valdobbiadene and its vineyards. As you leave Conegliano, climbing the flourishing hills of Collalto di Susegana, there is an immediate sense of the powerful, prehistoric natural events that created these steep, rolling hills, that rhythmically rise and fall with woodlands and vineyards. For many around the world, prosecco is quite new, yet in these hills, this simple white wine has been made for centuries. In 2000, near Collalto, in the town of Pedrè-Doline, a protected area of land, husband and wife team, Benedetto and Clotilde Ricci, began creating Valdellövo. Benedetto was born and raised in these hills, and has inherited a passion for vine and wine, passed on through generations. His grandfather Bepi, a pharmacist and leader in the community, created the famous Strada del Vino Bianco, the road which even today, takes thousands of wine enthusiasts each season from Valdobbiadene to Conegliano, the prosecco heartland and protected denomination (docg). His father, Romano Ricci, studied at the prestigious School of Oenology in Conegliano, founded in the 19th century and the oldest in Europe, and went on to practice viticulture. Now, Benedetto is following in their footsteps, and is quickly making his mark in the world of prosecco. In their small vineyard, which still has 2 hectares of its original 60 year old vines, Valdellövo offers wines produced only from its own grapes. In recent years, eight additional hectares of vineyards have been planted, for a total of ten hectares. Vineyards conceived to confer to each grape, and thus to the wine, the unique qualities of this microclimate and soil. Thanks to the passion, but above all to the professional skills of Benedetto, Valdellövo creates prosecco wines of great quality that achieve consistently excellent results. The organoleptic quality of the grapes, especially Glera, Bianchetta and Verdiso, is outstanding. Prosecco is the expression of the tradition, history and culture of the region and its inhabitants. Devoting our time to the creation of another wine is an opportunity to grow and enrich ourselves, and at the same time to give back to a land and community that has been generous with us. The wine, for us, is the result of a delicate and honest dialogue between man and his land, and as we learn, we ve also started experimenting with other varietals that can be different interpreters of our territory, along with the glera grape, the protagonist of Prosecco DOCG and DOC. To compare Prosecco to other sparkling wines, is like pretending to be someone else: it doesn t allow the authenticity, and therefore, the real beauty of the wine to shine through. Prosecco is a wine that s the perfect light hearted companion for any occasion, with a vibrant freshness that s easy and simple, yet understated and elegant a true reflection of its terroir and its passionate winemakers.

Conegliano Valdobbiadene Prosecco Frizzante DOCG In-bottle Secondary Fermentation This wine has a unique taste and is unfiltered, conserved with its own lees deposited in the bottle. To ensure proper settling, we suggest to store the bottle in a vertical position and refrigerate for a few hours before serving. An ancient tradition, imprinted in sixty year old vines, has inspired this slightly sparkling Prosecco, produced with the secondary fermentation in the bottle (sur lie). In the heart of the family vineyards, Benedetto has found an authentic expression of Glera and its land, and with several innovative elements has created a wine that surprises the palate with its delicate aromas, soft flavour and complexity. Production Sheet Classification: frizzante, ancestral method Varietals: 90% Glera, 10% Bianchetta and Verdiso Vineyard: the hills of Collalto, Susegana Grape Harvest Period: last ten days of September Technology applied: light pressing with the Pneumatic press and primary fermentation at a controlled temperature. The must is conserved on fine lees in stainless steel tanks for six months. The secondary fermentation takes place by means of adding the must from Glera raisins. Alcohol content: 11% vol. Aroma: the characteristic hint of bread crust unites with fresh and fruity notes, typical of Prosecco at the end of fermentation. Palate: initial soft fruity flavours combine with a hint of yeast, leaving room for a dry and pleasantly bitter taste. In sum, the flavour is generous and well balanced. At the table, it is best as an aperitif or served with appetizers, to then continue and appreciate vegetable risotto or seafood. To decant: pour the wine slowly into a pitcher, without disturbing the lees at the bottom of the bottle to maintain a clear wine before serving it in the glass. Conegliano Valdobbiadene Prosecco Superiore DOCG Brut From the finest grapes, chosen from a vineyard of a high calling, comes a superior brut that expresses the best characters particular of Valdellövo Prosecco. Slow fermentation gives a balanced structure, with nice acidity, minerality and a full bouquet, typical of Conegliano Valdobbiadene terroir. Production Sheet Classification: spumante brut Varietal: 100% Glera Vineyard: Crode at 200 meters above sea level Grape Harvest Period: the last ten days of September Technology applied: soft pressure with the pneumatic press and static settling of the must. Secondary fermentation occurs directly in a pressurized tank, at a controlled temperature of 14-15 C. Alcohol content: 11,5% vol. Total acidity: 6,5 g/l ph: 3,20 Residual sugar: 7 g/l Sensory Profile Appearance: straw yellow with lime green hues. Fine and persistent bubbles.
