D. BASIC COCKTAILS This is the creative side of bar service. It is important to know a few common cocktails. It is impossible to know them all as new ones are being created every day. Here are some classic examples that you must learn. If you do not know how to pour a cocktail that a guest is requesting it is fine to ask them what the ingredients are. They might even enjoy showing you how it is done! Margarita (serves 1) - 3 lemon wedges fine sea salt 1 Tot tequila 1 Tot Triple Sec 1 Tots fresh lemon juice ½ Tot lime juice 4-5 ice cubes lemon slice, to decorate Dampen the rim of a chilled cocktail glass with one of the lime wedges then dip the rim into fine sea salt. Pour the tequila, Triple sec and lemon & lime juice into a cocktail shaker. Squeeze the juice from the remaining two lemon wedges into the shaker, squeeze the wedges to release the oils in the skin then drop the wedges into the shaker. Add the ice cubes and shake vigorously for about 10 seconds. Strain the cocktail into the chilled glass and decorate with a lime slice. Bloody Mary (serves 1) 3-4 ice cubes 1 Tot vodka 1 can tom juice Dash of lemon juice 2-3 Drops Tabasco Dash of Worcestershire Sauce Salt and pepper to taste Pour into tall glass as listed above - stir with cocktail stick and garnish with a celery stick. Serve all the condiments with the cocktail for Guests to add extra. Virgin Mary (serves 1) 2-3 ice cubes 1 can tom juice Dash of lemon juice 2-3 Drops Tabasco Dash of Worcestershire Sauce
Salt and pepper to taste Pour into tall glass as listed above - stir with cocktail stick and garnish with a celery stick. Serve condiments with the drink. Dry Martini (serves 1)- 5-6 ice cubes ½ Tot dry vermouth 2 Tot gin 1 green olive Put the ice cubes in a mixing glass. Pour the vermouth and gin over the ice and stir (never shake) vigorously and evenly without splashing, then strain into a chilled martini glass. Serve with a green olive. Vodka Martini as above but replace gin with vodka. Serve with a twist of Lemon Long Island Iced Tea (serves 1)- 8 ice cubes ½ Tot gin ½ Tot vodka ½ Tot white rum ½ Tot tequila ½ Tot Triple Sec 1 Tot lemon juice Coca Cola to top up Lemon slice to decorate Put two ice cubes in a mixing glass. Add the gin, vodka, rum, tequila, Triple sec & lemon juice. Stir well, and then strain into a tall glass almost filled with the remaining ice cubes. Top up with Coca Cola and decorate with the slice of lemon. Strawberry Daiquiri (serves 1)- 1 Tot white rum ½ Tot sugar syrup ½ Tot fresh lemon juice 4 ripe strawberries or half cup strawberry juice crushed ice Strawberry slice and mint sprig to decorate Put the rum, strawberry daiquiri mix/syrup, lemon juice, strawberries/strawberry juice and ice in a food processor or blender and process at allow speed for 5 seconds, then at high speed for about 20 seconds. Pour into a chilled tall glass and decorate with a strawberry slice and a mint sprig. Mangos/Mango juice can be used instead of strawberries to make a mango daiquiri.
Mango Cosmopolitan (serves 1)-1 Tots Vodka 1 Triple Sec 1 Tots Lime Cordial 2 Tots Mango Juice 3-4 ice cubes Slice of orange & mint to decorate Put the vodka, syrup, mango juice and ice in a cocktail shaker and shake. Pour into a martini glass and decorate with a Orange slice and a mint sprig. Moyito(serves 1)- 2 Tots white rum (Bacardi or New grove) 2 Tots sugar syrup ½ Tot fresh lemon juice 1 lemon cut into small cubes for crushing crushed ice & mint leaves Soda water to top up Lemon slice and mint sprig to decorate Crush the lemons, mint & crushed ice together. Add the rum, lemon juice, sugar syrup together & shake. Pour into a whisky glass and garnish with slice of lemon & sprig of mint. Top up with soda water. GFC W&T(serves 1)- 2 Tots Waragi 1 Tots lime cordial 1 Tot fresh lemon juice ice Tonic water to top up Lemon slice and mint sprig to decorate Put the Waragi, lime & lemon with ice in the cocktail shaker and shake 10 times. Pour the mixture onto some more ice in a whisky glass and garnish with slice of lemon & sprig of mint. Top up with tonic water. Serena (serves 1)- 1 Tot Myers Rum 1 Tot Southern Comfort 1 Tot Amaretto Or Disaronno ice 3 coffee beans to decorate Put the Rum, Southern Comfort & Amaretto with ice in the cocktail shaker and shake 10 times. Pour the mixture into a chilled martini glass and garnish 3 coffee beans.
Tequila Sunrise(serves 1)- 3 cubes ice 2 Tots Tequila Orange Juice 1 Tot grenadine Orange slice and cherry to decorate Pour tequila on ice and add orange juice in a tall glass. Carefully pour grenadine into the side of glass for grenadine to settle at the bottom. Serve with a sliced orange and cherry (if you have). Pink Gin(serves 1)- 3 cubes ice 2 Tots Gin 1 Tonic Water 3 drop Angostura bitters Orange slice and cherry to decorate Pour gin on ice and add tonic in a tall glass. Add a few drops of bitters & stir. Garnish with a slice of lemon. Hot Alcholic Drinks Gluwein (serves 6 )- 3 cups red wine cubes 1 cup water 4 Tablespoon sugar 1 Juice of 1 orange Orange peel 1 cinnamon stick 3 whole cloves Orange slice to decorate Heat all ingredients in a pot on the stove and stir to allow sugar to melt. Serve in wine glasses. Remove cinnamon stick & cloves. Garnish with a slice of orange. Amarula Hot Chocolate (serves 1)- 2 teaspoon Hot Chocolate 1 Tot Amarula Hot water Place Hot chocolate in a jug, add hot water and then add a tot of Amarula cream. Stir & then pour into a wine glass. Kahlua Coffee (serves 1)- Hot Filter Coffee 1 Tot Kahlua Whipped Cream
Make filter coffee (small jug) and place in a jug, add 1 tot Kahlua into a wine glass and add coffee & stir. Finish off with floating whipped cream on top using the back of a teaspoon to avoid cream from sinking into coffee. Sprinkle with hot chocolate to garnish. Irish Coffee (serves 1)- Hot Filter Coffee 1 Tot Jameson Whiskey 1-2 teaspoon brown sugar Whipped Cream Make filter coffee (small jug), add 1 tot Whiskey and 1 2 teaspoons of sugar into a wine glass and add coffee & stir. Finish off with floating whipped cream on top using the back of a teaspoon to avoid cream from sinking into coffee. Sprinkle with hot chocolate to garnish. SHOOTERS SPRINGBOKKIE Peppermint Liqueur & Cape Velvet on top in Liqueur glass VAN DER YUM Pour Amarula & Cointreau on top in Liqueur glass SUITCASE Jack Daniels and Passion Fruit in separate shot glasses NUTTY AMARULA Disaronno & Amarula in a Liqueur glass TEQUILA SLAMMER Tequila & Lemonade COFFEE TEQUILA Tequila & Kahlua RUSTY NAIL Cointreau & Drambuie on Crushed ice
