Danny Meyer Setting the Table Tyneside Cinema is one of the UK s leading independent specialised film and media venues, housed in a spectacular Grade II listed building in the centre of Newcastle upon Tyne. In 2014 the Cinema embarked on a capital redevelopment project which saw the birth of Tyneside Bar Café. After one and a half years of trading growth, we opened Vicolo, a new coffee and cocktail bar with an extensive pavement café in High Friar Lane. After three years we are now featured in the Waitrose Good Food Guide 2018 and have a reputation of creating and serving excellent fresh local produce. In 2018 we are working with the current owner to assume ownership of The Tyneside Coffee Rooms to continue to serve up its hearty comfort food in the cosy atmosphere that makes it a firm local favourite and a stop off for visitors from around the world. Our mission is to offer the best fresh food in the city centre, working with local suppliers to create a welcoming destination with the finest drinking and dining experience. We are looking for a new Sous Chef to help deliver excellent food from the kitchen of the Bar Café. You will work alongside the team to help train and develop the junior members of the team whilst supporting the Kitchen Manager and Executive Chef Manager in the daily running of the kitchen. 2
Job Description Job Title: Responsible to: Line Managers: Wage: Hours: Sous Chef Kitchen Manager Junior Sous Chef, Line Chef and Kitchen Porters Dependant on experience 40 hours per week Job Overview: You will be responsible for helping lead the kitchen team by example, preparing, cooking and presenting tasty, original and excellent value fresh food to a consistently high standard. You will help ensure the kitchen team is efficient and effective, and has productive working relationships with the bar team and colleagues in all other departments, that the menu is profitable, memorable and that the kitchen is safe and hygienic. This role is key within the Tyneside Bar Café, and the Cinema team, and as such you will be expected to work alongside the other Senior Managers to ensure that the Bar Café is helping the Tyneside Cinema maintain and grow its reputation as one of the finest independent cinemas in the country, and the most welcoming and best loved venue in the city. Regular evening and weekend work will be required. Overtime is not payable. You will need to work additional hours and/or outside your typical working pattern from time to time to cover emergencies, meet a deadline or conduct other necessary business. Your flexibility to do this is respected and appreciated. In return for this, Tyneside Cinema will allow time in lieu when appropriate and allow you to take some time during your agreed hours to do personal work or attend to personal matters. Working hours and availability: Monday-Sunday 0700-0100. 3
Core Tasks 01. Consistently prepare, cook and present fresh food which is tasty, original, excellent value and is delivered quickly to discerning Cinema customers in line with the Executive Chef Manager s menus and recipes. 02. Be prepared and able to work in all sections of the kitchen, and to organise and supervise the kitchen team through a busy service without the support of the Kitchen and Executive Chef Manager. 03. Input into the constant creation, trialling and innovation of new dishes and menus in line with the venues values and offer. 04. Lead by example, supporting the Kitchen Manager in encouraging and enforcing a culture of excellent customer quality, consistency and customer care, and ensure all decisions are made with the needs of the customer in mind. 05. Work with the Kitchen Manager to develop and maintain a well-trained and well-presented Bar Café team of highly motivated, effective, efficient, knowledgeable, cheerful and welcoming staff. 06. Liaise with selected suppliers for the kitchen, and ensure daily orders are completed whilst taking into consideration stock control and wastage. 07. Monitor and supervise the kitchen team in controlling stock and ensuring it is effectively rotated and that wastage is minimised or eliminated. 08. Ensure a high quality of health and safety, cleanliness and food hygiene in all catering areas and adhere to all legal regulations relating to food and beverage preparation, storage and service, and that all company health and safety and fire procedures are adhered to. Maintain proactive relationship with Environmental Health officer and ensure a high pass rate for any food hygiene inspections. 09. Communicate in a polite and helpful manner, fitting to the audience. Maintain regular communication with line managers, attend all mandatory meetings and provide constructive and supportive feedback to bar staff when appropriate. Ensure you make every effort to remain informed, and that your team do the same. 10. Proactively manage the state of repair and condition of the kitchen and FF&E, monitoring and reporting maintenance and cleaning issues ensuring that all is in good repair, complies with health and safety standards and that faults are promptly rectified. 11. Achieve these tasks with due consideration for the environment and work to enable the cinema to be as sustainable a business as practical. 12. Any other duties as reasonably requested to fulfil the business objectives of the company. 4
