WINE AND GRAPE JUICE ACIDIFICATION / STABILIZATION Through treatment with cationic resins, it is possible to acidify/ stabilize wine or grape juice. RECTIFIED GRAPE JUICE PRODUCTION Through treatment by ion exchange resins, it is possible to demineralize and decolourize red and white grape juice in order to produce rectified grape must. All mineral salts, organic acids and polyphenols are exchanged and absorbed by the appropriate ion exchange resins.
