Th nxt stp is sprads. This oftn-ovrlookd layr is ssntial to th full panini xprinc, Chris assurs m. That s why th chfs handcraft ach sprad, from hummus to aioli to psto. Th sprads ar paird with spcific brads to complmnt th sugars and salts in th dough. And thr ar no clumps of sauc hr: ach sprad is smoothd out from dg to dg so you can tast it in vry bit, says Chris. In a mdium mixing bowl, add th pastry flour, brad flour, baking powdr, baking soda and salt. Stir togthr. With th mixr on low, add th dry ingrdints into th wt ingrdints until combind. Add th sour cram and dicd pinappls and stir togthr. 1¾ cup granulatd sugar ½ tsp salt 1 cup margarin 1¾ cup sour cram 3 ggs 2 cups 1 tsp vanilla xtract pinappl, dicd in quartr-inch pics 2 cups pastry flour 5 1 cup brad flour pinappl rings, cord and slicd half an inch thick 2 tsp baking powdr 1 cup brown sugar 1½ tsp baking soda C A L G A RY Gras a 10-inch springform pan.
