THE TERRITORY In the DOCG Prosecco zone, there is a picturesque village where time seems to stand still stopped, a small piece of paradise. This village is Rolle situated near Cison di Valmarino and the Molinetto della Croda of Refrontolo. Everywhere the signs of the presence of art and history mark an area dedicated to a quality wine production. For centuries, in fact, the vineyards dot the terrain, with its ups and downs and its roughness "almost intractable." Already in 1800, there was talk of Rolle, his grapes "counted by weight or baskets " and its wine that thanks to the particular soil, the sun and the altitude is unique like the territory of Rolle. Rolle has medieval origins; probably the birth of this village is linked to the foundation of the Benedictine monastery of Santa Maria Maggiore in Treviso because many of the cultivated land in Rolle belongs to this monastery. From time immemorial, the rows of vineyards dominate these hills characterizing a region capable of producing prized grapes and excellent wines. In this beautiful natural contest setting is headquartered the Azienda Agricola Vigne Matte that with tenacity and stubbornness has set as its primary goal, the achievement of high quality wines able to savor consumers about the history, the land and the work of who is involved in this company.
THE CELLAR An old red house in a dominant position on top of a hill, marks the heart of Vigne Matte cellar that is located in the middle of the hills of the Conegliano Valdobbiadene Prosecco Superiore DOCG zone. The historical area of the Prosecco production. The owner is Giovanni Rui, who has been able to achieve in a few years, a modern business model through a carefully designed and planned work done with the goal of bringing the area of Rolle to be a recognized a "cru" inside the Prosecco area. Next to the house, with walls of a bright red, was made in 2004 a modern and functional cellar, partly filled in the hill, which turns out to be a great architectural work designed to allow the ideal temperature for storing wine and blend harmoniously with the surrounding landscape. The winery is equipped with all the latest equipment for winemaking techniques: the vibrating plate for the grape that prevents abrasion of the berries and grapes to fully preserving the aroma and fragrance and the use of natural decantation to get more complex and structured wines. The company, with certified quality system UNI EN ISO 9001:2000 successfully pursues the most modern techniques both in care of the vineyards and in the production of wines.
THE VINEYARDS AND THE PRODUCTION The special nature of the ground, protected from the north winds by the nearby peaks of the Dolomites, the right microclimate with good temperature, the sun exposure of the vineyards and the modern techniques of vine cultivation and wine production help to ensure the recognized high quality of Vigne Matte s wines. The vineyards of Vigne Matte, situated in the area of Rolle, are located in the south west on the hills between 300 and 350 meters above the sea level. So, the vineyards could be exposed to the sun during the hottest hours benefiting from a light summer breeze that rises during nights and mitigating the temperatures of the summer. This ensures the right temperature range between day and night, very important to get the best quality grapes. The optimal sun exposure also enables us to reduce the use of treatments. Grapes are selected several times, operation fundamental to reaching the quality of the final product. Only the healthier grapes and better exposed to sunlight reach the time of harvest. The bunches are cut and dropped on the ground. This operation is repeated several times and at different moment by purchasing even more important in the production of red wines. The roughness of the area, the request for quality and also the preservation of every single grape, bring us to manually perform all the basic operations. The production is predominantly Prosecco DOCG which occupies more than half of the vineyards although red wines ( Merlot, Cabernet Sauvignon and Cabernet Franc) are particularly suited to the characteristics of the area. The majority of the vineyards are owned by the Company Vigne Matte and this allows the complete control of the cycle. The soil, consisting of clay, marl, and a stone that in Rolle is called " Ru", give at the wines elegance and unique fragrances.
The most important production of Vigne Matte, is represented by the Prosecco Spumante DOCG Conegliano-Valdobbiadene produced in three types: Brut, Extra Dry and Dry. The range of the cellar could satisfy every taste requirement since it also consists of a Spumante Extra Dry Millesimato, one Sparkling Rosé Cuveè while with red grapes, the company produces the Rugai, a Bordeaux blend from Cabernet Franc, Cabernet Sauvignon and Merlot left to mature for over three years in barrels before it goes into the bottle, Merlot, from grapes of the same name in purity, this is left to mature for over a year in barrels, Cabernet Sauvignon and Cabernet Franc. THE WINE MAKING PROCESS PROSECCO During the harvest, done by hand, the grapes are pruned only when they reach the optimal level of maturation. The grapes are placed in a press where the juice is gently separated from the skin and seeds. From the heart of the berry juice comes out the mosto fiore and only this product is collected in stainless steel tanks inside which takes part the first fermentation in which the sugar is transformed into alcohol. The wine is fermented for two or three months after which start a second fermentation also called Charmat method, in which the carbon dioxide remains in the wine itself going to form the bubbles. This second fermentation phase lasts 45-60 days, then the wine is lightly filtered, separated from residual yeast and bottled. RED WINE After the selection made in the vineyard, the grapes are harvested by hand and brought to the winery where the grapes are "stemmed ", separating the berries from the stems. The grapes are pressed and the juice is extracted together with the skins of the grapes are placed in vats thermo-conditioned, where begins the fermentation which lasts about 20 days. Then the skins are separated from the wine. The wine is aged in French oak barrels for 10-20 hl for about 18-24 months that allow the softening of the tannins and oxygenation. Then it is bottled.
